2 1/4 cups Gold Medal™ all-purpose flour
1 2/3 cups sugar
2/3 cup shortening
1 1/4 cups milk
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla or almond extract
5 egg whites
Chocolate Buttercream Frosting

Steps:

  • Heat oven to 350°F. Grease and flour bottom and sides of rectangular pan, 13x9x2 inches, 2 round pans, 9x1 1/2 inches, or 3 round pans, 8x1 1/2 inches.
  • Beat all ingredients except egg whites and Chocolate Buttercream Frosting in large bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 2 minutes, scraping bowl occasionally.
  • Beat in egg whites on high speed 2 minutes, scraping bowl occasionally. Pour into pan(s).
  • Bake rectangle 40 to 45 minutes, 9-inch rounds 30 to 35 minutes, 8-inch rounds 23 to 28 minutes or until toothpick inserted in center comes out clean or until cake springs back when touched lightly in center. Cool rectangle in pan on wire rack. Cool rounds 10 minutes; remove from pans to wire rack. Cool completely.
  • Frost rectangle or fill and frost layers with Chocolate Buttercream Frosting.

This recipe is adapted from "The Silver Palate Cookbook," written by Sheila Lukins and Julee Rosso, who through their store in Manhattan, the Silver Palate, introduced bisteeya and poppy-seed dressing to the Upper West Side. For many, their cookbook, originally published in 1982, was a book of revelations: even if you hadn't mastered the art of French cooking, a meal of chicken Marbella and an indulgent dessert, cooked with confidence, was not beyond your grasp. Enter this decadent chocolate cake, whose title belies its incredible simplicity. The ingredients take hardly any time to whip together, and it bakes in a tube pan for under an hour. Gild it with a gooey chocolate frosting, and feed it to those you love with good cheer.

1/2 cup (1 stick) unsalted butter, plus extra for greasing pan
1 3/4 cups plus 2 tablespoons unbleached all-purpose flour, plus extra for flouring the pan

2 eggs, separated
1 teaspoon baking soda
1/2 cup sour cream
1 teaspoon baking powder
2 tablespoons unsalted butter
3/4 cup semisweet chocolate chips
6 tablespoons heavy cream
1 cup sifted confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees. Butter and flour a 10-inch tube pan.
  • Cut the chocolate and butter into small pieces and place in a large bowl. Pour 1 cup boiling water over them; let stand until melted. Stir in the vanilla and sugar, then whisk in the egg yolks, one at a time.
  • In a small bowl, mix the baking soda and sour cream and whisk into the chocolate mixture. Sift the flour and baking powder and add to the batter, mixing thoroughly.
  • Beat the egg whites until stiff but not too dry. Stir a quarter of the egg whites thoroughly into the batter. Gently fold in the remaining whites.
  • Pour the batter into the prepared pan. Set on the center rack of the oven and bake until a cake tester inserted into the center comes out clean, 40 to 50 minutes. Cool in the pan for 10 minutes, unmold and cool completely before frosting.
  • To make the frosting: Place all the ingredients in a heavy saucepan over low heat and whisk until smooth. Spread on the cake while the frosting is still warm.

1/2 pound (2 sticks) sweet butter, softened
2 cups granulated sugar
3 eggs

2 tightly packed tablespoons grated lemon zest
2 Tbsp fresh lemon juice
1 lb confectioner's sugar

  • 1. Preheat oven to 325 degrees. Grease a 10 inch tube pan 2. Cream butter and sugar until light and fluffy. Beat in eggs, one at a time, blending well after each addition. 3. Sift together flour, baking soda and salt. Stir dry ingredients into egg mixture alternately with buttermilk, beginning and ending with dry ingredients. Add lemon zest and juice. 4. 5 cups caramel popcorn
5 cups plain popcorn
1 cup macadamia nuts, roughly chopped
5 tablespoons unsalted butter
9 cups mini marshmallows
1 teaspoon gold sprinkles or edible glitter
1 teaspoon silver sprinkles or edible glitter

Steps:

  • Spray a 12-cup Bundt pan with cooking spray. In a large bowl, combine the caramel popcorn, plain popcorn and macadamia nuts and toss to blend.
  • Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring constantly, until the marshmallows are melted. Pour the popcorn mixture into the melted marshmallows and stir quickly to thoroughly coat all the popcorn. Transfer to the prepared pan and press the mixture with a rubber spatula to compact it. Let sit for 1 hour to set.
  • With a plastic knife or offset spatula, run it along the edge of the pan to loosen the cake. Turn the pan upside-down onto a serving platter to release the cake. Sprinkle with the gold and silver sprinkles.

This cake is another one of my mom's favorite cakes to decorate and was quite popular at numerous wedding receptions. It is moist, doesn't crumb much, and the flavor is yummy. Add buttercream or chocolate frosting, and you're in heaven!

1/2 c oleo margarine, softened (do not melt)
2/3 c milk (at least 2%, whole milk is best)
1 tsp vanilla or almond flavoring
1/3 c milk
4 egg whites

Steps:

  • 1. Sift together flour, sugar, baking powder and salt.
  • 2. Add oleo, 2/3 c. milk and flavoring. Beat for 2 minutes.
  • 3. Add 1/3 c. milk and egg whites. Beat 2 minutes more.
  • 4. Bake at 350 degrees in greased and floured 9x13 pan (or two/three rounds for layers).
  • 5. Cake is done when toothpick inserted into center comes out clean. Top will be a golden color.

This recipe is adapted from "The Silver Palate Cookbook," written by Sheila Lukins and Julee Rosso, who through their store in Manhattan, the Silver Palate, introduced bisteeya and poppy-seed dressing to the Upper West Side. For many, their cookbook, originally published in 1982, was a book of revelations: even if you hadn't mastered the art of French cooking, a meal of chicken Marbella and an indulgent dessert, cooked with confidence, was not beyond your grasp. Enter this decadent chocolate cake, whose title belies its incredible simplicity. The ingredients take hardly any time to whip together, and it bakes in a tube pan for under an hour. For the cake:
1/2 cup (1 stick) unsalted butter, plus extra for greasing pan
1 3/4 cups plus 2 tablespoons unbleached all-purpose flour, plus extra for flouring the pan
3 ounces unsweetened chocolate
1 teaspoon vanilla extract
2 cups sugar
2 eggs, separated
1 teaspoon baking soda
1/2 cup sour cream
1 teaspoon baking powder
For the frosting:
2 tablespoons unsalted butter
3/4 cup semisweet chocolate chips
6 tablespoons heavy cream
1 cup sifted confectioners' sugar
1 teaspoon vanilla extract

Preparation
Step 1Preheat the oven to 350 degrees. Butter and flour a 10-inch tube pan.
Step 2Cut the chocolate and butter into small pieces and place in a large bowl. Pour 1 cup boiling water over them; let stand until melted. Stir in the vanilla and sugar, then whisk in the egg yolks, one at a time.
Step 3In a small bowl, mix the baking soda and sour cream and whisk into the chocolate mixture. Sift the flour and baking powder and add to the batter, mixing thoroughly.
Step 4Beat the egg whites until stiff but not too dry. Stir a quarter of the egg whites thoroughly into the batter. Gently fold in the remaining whites.
Step 5Pour the batter into the prepared pan. Set on the center rack of the oven and bake until a cake tester inserted into the center comes out clean, 40 to 50 minutes. Cool in the pan for 10 minutes, unmold and cool completely before frosting.
Step 6To make the frosting: Place all the ingredients in a heavy saucepan over low heat and whisk until smooth. Spread on the cake while the frosting is still warm.
