Chile-Lime Shrimp with Creamy Chipotle Dip image

Lime juice and peel add a tangy citrus flavor to a spicy marinade. Serve the cooked shrimp with a creamy dip for even more flavor!

2 limes
24 uncooked extra-large (16 to 20 per pound) deveined peeled shrimp with tail shells left on (about 1 1/2 lb)
2 tablespoons olive or vegetable oil
1 clove garlic, finely chopped
1/2 teaspoon crushed red pepper flakes
1/3 cup mayonnaise or salad dressing
2 tablespoons honey mustard
1 large chipotle chile in adobo sauce (from 7-oz can), finely chopped (1 tablespoon)
1 teaspoon adobo sauce
1 tablespoon chopped fresh cilantro

Steps:

  • Reserve 1 lime for garnish. Grate 1 teaspoon peel from other lime. Cut lime in half; squeeze enough juice to measure 2 tablespoons. Set peel and juice aside.
  • Butterfly each shrimp by cutting along the outside curve through the fleshiest part for about 1 1/2 inches, cutting almost to the inside curve. The shrimp should spread open.
  • In 1-gallon resealable food-storage plastic bag, mix oil, garlic, pepper flakes, lime juice and grated lime peel. Shake lightly to mix. Add shrimp. Seal bag; rotate to coat all of shrimp. Refrigerate 30 to 60 minutes to marinate.
  • Meanwhile, in small bowl, mix mayonnaise, honey mustard, chipotle chile and adobo sauce. Cover; refrigerate until serving.
  • Heat oven to 400°F. Remove shrimp from marinade; place in 15x10x1-inch baking pan. Open each shrimp, arranging in pan so that cut portion is on pan with tail tucked in. Discard marinade.
  • Bake 5 to 7 minutes, rearranging shrimp halfway through bake time, until shrimp are pink. Place on serving platter; sprinkle with cilantro. Spoon dip into bowl. Cut reserved lime into wedges. Garnish dip with wedges. Serve shrimp with dip. Store any remaining shrimp and dip in refrigerator.

1 pound large shrimp (, deveined and peeled)
3 tablespoons canola oil (, divided)
3 tablespoons fresh lime juice (, divided (about 1-2 medium limes))
1 to 2 chipotle peppers in adobo sauce (, finely minced (about 1 tablespoon))
1 teaspoon adobo sauce ((the liquid from the can of peppers))
2 cloves garlic (, pressed)
2 teaspoons honey
3/4 teaspoons ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
4 cups cooked brown rice
1 15.5 ounce can black beans (, drained and warmed)
2 cups cherry tomatoes (, sliced)
1 large avocado (, pitted and chopped)
4 green onions (, chopped)
1/4 cup red onion (, chopped)
Fresh cilantro
Lime wedges

Steps:

  • Place the shrimp in a bowl or gallon freezer bag, and add 2 tablespoons of the oil, lime juice, chipotle peppers, adobe sauce, garlic, honey, salt, cumin, and pepper. Massage the ingredients into the shrimp and let the shrimp rest on the counter for 15 minutes.
  • Heat a large skillet over medium-high heat. Add the remaining oil to the pan and swirl to coat. Spread the shrimp across the pan and discard any remaining marinade. Add the shrimp to the pan and cook for 1-2 minutes on each side or until they've turned lightly pink on the outside and the insides are turning white.
  • Assemble the bowls with the rice, black beans, veggies and sprinkle with cilantro. Drizzle with more adobo sauce and a squeeze of lime if desired.

1 1/2 pounds 16/20 shrimp, peeled and deveined (30 shrimp in total)
3 tablespoons adobo sauce from canned chipotles
3 tablespoons honey
1 tablespoon olive oil
2 scallions, sliced thin
2 limes, zested and then cut into wedges

Steps:

  • Preheat a grill or grill pan over medium-high heat.
  • Skewer the shrimp onto 6 soaked wooden skewers, about 5 shrimp per skewer.
  • Whisk together the adobo sauce, honey, olive oil, half of the scallions and the zest of the limes in a small bowl until well combined. Brush the shrimp with some of the glaze and place on the grill.
  • Grill the shrimp for 2 minutes per side, brushing them with the glaze until they are slightly charred and just cooked through.
  • Transfer to a platter and garnish with the remaining scallions and the lime wedges.

