This cranberry sauce, made with fresh or frozen cranberries, has just the right amount of tanginess. Only 4 ingredients and 10 mins to make!

300 g (3 cups) cranberries - fresh or frozen
125 g (3/4 cup) golden caster sugar ((or use regular caster or superfine sugar))
80 ml (1/3 cup) port
Zest and juice of 1 large orange

Steps:

  • Place all of the ingredients into a small saucepan.
  • Bring to the boil, then simmer for 6-8 minutes until the cranberries soften and start to burst, and the liquid thickens slightly (it will thicken more as it cools).
  • If you like a smoother sauce, use a potato masher to crush the cranberries.
  • Allow the sauce to cool, then cover and refrigerate for up to a week.
  • Take out of the fridge for an hour before serving to take the chill off it.

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

2 x 250g/9oz packs fresh or frozen cranberries

Steps:

  • Tip the port and sugar into a pan and bring to the boil. Add the cranberries, then cook for 5 mins for frozen and 8-10 mins for fresh until tender, but holding their shape. The sauce will thicken as it cools. Will keep in the fridge for 1 week or freeze for up to 6 weeks. Thaw for 2 hrs or overnight before serving.

1 cup ruby port
1 cinnamon stick, broken n half
1 cup dried cranberries
1 (12 ounce) bag fresh cranberries
3/4 cup water
3/4 cup sugar

Steps:

  • Bring port and cinnamon stick to boil in a saucepan.
  • Reduce heat to medium, add dried cranberries and cook 3-5 minutes.
  • Add fresh berries, water, sugar.
  • Bring back to boil until sugar dissolves, then lower to simmer, cover and cook 15-20 minutes, stirring frequently.
  • Discard cinnamon stick and serve at room temperature.

100ml orange juice, fresh or from a carton
250g pack fresh or frozen cranberries

Steps:

  • Tip 100g light muscovado sugar and 100ml orange juice into a pan, then bring to the boil.
  • Stir in 250g fresh or frozen cranberries, then simmer until tender but still holding their shape - this will take about 5 mins if using frozen cranberries or 8-10 mins if using fresh.
  • The sauce will thicken as it cools. Will keep in the fridge for 1 week. On the day, bring to room temperature before serving.
