This was one of the first meals my boyfriend made for me when we first met and it's healthy too!! Nothing fancy about it but it's great if you want something really simple and tasty to make for a lunch or dinner.

1 (14 ounce) can undrained black beans
1 (10 ounce) can undrained rotel (I like the one that has the lime juice and cilantro but can use regular also)
shredded monterey jack pepper cheese (amount is up to you)
white rice, cooked

Steps:

  • Have cooked rice ready in 2 serving bowls. In a small saucepan, add the can of black beans and the can of Rotel and mix. Heat until it starts to boil and then it is done. If rice is not already hot, heat in microwave. Add bean mixture over rice with a large spoon or ladle. Top with shredded pepperjack cheese to your liking. Enjoy!
  • Note: Instead of serving this over rice, you can spoon it over tortilla chips as nachos.

1 (15 ounce) can black beans
1 medium onion, chopped
salt and pepper (to taste)

Steps:

  • Melt the margarine in a skillet over medium heat.
  • Add the onion and sauté for 5 minutes.
  • The onion should stay crisp, not brown.
  • Add the beans and cook for 3 - 4 more minutes.
  • Season with salt and pepper.

1 cup chopped onion
3/4 cup finely chopped red bell pepper
1 teaspoon packed brown sugar

2 (15 ounce) cans 50% reduced sodium black beans, undrained
1 teaspoon white wine vinegar

Steps:

  • Heat oil in a large Dutch oven over medium heat. Add onion and bell pepper to pan; cook 5 minutes or until tender, stirring occasionally. Stir in sugar, garlic, black pepper, and cumin; cook 1 minute, stirring constantly.

A quick easy recipe using canned black beans for a side dish any night of the week. I love this with my Margarita Chicken or just any citrus grilled chicken or fish. Maybe a nice spicy chili rub on chicken would be a nice dish with these beans.

2 (15 ounce) cans black beans, drained and rinsed
1 medium onion, diced fine
2 tablespoons garlic
1 (4 ounce) can green chilies
3 tablespoons salsa
1 tablespoon cumin
1 teaspoon chili powder
1 tablespoon olive oil to saute the onion and garlic
1/4-1/2 cup chicken broth (optional, see step 3)
1 teaspoon kosher salt, to taste
1/2 teaspoon ground black pepper, to taste
2 tablespoons fresh cilantro, fine chopped as a garnish

Steps:

  • Vegetables -- In a large saute pan, heat to medium and add the olive oil and saute the onion and garlic and cook on medium, not too high, you want them to sweat more. Cook 4-5 minutes.
  • Spices -- Add in the green chilies, salsa, cumin, chili powder, salt and pepper and mix well, still on medium heat. Now add in the beans and stir to combine.
  • Just let it hang out and cook on low heat while you prepare your main course. As it simmers I often add just a little chicken broth for some moisture. Each time it is different, 1/4 cup up to 1/2 cup, depending on how long they simmer. After 5 minutes the beans are done, but if you are still waiting on your main dish to be ready, maybe add a little more broth as the beans simmer so they don't dry out.
  • Right before serving -- taste for salt and pepper and stir in the cilantro. That's it!

This recipe was published in the October 2007 issue of Cuisine at Home. I found a bag of black beans in the pantry and thought this sounded like a wonderful alternative to canned black beans. This recipe can be prepared, frozen in 1 cup size packages and then defrosted and used whenever a recipe calls for canned black beans. These are far superiour in texture and flavor to canned beans.

1 medium onion, chopped
3 garlic cloves, finely minced
1 tablespoon olive oil
5 sprigs fresh thyme or 1/2-3/4 teaspoon dried thyme
1 lb dried black beans, picked through, rinsed, soaked overnight and drained
2 bay leaves
salt and pepper

Steps:

  • In a large pot, saute onion in oil over medium-high heat until the onion is soft, about 5 minutes.
  • Add the garlic and thyme; cook until fragrant, 1 minute.
  • Add the drained beans, bay leaves and enough water to cover beans; bring to a boil over high heat, reduce temperature to simmer, cover and cook for 40 to 50 minutes or until beans are tender but not mushy.
  • Check often and add from 1 to 2 cups additional water if beans start to cook dry.
  • Drain beans, remove the bay leaves and fresh thyme springs, season with salt and pepper to taste.
  • Please note: Do not salt before the beans are cooked. If they are salted before they will not soften.
  • When cool, divide into 1 cup servings and freeze in rigid container or vacuum pack in small bags.

1 medium onion, chopped
1 clove garlic, minced
1 1/2 c water
1 1/2 c instant rice
1 can(s) (15 oz.) diced tomatoes
1 can(s) (15 oz.) black beans, drained and rinsed

Steps:

  • 1. Heat oil in a medium saucepan over medium heat. Add onion and garlic; cook and stir 2 minutes. Add water and rice. Bring to a boil. Reduce heat to low; cover and simmer till rice is tender, about 10 to 15 minutes.
  • 2. Stir in tomatoes and beans. Cook until heated through.