1/2 cup soy sauce
1 tablespoon Chipotle pepper, in adobe sauce
1 tablespoon ginger minced
3 tablespoons lime juice
1 tablespoon miren
1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 tablespoon salt
1 (12-ounce) lite beer
1 pound (21 to 25 pieces) shrimp, peeled and deveined

Steps:

  • Preheat oil to 365 degrees.
  • In a small bowl, whisk together all the dipping sauce ingredients. Transfer to a serving bowl, cover and set aside.
  • In a medium size bowl, combine all the dry ingredients for the batter. Slowly, whisk in beer, until combined. If not using right away cover and refrigerate for later use. Gently toss shrimp in the batter, to coat. Shake gently to remove excess batter and with slotted spoon, carefully fry in hot oil for 5 to 6 minutes or until golden brown. Cook in batches to avoid over crowding. Remove shrimp with a spider or slotted spoon and place on paper towels to drain. Serve hot with dipping sauce.

This is one of my favourite appetizers, adapted from The Surreal Gourmet. You can adjust the 'heat' by changing the amount of chipotle pepper and adobo sauce. I usually serve this as an appetizer over a mesclun mix of leaf lettuces, herbs, and tender greens.

3/4 lb shrimp, 12/15 count shrimp, tails on
1 -2 tablespoon dried oregano
1 teaspoon dried thyme
1 teaspoon lemon pepper or 1 teaspoon dried lemon peel
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
3 tablespoons olive oil
1 whole chipotle chile in adobo, chopped finely
2 teaspoons adobo sauce
1 cup lightly packed cilantro, leaves only, stems discarded before measuring
3 tablespoons freshly squeezed lime juice
1/2 cup sour cream

Steps:

  • Chipotle Dry rub:.
  • Shell, clean, and devein shrimp. Leave the tails on.
  • Pat dry with a paper towel.
  • In a medium-size bowl, mix oregano, thyme, lemon pepper, salt, and black pepper.
  • Toss shrimp thoroughly with mixed spices. Keep refrigerated until ready for cooking.
  • Heat oil and chipotle pepper and sauce in a well-seasoned iron skillet or non-stick pan over high heat.
  • Place about ten shrimp in pan so that each one has enough room to lie on its side.
  • Cook for approximately 1-1/2 minutes per side, or until shrimp is no longer translucent. Do not overcook.
  • Serve hot, or at room temperature, with cilantro dipping sauce.
  • To prepare Cilantro Dipping Sauce:.
  • Blend cilantro and lime juice in a food processor or blender until cilantro is liquefied. Pour into a small bowl and use a fork to blend in sour cream until fully blended into a pale green sauce.
  • Refrigerate until ready for use.

3/4 lb jumbo shrimp (uncooked)
1 tablespoon dried oregano
1/2 tablespoon dried thyme
1 teaspoon lemon-pepper seasoning
1/2 teaspoon ground chipotle chile pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 cup cilantro leaf (stemmed)
3 tablespoons lime juice (fresh is best)
1/2 cup sour cream

Steps:

  • Shell and devein the shrimp. Pat dry.
  • In a medium bowl, mix the oregano, thyme, lemon-pepper, ground chipotle, salt and pepper. Add shrimp and toss thoroughly.
  • Put the cilantro and lime juice in a blender and blend until cilantro is liquified. Pour into a small bowl and stir in sour cream. Refrigerate until the shrimp is cooked.
  • Skewer the shrimp or place in a grill basket. Cook on a hot grill about 2 minutes per side, until shrimp are no longer translucent. Brush both sides lightly with oil while cooking.

1/4 cup packed brown sugar
2 chipotle peppers in adobo sauce, chopped, plus 1/4 cup adobo sauce
6 garlic cloves, minced
2 tablespoons water
2 tablespoons lime juice
1 tablespoon olive oil

2 pounds uncooked large shrimp, peeled and deveined
CILANTRO CREAM SAUCE:
1 cup sour cream
1/3 cup minced fresh cilantro
2 garlic cloves, minced
1-1/2 teaspoons grated lime zest
1/4 teaspoon salt
1/4 teaspoon minced fresh mint

Steps:

  • In a small saucepan, bring the brown sugar, chipotles, adobo sauce, garlic, water, lime juice, oil and salt to a boil. Reduce heat; cook and stir 2 minutes longer. Remove from the heat; cool completely., Transfer mixture to a large bowl. Add the shrimp; turn to coat.
