Simple and Amazing Peanut Butter-Chocolate Fudge image

This is such an easy recipe to throw together with a few ingredients. It always gets rave reviews. The recipe uses peanut butter, but you can substitute any nut butter or sunflower seed butter. A favorite of mine is to use hazelnut butter. Slice into triangles and top with some whipped cream (I use chilled coconut milk) and orange zest.

1 cup semi-sweet chocolate chips
1 cup peanut butter
¾ cup maple syrup

Steps:

  • Melt the chocolate chips with the peanut butter and maple syrup in a double boiler over medium heat, stirring continually until smooth. Pour into a dish lined with parchment paper; refrigerate 6 hours to overnight before cutting to serve.

This easy recipe results in rich, creamy fudge with a minimum of fuss.

Number Of Ingredients 8

4 tablespoons (1/2 stick) unsalted butter, plus more for pan
3 cups mini marshmallows
1 cup sugar
1/2 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon pure vanilla extract
1 bag (12 ounces) semisweet chocolate chips
1 cup walnuts, coarsely chopped

Steps:

  • Butter an 8-inch square baking pan; line with 2 crisscrossed pieces of parchment paper, leaving an overhang. Butter paper.
  • In a large saucepan, combine butter, marshmallows, sugar, cream, and salt; cook over medium, stirring occasionally, until marshmallows are melted, 8 to 10 minutes. Off heat, stir in vanilla, chocolate chips, and 1/2 cup walnuts until chocolate is melted.
  • Pour fudge into prepared pan, and smooth top; sprinkle with remaining walnuts. Let cool 30 minutes. Refrigerate until set, about 1 hour.
  • Using overhang, lift fudge onto a cutting board; cut into squares (6 rows by 6 rows).

1 container (1 lb) Betty Crockerâ„¢ Rich & Creamy chocolate frosting
1/4 cup candy-coated chocolate candies
2 tablespoons miniature candy-coated chocolate candies

Steps:

  • Spray 9-inch square pan with baking spray with flour. In medium microwavable bowl, microwave chocolate chips uncovered on High in 30-second increments, stirring after each, until melted and smooth. Stir in frosting. Spread in pan.
  • Press candy-coated candies in top of fudge. Cover; refrigerate until firm, about 1 hour. Cut into 4 rows by 4 rows.

This really is the quickest and easiest fudge recipe, and is quite delicious. I use low fat condensed milk to ease my conscience a bit and Crunchy bars for the honeycomb, as it's easy and yummy.

200 g dark chocolate, 70% cocoa solid
400 g condensed milk
200 g honey comb, roughly chopped

Steps:

  • Line a bar tin with baking paper.
  • Roughly chop the chocolate. Heat a medium sized pan over a low heat, and add the chocolate and milk, stirring until the chocolate is melted and the mixture is thick.
  • Add the honeycomb and stir to combine and spoon into the prepared tin and chill for 2-3 hours or until firm.
  • Cut into squares ( or whatever you like) and dust with cocoa powder if desired.
