BERRY EYEBALL PUNCH

3 cups blackberries
18 canned lychees (from one 20-ounce can), plus 3/4 cup syrup from the can
1/4 cup fresh lemon juice
2 cups sweetened acai juice
1 cup blueberry juice cocktail
18 large blueberries
3 cups lemon-lime soda
1 cup spiced rum or gin (optional)

Steps:

  • Puree the blackberries, lychee syrup and lemon juice in a blender. Strain through a fine-mesh sieve into a pitcher, pressing on the solids with a rubber spatula. Add the acai juice and blueberry juice. Refrigerate until chilled, at least 2 hours.
  • Gently push a blueberry into the cavity of each lychee. Transfer the punch to a punch bowl or pitcher and add the stuffed lychees, then gently stir in the lemon-lime soda and rum, if using. Serve over ice.

This punch is an easier version of a punch we served when I helped cater weddings. I got it from Taste of Home Fix it Fast. Everyone seemed to like that is wasn't too sweet like some punches are. I like it because it is very easy, but doesn't taste that way! Doubling, tripling or whatever you need works fine I served it to over 100 people. But it is great when you just need a bit to make it through the rest of the party, you don't have to make it by the gallons!

1/2 cup sweetened lemonade drink mix (I used Country Time)
4 cups cold water
2/3 cup cranberry juice, chilled
1 1/2 cups carbonated lemon-lime beverage, chilled

Steps:

  • In a pitcher, combine drink mix, water and cranberry juice. Stir in soda. Serve immediately.
