This is from a Chamber of Commerce cranberry cookbook put out by the local women of the Westport-Grayland area of the Washington coast, where cranberries are grown.

2 cups green cabbage, shredded
2 cups red cabbage, shredded
1 cup dried sweetened cranberries
1/4 cup green onion, sliced
1/4 cup canola oil
1/4 cup frozen orange juice concentrate, thawed
3/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons cilantro, chopped

Steps:

  • Combine cabbages, cranberries and onions in a large bowl.
  • Whisk together oil, juice, salt and pepper. Stir in cilantro.
  • Pour over cabbage mixture and toss.
  • Refrigerate 24 hours before serving.

I love this slaw as a side for proteins like pork and chicken, and it is awesome on a good hotdog with a bit of mustard, and maybe some good chili to boot. A little bit of heat, and a little bit of sweet. So, you ready... Let's get into the kitchen.

1/2 head napa cabbage, thinly sliced
1/2 head red cabbage, thinly sliced
2 medium carrots, shredded
1 tablespoon(s) ginger root, grated
2 tablespoon(s) sesame oil
2 tablespoon(s) mayonnaise, i prefer duke's
1 tablespoon(s) coconut sugar
1 tablespoon(s) sriracha hot sauce
1 - 2 pinch(es) white pepper, freshly ground
OPTIONAL ITEMS
sesame seeds, for garnish

Steps:

  • PREP/PREPARE
  • Gather your ingredients (mise en place).
  • Mix all the ingredients together, then cover and place into the refrigerator for about an hour or two.
