RICH AND SIMPLE FRENCH ONION SOUP
We have been trying French onion soup in restaurants for years and my family and friends agree none can compare to my recipe for taste and simplicity of preparation.

Steps:
- Melt butter with olive oil in an 8 quart stock pot on medium heat. Add onions and continually stir until tender and translucent. Do not brown the onions.
- Add beef broth, sherry and thyme. Season with salt and pepper, and simmer for 30 minutes.
- Heat the oven broiler.
- Ladle soup into oven safe serving bowls and place one slice of bread on top of each (bread may be broken into pieces if you prefer). Layer each slice of bread with a slice of provolone, 1/2 slice diced Swiss and 1 tablespoon Parmesan cheese. Place bowls on cookie sheet and broil in the preheated oven until cheese bubbles and browns slightly.

SIMPLE CREAM OF ONION SOUP
A recipe from a 3 or 4 ingredients recipe book I own. Great warm-up for cold days! I've substituted milk for the cream with no negative effects :)

Steps:
- Melt 6 tbsp of the butter in a large pan. Set about 1/5 of the onions aside and add the rest to the pan. Stir to coat in butter, then cover and cook very gently for about 30 minutes. The onions should be soft and tender, but not brown.
- Add the stock, about 1 tsp salt, and pepper to taste. Bring to the boil, reduce heat, and simmer for 5 minutes. Remove from heat.
- Let soup cool, then blend until smooth. Return soup to the rinsed pan.
- Meanwhile, melt remaining butter in another pan and cook remaining onions over low heat, covered, until soft but not browned. Uncover and continue to cook onions until they turn golden yellow.
- Add cream to soup and reheat gently until hot, but do not boil. Add buttery onions and stir for 1-2 minutes. Serve immediately.
SIMPLE ONION SOUP
Steps:
- Melt butter in heavy large pot over medium-high heat. Add onions; cook until deep brown, stirring frequently, about 25 minutes. Add broth and wine; boil until soup is slightly reduced and flavors blend, about 10 minutes. Season with salt and pepper.
- Meanwhile, preheat oven to 500°F. Put 4 deep ovenproof bowls on baking sheet. Put 1/3 cup croutons in each bowl.
- Ladle soup over croutons. Top with cheeses. Bake soup until heated through and cheeses melt, about 8 minutes.
SIMPLE MICROWAVE FRENCH ONION SOUP
This is the way my mother introduced us to F.O.S. in the 80s. It is still my favorite soup recipe and is made in the microwave with very little prep.

Steps:
- Slice onions.
- Place onions and butter in microwave-safe dish and microwave on high 4-6 minutes.
- Add water and seasonings to onions.
- Stir to combine ingredients, then microwave on high 5 minutes.
- Change power setting to 50% (medium) and microwave 15-20 minutes.
- Toast bread and place in to bowls.
- Ladle soup over bread, top with mozzarella cheese.
- Sprinkle with parmesan.
- Microwave 5 minutes on medium until cheese is melted.

SIMPLE CARAMELIZED ONION POTATO SOUP
Peel potatoes and dice into large chunks (this helps them cook faster) and chop celery. Add both into soup pot with the chicken broth. Simmer until veggies are tender and potatoes can be easily pierced with a fork, about 25 minutes. While your veggies are simmering, in a separate pan, add the chopped onions along with butter. Cook them very low and slow, stirring frequently so they don't burn or brown, but develop a deep caramel color, for 15-25 minutes. In the last 5 minutes or so, add the chopped garlic, and cook for the remaining few minutes. When your potatoes and celery are done, add the caramelized onions and garlic to the pot, and transfer to a food processor or blender. Blend until smooth. Return blended soup to the pot, and add your milk or cream until the desired thickness and creaminess is achieved (this all depends on preference!) About 2 cups milk or 3/4 cup heavy cream is a good ballpark, but adjust based on preferences! Serve immediately, with parmesan cheese and chopped chives!

- Arrange 4 10 ounce oven safe salad bowls on a baking sheet.
- Place 1/4 cup onions in each bowl.
- Pour 1/4 broth over the onions.
