RED-LEAF SALAD WITH ROASTED SWEET POTATOES

LEAF LETTUCE SALAD

Leaf Lettuce Salad image

Sometimes the simple things are the best...Another one of the recipes that I grew up with way back when... If you don't grow your own, you can get leaf lettuce at a produce stand, a farmer's market or many grocery stores carry it...

Provided by Tom Collins

Categories     Greens

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 4

1 bunch leaf lettuce
1 cup mayonnaise
2 tablespoons vinegar (I prefer red wine vinegar or apple cider vinegar)
3 tablespoons sugar

Steps:

  • Put the Mayonnaise, Vinegar and Sugar into a bowl and stir until mixed --
  • Place in the refrigerator to allow the ingredients to blend and to allow time for the sugar to dissolve --
  • Remove the individual leaves from the main plant -- Do not cut, pull them apart --
  • Rinse each leaf under cold water and shake excess water off the leaves --
  • Remove the tender portion of the leaf from the stalk and discard the stalk --
  • 'Tear' leaves into whatever size you think will fit into your mouth --
  • This is enough dressing for about half a large bunch of lettuce -- Remaining lettuce can be stored in the refrigerater, covered, for use tomorrow --
  • Start by tossing a third or so of the lettuce with the dressing and add lettuce until the lettuce is coated well with the dressing -- (you don't want a pool of sauce in the bottom of the bowl but you want the lettuce well coated) --
  • This is best if the lettuce is mixed with the dressing just prior to eating -- The flavor won't change but the lettuce tends to get soggy after about an hour after mixed with the dressing -- .

Time 10m

Yield 8 serving(s)

Number Of Ingredients 10

3 tablespoons apple cider vinegar
1/2 cup apple juice
1/4 cup canola oil
4 teaspoons Dijon mustard
1 tablespoon honey
1 teaspoon poppy seed
salt and pepper (optional)
10 cups red leaf lettuce, rinsed and well-drained and coarsely chopped
2/3 cup walnut pieces, toasted
3 pears, cored, and chopped into 3/4-inch pieces (or slice, Try coring the pears by cutting in half and core with a melon baller)

Steps:

  • Add vinegar, juice, oil, mustard, and honey to food processor or blender and pulse until well-combined. Stir in poppy seeds and add salt and pepper to taste, if desired. Reserve 1/4 cup of dressing and set aside.
  • Add lettuce and walnuts to (very!) large bowl and pour remaining dressing on top, and toss to coat well. (I would add the walnuts at the end; they tend to fall to the bowl's bottom.).
  • Divide lettuce among eight individual salad plates or borls. Add pears to large bowl and toss with 1/4 cup dressing, or arrange on salads and drizzle with 1/4 cup dressing. Spoon pears evenly on salads.

RED LEAF SALAD WITH ROASTED BEETS, ORANGES, AND WALNUTS

Red Leaf Salad with Roasted Beets, Oranges, and Walnuts image

Provided by Teresa Parker

Categories     Salad     Appetizer     Side     Roast     Vegetarian     Orange     Walnut     Beet     Winter     Healthy     Vegan     Pescatarian     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Soy Free     No Sugar Added     Kosher

Yield Serves 4 to 6

Number Of Ingredients 10

2 medium beets, trimmed and scrubbed
Olive oil
1/2 teaspoon kosher salt, plus more for seasoning
1/3 cup coarsely chopped walnuts
1 head red leaf lettuce, rinsed, dried, and torn into pieces
2 navel oranges
1 tablespoon minced shallot
1/2 teaspoon fennel seeds, crushed in a mortar and pestle
2 tablespoons fresh lemon juice
1/4 cup walnut oil

Steps:

  • 1. Heat the oven to 350°F. Lay the beets on one half of a large piece of aluminum foil. Sprinkle with olive oil and season with salt. Fold the foil in half to make a packet and roll the edges to seal. Lay on a baking sheet and roast until tender, 45 to 60 minutes. Let cool. Peel the beets and slice into 1/2-inch-thick wedges.
  • 2. Keep the oven at 350°F; toast the walnuts on a baking sheet for a few minutes, 5 to 7, until they smell good. Remove the nuts and let them cool while you wash and dry the lettuce and tear it into a salad bowl.
  • 3. Zest one orange-you need 1 teaspoon grated zest. Using a very sharp knife, cut the ends from the oranges, slicing just deep enough to expose the flesh. Cut off the remaining peel and pith. Then, working over a bowl, remove the segments, cutting between the membrane. Place the segments in a strainer to drain off excess juice.
  • 4. Whisk together the dressing ingredients-the shallot, fennel seeds, and lemon juice-in a small bowl, adding the oil last, whisking as you pour it in so the dressing emulsifies a bit. Taste and adjust the seasoning.
  • 5. Toss the nuts, beets, oranges, and the dressing with the salad, adjust the seasoning, and serve immediately.
  • Tips and Techniques
  • Teresa: "The oranges and beets are best tossed in at the last minute, when you dress the salad to serve it, lest the o‐juice and beety color run amok."
  • About the Cook

RED LEAF SALAD

Red Leaf Salad image

This is a recipe my mom gave me. They had a pot luck lunch and this was the rave of the day. It was pretty awsome when I tried it. I have to add though if a recipe has pecans in it I am automatically going to like it.

Provided by Sally Lyn

Categories     < 30 Mins

Time 25m

Yield 1 bowl

Number Of Ingredients 10

1 bunch red leaf lettuce
2 green onions, sliced
broccoli (just the tips in bite size pieces)
1 (3 ounce) package ramen noodles (just the noodles)
1 cup chopped pecans
1 cup sugar
1 cup oil
1/2 cup red wine vinegar
3 teaspoons soy sauce
salt and pepper, to taste

Steps:

  • There will be more than enough dressing and pecans if you use 2 bundles of red lettuce.
  • You can adjust accordingly.
  • Crumble noodles and cover noodles and pecans with 3-4 T butter.
  • Toast in oven until brown.
  • (They can burn easily so keep an eye on them).
  • Mix all together right before serving.
  • The pecans and noodles can get soft if they are left in for an extended amount of time.
  • Also, the dressing doesn't need to be refrigerated.
  • It will start to solidify if it is chilled.
  • Option- Last time I made it I added crumbled bleu cheese and it was wonderful in it.
