Stir Fried Pork With Broccoli and Cashews image

I found this several years ago in Cooking Light magazine and have modified it slightly to suit our tastes. It is one of my "go to" meals as it is quick, delicious and very figure friendly.

4 cups onions, vertically sliced
3 cups broccoli florets
1 (1 lb) pork tenderloin, sliced thin
1/4 teaspoon crushed red pepper flakes
1/2 cup green onion, chopped
1 tablespoon sugar
1 tablespoon fresh ginger, minced
3 garlic cloves, minced
1/2 cup chicken broth
3 tablespoons soy sauce
1/2 cup cashews, chopped
2 teaspoons sesame oil
2 cups cooked rice

Steps:

  • Spray non-stick skillet with cooking spray and place over medium heat.
  • Add onion and cook 8 minutes, stirring occasionally. Remove from pan and set aside.
  • Recoat pan with cooking spray and stir fry broccoli 3 minutes.
  • Add broccoli to onion.
  • Spray pan again and fry pork and red pepper for 4 minutes or until pork loses its pink color.
  • Reduce heat. Stir in the green onions, sugar, ginger, and garlic and cook 30 seconds.
  • Stir in onion and broccoli.
  • Add chicken broth and soy sauce.
  • Cook 1 minute.
  • Drizzle with sesame oil and sprinkle with cashews.
  • Serve over rice.

1/2 pound pork tenderloin, thinly sliced
1 tablespoon vegetable oil
1-1/2 cups sliced fresh broccoli florets
1/2 cup julienned green pepper
1/2 cup julienned sweet red pepper
3 garlic cloves, minced
1 cup sliced fresh mushrooms
2 tablespoons cornstarch
1 cup chicken broth
4 teaspoons soy sauce
Hot cooked rice

Steps:

  • In a large skillet, stir-fry pork in oil for 3 minutes or until no longer pink. Remove and keep warm. , In the same skillet, stir-fry broccoli for 2-3 minutes. Add peppers and garlic; cook for 2 minutes. Stir in mushrooms; cook 1-2 minutes longer. Combine the cornstarch, broth and soy sauce until smooth; stir into skillet. , Bring to a boil; cook and stir for 2 minutes or until thickened. Return pork to the pan; heat through. Serve with rice.

2 teaspoons cornstarch
1/2 cup chicken broth
1/4 cup red wine vinegar
2 tablespoons soy sauce
2 teaspoons plus 2 tablespoons canola oil, divided
3/4 pound boneless pork, cut into thin strips
1 cup thinly sliced carrots
1 cup fresh broccoli florets
3 green onions, thinly sliced
1/2 cup cashews
Hot cooked rice

Steps:

  • In a small bowl, combine the cornstarch, broth, vinegar, soy sauce and 2 teaspoons oil until smooth; set aside. , In a large skillet or wok, stir-fry pork in 1 tablespoon oil until meat is no longer pink; remove and keep warm. , Heat remaining oil; stir-fry carrots and broccoli until crisp-tender. I devised this recipe years ago to use up some leftover pork. Nowadays, we don't wait for leftovers! The spicy dish is easy to prepare, and in addition to broccoli, you can use almost any combination of fresh vegetables.

1 pound fresh lean pork (tenderloin or roast)
6 to 8 green onions
1 medium green or sweet red pepper
1-1/2 cups fresh broccoli
1 large onion
12 edible-pod peas
3 tablespoons peanut oil or vegetable oil
SAUCE:
2 cloves garlic, sliced
2 slices fresh ginger, chopped
1/4 teaspoon crushed red pepper flakes
2 tablespoons hot water
2 teaspoons sugar
6 tablespoons ketchup
4 tablespoons soy sauce

Steps:

  • Cut pork into narrow 1-in. strips, 1/4-in. thick; set aside. (Partially freeze pork first for easier cutting.) Cut green onions, peppers, broccoli and onion into 1-in. pieces; set aside. Combine garlic, ginger, pepper flakes, hot water, sugar, ketchup and soy sauce (or substitute 8 tablespoons prepared Hoisin Sauce for the ketchup and soy sauce); set aside. In wok or large skillet, heat peanut or vegetable oil over high heat. Stir-fry the pork in oil until browned; remove from wok and keep warm. Add more oil if necessary and stir-fry all vegetables tender/crisp. Add pork and sauce mixture; cook until thickened. Serve with boiled rice.

