S'mores Bread Pudding for Two image

This is perfectly portioned for just two people. All you need is an oven, a fireplace and your favorite movie, and you can call this an indoor campfire for two. How fun is that?

Number Of Ingredients 8

4 cups loosely-packed challah cubes (about 1 inch)
1 1/4 cups milk
1 tablespoon cocoa powder
1 large egg
2/3 cup mini chocolate chips, plus more if desired
2/3 cup mini marshmallows, plus more if desired
Unsalted butter, at room temperature, for buttering the ramekins
2 tablespoons graham cracker crumbs

Steps:

  • Position an oven rack in the middle of the oven and preheat the oven to 375 degrees F. Place the bread cubes into a large mixing bowl.
  • In a large measuring cup, whisk together the milk, cocoa powder and egg. Pour the liquid mixture on top of the bread, then add the chocolate chips and marshmallows. Gently stir and make sure all the bread is covered with the liquid.
  • Butter two 16-ounce oven-safe ramekins. Add 1 tablespoon of graham cracker crumbs to each and tap them all around to coat the insides completely with crumbs. Evenly divide the bread pudding mixture between the ramekins and top with more chocolate chips and marshmallows, if desired. Place the ramekins on a large baking sheet to help catch anything if it overflows.
  • Bake, uncovered, 30 minutes. If the marshmallows start to turn too brown during the baking process, you can lightly cover with foil.
  • Let cool for 10 to 15 minutes before eating. Be careful-the middle is still really hot!

CANDY'S TOFFEE S'MORES BREAD PUDDING



Candy's Toffee S'mores Bread Pudding image

With a name like that how could we not fall in love?! We added a bit more bread than called for just to be sure all of the milk mixture soaked in... It was divine.

1 loaf soft french bread
1/2 c butter, melted and cooled
3 3/4 c chocolate milk
3 eggs
2 c sugar
1 Tbsp vanilla
TOPPING
6 whole graham crackers broken into pieces
1 1/2 c mini marshmallows
8 whole heath bars chopped

Steps:

  • 1. Preheat oven to 350 degres. Spray Butter flavored Pam into the bottom and sides of a 10 x 15" baking pan. Slice bread vertically and lay in the bottom of the baking pan.
  • 2. Mix butter, chocolate milk, eggs, sugar and vanilla well and pour over bread. Use back of spoon or end of a large wooden spoon to make indentations in the bread so that the milk mixture will soak in better.
  • 3. Bake 25 minutes.
  • 4. While this is baking, mix cracker pieces, marshmallows and candy pieces.
  • 5. Remove bread from oven and sprinkle cracker mixture over the top.
  • 6. Place back into the oven for an additional 15 minutes or until it is set and marshmallows are lightly browned. Serve warm.

CAMPFIRE S'MORES BREAD PUDDING

4 hot dog buns, cut in 1-inch pieces
4 eggs
1 (14 ounce) can sweetened condensed milk
3/4 cup milk
1 teaspoon vanilla
1/4 teaspoon ground nutmeg
1 cup mini marshmallows
3/4 cup semisweet chocolate piece
5 graham cracker squares, coarsely crushed (about 1/2 c)
2 tablespoons milk

Steps:

  • Preheat oven to 325°F Grease a 2 qt square baking dish. Set aside. Place bun pieces on shallow baking sheet. Bake 7 to 8 minutes or until dry and crisp. Cool.
  • In medium bowl, lightly beat eggs. Stir in sweetened condensed milk, 3/4 c milk, vanilla and nutmeg; set aside.
  • Place bun pieces in prepared baking dish. Sprinkle with 1/2 c each of the marshmallows and chocolate pieces. Evenly pour milk mixture over all. Let stand 5 minutes. Sprinkle with crushed graham crackers. Bake, uncovered, for 35 minutes. Sprinkle with 1/4 c of the remaining marshmallows. Bake for about 5 minutes or until a knife inserted near center comes out clean.
  • For drizzle, in small saucepan, heat and whisk remaining marshmallows, remaining chocolate pieces and 2 T milk over low heat until melted and smooth. Drizzle over bread pudding. Cool 20 to 30 minutes before serving. Serve warm.
