This recipe is proof-positive that leftover bread can easily be converted to dessert without much work. There's room for customization here: consider adding fresh or dried fruit or a combination of spices like cinnamon, nutmeg, allspice and cardamom. It makes a great brunch dish, served with fresh fruit compote. Or add a handful of chocolate chips before baking for a decidedly more decadent outcome.

2 cups milk
2 tablespoons (1/4 stick) unsalted butter, more for greasing pan
1 teaspoon vanilla extract
1/3 cup sugar
Pinch salt
1/2 loaf sweet egg bread like challah or brioche, cut into 2-inch cubes (about 5 to 6 cups)
2 eggs, beaten

Steps:

  • Heat oven to 350 degrees. In a small saucepan over low heat, warm milk, butter, vanilla, sugar and salt. Continue cooking just until butter melts; cool. Meanwhile, butter a 4-to-6-cup baking dish and fill it with cubed bread.
  • Add eggs to cooled milk mixture and whisk; pour mixture over bread. Bake for 30 to 45 minutes, or until custard is set but still a little wobbly and edges of bread have browned. Serve warm or at room temperature.

This rustic bread pudding goes really well with a raw veggie salad on a crisp bed of lettuce. Feel free to add anything else you would like to have in it. Any hard cheese of your liking that can be grated...oh wait...and maybe dollops of goat cheese...oh my...have fun!

2 tablespoons butter
1 onion, rough chop
2 -4 garlic cloves, rough mince
4 eggs, lightly beaten
3/4 cup milk
1/4 cup white wine or 1/4 cup broth
6 -8 whole grain buns, depending on the size
1 1/2 cups shredded cheese
1/4 cup parmesan cheese
1/2 teaspoon Dijon mustard
1/2 teaspoon paprika
1 dash cayenne
salt and pepper

Steps:

  • Saute onion in butter until slightly cooked. Add garlic and cook for 2 minutes. Set aside to cool slightly.
  • In large bowl, whisk the eggs.
  • Add the milk, wine or broth, and whisk again.
  • Tear the buns into medium to large pieces and add into the milk mixture.
  • Soak for 5 minutes.
  • Add the onion mixture, cheeses, dijon, paprika, cayenne and salt/pepper.
  • Grease a casserole dish or deep pie plate.
  • Bake at 325 degrees for 35 minutes or so.

1 pkg. (3.4 oz.) JELL-O Chocolate Fudge Flavor Cook & Serve Pudding
3 cups cold milk
9 whole low-fat cinnamon graham crackers, coarsely broken
1 cup JET-PUFFED Miniature Marshmallows
1/3 cup semi-sweet chocolate chunks
1/4 tsp. cinnamon sugar

Steps:

  • Heat oven to 350°F.
  • Beat pudding mix and milk in large bowl with whisk 2 min.
  • Place graham pieces evenly on bottom of 9-inch square baking dish sprayed with cooking spray. Pour pudding over grahams.
  • Bake 20 min. Sprinkle with marshmallows and chocolate chunks. Bake 10 min. Remove from oven. Let stand 10 min. Sprinkle with cinnamon sugar just before serving.

John's Simple Bread Pudding image

John has reduced this recipe from several fancier recipes to make a delightful sweet treat that's easy to make when you don't have a lot of time to slave in the kitchen.

6 slice bread
2 Tbsp butter (or spray)
2 Tbsp butter, melted
4 eggs
2 c milk
3/4 c sugar
1 tsp cinnamon
1 tsp vanilla extract
1 tsp sugar cinnamon mixture

Steps:

  • 1. Preheat oven to 350F.
  • 2. Break up the bread slices into a buttered 8x8 oven proof baking dish.
  • 3. Drizzle the bread pieces with the melted butter.
  • 4. In a bowl, mix the eggs, milk, sugar, cinnamon & vanilla.
  • 5. Pour over the bread, sinking the bread pieces to make sure they soak up the liquid. Sprinkle the top with cinnamon sugar mix.
  • 6. Bake for 45 minutes. Serve when cooled, but still slightly warm.

We've not tried this yet, but I can't wait to! From Easy to Bake, Easy to Make. I think I'm going to try substituting the white chocolate for marshmellows. I'm also going to try omitting the cocoa and serving this with warm caramel topping sometime. If you don't have any stale bread to use up, let a couple of slices sit out uncovered for a couple of hours before using. Prep time includes cutting up the bread. Bake time includes standing time.

3/4 cup sugar
1/4 cup unsweetened cocoa powder
2 cups milk
3 large eggs
1 teaspoon vanilla extract
1 cup white chocolate chips

  • Spray a 9 inch square baking dish with nonstick cooking spray. Place the bread inside the dish.