1 teaspoon sesame oil or 1 teaspoon canola oil
3 green onions, sliced, separate the white parts from the green parts
4 cups broccoli, chopped
2 cups mushrooms, chopped
1 cup snow peas
2 cups bok choy, chopped
1/2 cup cashews, chopped
1/4 cup water
1 tablespoon reduced sodium soy sauce
1 teaspoon freshly grated gingerroot
1 teaspoon honey
1 tablespoon cornstarch
1 teaspoon pepper
2 garlic cloves, finely chopped

Steps:

  • In a small bowl, mix together all ingredients for the sauce. Set aside.
  • Heat a large fry pan or wok over medium-high heat. Add cashews and roast for 2 to 3 minutes. Stirring frequently. Careful not to burn them. Set aside with the green parts of the green onion.
  • In the same pan, add the sesame oil and heat over medium-high heat. Add the white parts of the green onion, broccoli and mushrooms. Sauté for about 5 minutes or until broccoli is starting to become tender. Add a few tablespoons of water, if needed, to stop browning or burning.
  • Add the snow peas and bok choy and sauté for 2 minutes.
  • Add the sauce and sauté for about 3 to 5 minutes or until the sauce thickens. Remove from heat and add in the cashews and green parts of the green onion.
  • Serve immediately with brown rice.

6 leaves stem lettuce (celtuce), cut into 1/2-inch pieces
1 pinch salt
2 teaspoons water
1 teaspoon cornstarch
½ pound lean pork, cut into 1/2-inch cubes
1 teaspoon rice wine (sake)
¼ teaspoon salt
2 tablespoons chicken stock
2 teaspoons soy sauce
½ teaspoon Chinese black vinegar
½ teaspoon white sugar
3 ½ tablespoons vegetable oil
1 tablespoon finely chopped pickled red chile peppers
2 teaspoons chili bean sauce ((toban djan), such as Lee Kum Kee®)
3 spring onions, diced

Steps:

  • Combine stem lettuce and pinch of salt in another bowl.
  • Combine water and cornstarch in a small bowl; stir into a smooth paste.
  • Transfer half of the cornstarch paste into a larger bowl. Add pork, rice wine, and 1/4 teaspoon salt. Mix well and let marinate, about 5 minutes.
  • Whisk remaining cornstarch paste, chicken stock, soy sauce, black vinegar, and sugar in another bowl to make sauce.
  • Heat oil in a wok or large skillet over high heat. Add pork with marinade; cook and stir until browned, 3 to 4 minutes. Stir in pickled chile peppers and chili bean sauce; cook until oil turns red, about 1 minute. Add spring onions, garlic, and ginger; cook and stir until fragrant, about 1 minute. Sichuan-style pork & green bean stir-fry image

A cost-conscious Chinese-style meal for two with rich soy and pepper sauce, ginger, spring onions and sesame oil

100g basmati rice
200g green bean , topped and tailed, then halved
1 ½ tbsp sunflower oil
140g pork mince
4 tsp dark soy sauce
2 tsp rice wine
1 tsp caster sugar
¼ tsp Sichuan pepper , lightly crushed using a pestle and mortar
1 red chilli , halved and sliced
4 fat garlic cloves , finely chopped
1 small knob of ginger , finely chopped
3 spring onions , 2 finely chopped, 1 sliced for garnish
2 tsp sesame oil

Steps:

  • Cook the rice following pack instructions. Boil the beans for 4 mins, then drain under cold water, pat dry and set aside.
  • In a large non-stick wok or frying pan, heat 1 tbsp of the oil. Add the pork mince and fry for a few mins, breaking up into small pieces with the back of a spoon. Stir in half the soy, the rice wine and sugar and cook for 30 secs more. When the meat is cooked through, tip onto a plate.
  • Heat the remaining oil in the pan. Add the pepper, chilli, garlic, ginger and chopped onions, and stir-fry for 2 mins until ginger and garlic are softened. Tip in the beans, heat through, then add the mince - stir-fry for 2 mins until hot. Stir in the rest of the soy and sesame oil. Scatter with spring onions and serve with rice.
