1 1/2-2 lbs baby carrots
1 1/2 teaspoons salt
4 tablespoons butter
4 tablespoons honey
3 tablespoons packed brown sugar
1/2 lemon, juice of
fresh ground black pepper or chopped parsley, for garnish

Steps:

  • Rinse carrots under cold water and put in a medium saucepan. Cover with water and add salt. Bring to a boil. Reduce heat to medium-low, cover, and continue cooking for about 15 minutes, or until tender. Drain and set aside.
  • In a saute pan, melt butter over medium-low heat. Add honey and brown sugar and cook, stirring, until sugar is dissolved. Add the lemon juice and gently stir in carrots, coating well. Continue heating, gently stirring, until carrots are hot and glazed. Serve immediately garnished with freshly ground pepper or chopped parsley, if desired.

2 lbs carrots
3 red onions
1 tablespoon olive oil
salt

Steps:

  • Preheat oven to 425.
  • Peel carrots and onions. Cut onions in quarters, leaving root ends in tact, so that they hold the quarters together. Cut carrots into 2 - 3" pieces, and if the carrots are really fat, cut them lengthwise into halvves or quarters. (You can adjust the quanitities of everything -- it's just that the program here wants specifics.).
  • Put them onto a cookie sheet or jelly roll pan and drizzle with olive oil and salt and mix them with your hands so that they are lightly coated. The pan does really matter here -- if you use something with sides, they steam rather than roast.
  • Roast for 15 minutes, turn and roast for 15 - 30 minutes more. At this point, they should be cooked, but they can go longer if they're not done. they should be crisp/tender (if they go longer, they get soft, which I'm starting to like, too) and have browned spots on them.

1 lb pre-cut baby carrots
1 tablespoon olive oil
1/4 teaspoon salt

Steps:

  • Heat oven to 475 degrees.
  • In shallow baking dish, toss carrots with oil and salt.
  • Roast 12 minutes, then shake pan to toss.
  • Roast another 8 minutes, shaking pan once or twice, until brown and tender.
  • Serve hot.

This recipe has been adapted from a Gordon Ramsey recipe featured on his F-Word television show. The carrots are simple, but have a lovely sweetness and hint of garlic. I sometimes, cook some frozen peas according to package directions and mix them in with the carrots just before serving.

10 -12 medium carrots, peeled and sliced
55 g caster sugar
6 garlic cloves, unpeeled
2 teaspoons butter

Steps:

  • Add the carrots to a pan of cold water.
  • Add all other ingredients.
  • Bring to a boil and simmer for 8-10 minutes.
  • I like my carrots to still have a little bite, if you like them softer you might have to increase the cooking time a little.
  • Remove the garlic cloves and serve.

12 medium carrots, julienned
2 tablespoons cornstarch
2/3 cup orange juice
5 tablespoons maple syrup
5 tablespoons butter, melted
1 tablespoon grated orange zest
3/4 teaspoon ground nutmeg

Steps:

  • In a large saucepan, bring 1 in. of water and carrots to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender. , Meanwhile, in another saucepan, combine the cornstarch and orange juice until smooth. Stir in the remaining ingredients. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain carrots; transfer to a serving bowl. Pour glaze over carrots; gently stir to coat.

1 pound(s) fresh carrots
1/2 cup(s) water
2 tablespoon(s) sweet butter, unsalted
- salt, kosher variety, to taste
- black pepper, freshly ground, to taste
- caraway seeds, to taste
OPTIONAL ITEMS
- freshly chopped flat-leaf parsley, for garnish

Steps:

  • PREP/PREPARE
  • Gather your Ingredients (mise en place).
  • Wash and peel the carrots, and cut on the bias into 1/4 inch (.6cm).
  • Chef's Note: If you thoroughly wash the carrots, you do not need to peel them. That makes the carrots more rustic.
  • Place the carrots into a pan, and add about 1/2 cup water.
  • Bring the pan to a boil over medium-high heat.
  • Reduce the heat to medium-low, cover the pan, and cook for 6 - 7 minutes.
  • Remove the cover, and add the butter.
  • Continue to stir until the remainder of the water evaporates, about 1 - 2 minutes.
  • Remove from heat and season with some salt, pepper, and caraway seeds.
  • PLATE/PRESENT
  • Sprinkle on some chopped parsley (if using), and serve as a side with your favorite foods. Enjoy.
