⅓ cup shortening
⅔ cup white sugar
1 cup mashed very ripe banana
2 eggs
1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt

¼ cup buttermilk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 4x8-inch loaf pan.
  • Beat peanut butter and shortening in a bowl. Gradually add sugar, beating until light and fluffy. Beat one egg into peanut butter mixture until completely blended before beating in the second egg. Stir in mashed banana.
  • Combine flour, baking powder, salt, and baking soda in a bowl. Stir flour mixture into banana mixture alternately with buttermilk, mixing until batter is just blended. Pour batter into prepared loaf pan.

264g caster sugar
113g unsalted butter or margarine
2 large eggs
3 tbsp of sour milk
1 tsp bicarbonate of soda
328g self raising flour
2 ripe bananas
264g chopped walnuts

Steps:

  • Preheat the oven to 180C/gas 4. In one, big mixing bowl, cream the butter and sugar together untill smooth. Then in another, smaller bowl, beat the eggs. Pour the eggs into the big bowl and mix. After that, in a different bowl, mash all of the bananas untill you have a paste. Add everything into the same bowl. Make sure that when you put in the bananas and flour, alternate one spoonful of flour and one of bananas. Add the chopped nuts. (the nuts don't have to be chopped, but it makes the mixture easier to mix.) Pour the mixture into a lined 10inch loaf tin. Heat in the oven for about 40-45 minutes untill firm. When you take it out of the oven, leave it to cool for about 30 minutes. Enjoy!

1/4 c butter flavored crisco (no substitutes)
2 large eggs
2 c flour
1 tsp baking soda, level
1 pinch salt
3 large overripe bananas, mashed
