1 (2 1/2 pound) boneless pork loin roast
water as needed
1 (18 ounce) bottle barbeque sauce (such as Dinosaur®)
8 large sandwich buns, split

Steps:

  • Place pork in a slow cooker and add enough water to cover the bottom of the slow cooker.
  • Cook on Low for 7 hours. Transfer pork to a bowl and shred with 2 forks. Return pork to slow cooker and stir in barbeque sauce. Continue to cook on Low for 45 minutes to 1 hour.
  • Spoon a generous amount of pork into each roll.

3 -4 lbs pork shoulder
12 ounces Dr. Pepper cola
1 teaspoon seasoning salt
3/4 teaspoon black pepper
1 ounce barbecue sauce (I use Stubb's honey pecan, it has an amazing flavor)
1 (16 ounce) bag coleslaw mix
1 -1 1/2 cup mayonnaise
2 tablespoons sugar
8 ciabatta rolls

Steps:

  • Turn crock pot on "low".
  • Rub seasoning salt and black pepper into roast.
  • Pour Dr. Pepper into crock pot. (I used diet).
  • Place shoulder roast in crock pot, cover and allow to cook 6-8 hours.
  • Place cole slaw mix, mayo and sugar in a bowl. Mix well, cover and refrigerate. Cole slaw will sweat and be a good consistency by the time the meat is cooked.
  • Pull apart meat using two forks, discarding fat. I leave the meat in larger chunks instead of smaller strands and prefer the texture when eating it.
  • Heap onto ciabatta rolls, add a shot of Stubb's honey pecan and top with slaw.

2 cups frozen roasted Roma tomato sauce, thawed
1 tablespoon chopped chipotle chiles in adobo sauce
4 teaspoons unsweetened baking cocoa
2 cups pulled pork, roughly chopped
8 Old El Paso™ flour tortillas for burritos (8 inch)
1 1/2 cups crumbled queso fresco cheese (6 oz)
1/4 cup chopped green onions (4 medium)
1/4 cup chopped fresh cilantro

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 4-quart saucepan, heat tomato sauce, chipotle chiles and cocoa to a simmer over medium heat. Reduce heat to medium-low; continue to cook 5 minutes to combine flavors. Transfer 1 cup of the sauce to small bowl. Add pork to sauce in pan; toss to coat.
  • Place tortillas in baking dish. Divide pork mixture among tortillas; divide 1/2 cup of the cheese among tortillas; wrap tortillas around filling, placing seam side down. Top with reserved sauce. Spray piece of foil large enough to cover baking dish with cooking spray. Cover baking dish with foil, sprayed side down.
  • Bake 25 to 30 minutes or until hot and bubbly. Top with reserved cheese, green onions and cilantro.
