2 medium ripe avocados, peeled and cubed
2 cups grape tomatoes
1/4 cup thinly sliced red onion
1/4 cup reduced-fat Italian salad dressing
1 tablespoon lime juice
1 teaspoon sugar
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine the avocados, tomatoes and onion. In a small bowl, whisk the remaining ingredients. Pour over avocado mixture; toss gently to coat.

3 large avocados, thinly sliced
1/2 c red onion, paper thin sliced
1 Tbsp extra-virgin olive oil
1 Tbsp red wine vinegar
salt and freshly ground pepper, to taste

Steps:

  • 1. Arrange the slices on avocado on a platter. I prefer to fan them out as I like it looks pretty. Top with the paper thin slices of red onion.
  • 2. Drizzle with the red wine vinegar and olive oil. Lightly sprinkle with salt and pepper.
  • 3. Serve immediately so the avocados remain green.

1 avocado, pitted & halved
1 large tomatoes
2 tablespoons sweet onions, chopped fine
2 tablespoons cilantro, chopped
1 tablespoon olive oil
1 teaspoon lime juice
1/8 teaspoon cumin
salt and pepper, to taste

Steps:

  • Slice avocado and tomato into 1/4" thick slices.
  • Arrange on a serving plate, alternating tomato slices with one or two avocado slices.
  • Scatter with sweet onion and cilantro.
