While virtually unknown compared to most other popular fried party snacks, these shrimp toasts are easy to make and every bit as delicious, and addictive, as those Buffalo wings or jalapeño poppers.

½ pound raw shrimp, peeled and deveined
¼ cup diced water chestnuts
¼ cup chopped cilantro leaves
½ cup finely sliced green onions, plus more for garnish if desired
3 garlic cloves, crushed
1 tablespoon finely grated ginger root
1 anchovy filet
1 teaspoon toasted sesame oil
1 teaspoon Asian fish sauce
1 tablespoon soy sauce, or more to taste
1 egg white
½ teaspoon white sugar
½ teaspoon paprika
1 pinch cayenne pepper
1 pinch salt
4 thick slices white bread
1 teaspoon Sesame seeds
1 cup vegetable oil for frying, or as needed

Steps:

  • Place shrimp, water chestnuts, cilantro leaves, green onions, garlic, grated ginger, anchovy filet, sesame oil, fish sauce, soy sauce, egg white, sugar, paprika, cayenne pepper, and salt into the bowl of a food processor. Pulse several times; scrape down sides of bowl. Continue to process until mixture is well blended and reaches a paste consistency, 1 or 2 minutes. Transfer mixture to a bowl; cover with plastic wrap and refrigerate to blend the flavors, about 1 hour.
  • Very lightly toast bread slices. Trim crusts from bread. Spread shrimp paste onto bread in an equal thickness as the bread. Cut slices in half and then diagonally into diamond shapes. Sprinkle with sesame seeds.
  • Place a heavy skillet over medium-high heat; pour in about 1/2 inch of vegetable oil. When oil is hot, place bread slices, paste side down, into the oil. Fry until crispy, 2 to 3 minute per side. Transfer to a paper towel-lined plate. Serve hot or warm garnished with additional sliced green onions.

1/4 cup heavy cream
8 slices brioche or home-style white bread
1/2 cup vegetable oil or clarified butter, for frying
Duck sauce or pepper jelly, for garnishing, optional
8 ounces peeled and deveined raw shrimp (about 9 ounces unpeeled)
1 large egg
1 large egg white
2 tablespoons minced green onions, green parts only
2 tablespoons minced fresh parsley
1 teaspoon minced garlic
1/2 teaspoon salt
1/8 teaspoon freshly ground white pepper
3 ounces cream cheese, cut into pieces

Steps:

  • Combine the shrimp, egg, egg white, green onions, parsley, garlic, salt, and white pepper in a food processor and process until blended but still slightly chunky. Add the cream cheese and pulse until smooth and thick. Add the cream and pulse just until blended, being careful not to over process.
  • Spread 1/4 cup of the shrimp mixture onto each slice of bread, spreading to the edges and smoothing the top.
  • Heat the vegetable oil to 360 degrees F in large deep skillet. Add the shrimp toast in batches, coated sides down, and fry until golden on the first side, 2 to 2 1/2 minutes. Turn and cook until golden on the second side, about 1 1/2 minutes. Drain on paper towels.
  • To serve, cut each toast diagonally into quarters. Serve hot, with a drizzle of duck sauce or a dab of pepper jelly, as desired.

SHRIMP TOAST

Shrimp toast is one of the tastiest bites at the dim sum table. I didn't actually like shrimp toast growing up, but when I finally got around to trying it, I couldn't believe how much flavor was packed into one tiny unassuming square. These are crunchy on the outside, soft in the middle and really dangerous because they are so so addictive.

8 ounces raw shrimp, peeled, deveined and tails removed (the size does not really matter here)
1 large egg white
1 teaspoon sriracha, plus more for serving
1/2 teaspoon kosher salt
1/2 teaspoon toasted sesame oil
5 turns black pepper
2 cloves garlic, minced
2 scallions, trimmed and thinly sliced
1 stalk lemongrass, end trimmed, dry outer leaves discarded, bottom few inches of white part bruised with the back of a knife and finely minced
3 slices potato bread (or white bread), crusts removed
2 to 3 quarts neutral oil (vegetable or peanut are fine)
1 teaspoon sesame seeds

Steps:

  • Put the shrimp and egg white in a food processor and pulse until pasty but still a little chunky. Add the sriracha, salt, sesame oil, black pepper, garlic, scallions and lemongrass and pulse until just combined.
  • Divide the mixture among the bread slices and spread in an even layer to the edge. At this point, you can freeze the toasts while you heat the oil (although freezing is not totally necessary, it makes for cleaner cuts and easier handling).
  • Bring 1 1/2 inches of oil to 350 degrees F in a heavy-bottomed pot.
  • Cut each bread slice into 4 squares and sprinkle with the sesame seeds. Carefully place each piece shrimp-side down into the oil. Fry until golden, 2 to 3 minutes. Remove onto a rack or paper towel. Serve immediately drizzled with sriracha.

I think I've gotten pretty good at making this dish but it still doesn't compare to my father's! Don't be fooled by the ingredients. Most are optional and this is easy to make! ½ yellow onion, minced

Steps:

  • In a mixing bowl, combine the shrimp, onion, water chestnuts, celery, and green onion. Stir in crabmeat, egg, parsley, sesame oil, soy sauce, and garlic. Season with salt and pepper to taste.
  • Make the dipping sauce: In a small mixing bowl, whisk together soy sauce, water, sesame oil, parsley, garlic powder, and sugar; set aside.
  • In a heavy skillet, heat 2 cups oil, or enough to be 1/2 inch deep, over medium heat. Spread a thick layer of shrimp filling on one side of each slice of bread.
  • Fry the topped bread in hot oil until golden brown and shrimp is pink, turning once. Do not let the filling sit on the bread too long or the sandwich will get soggy. Drain on paper towels and let cool for a minute. Slice diagonally and serve with dipping sauce or alone.

½ pound medium shrimp, peeled and deveined
1 slice fresh ginger root, chopped
1 clove garlic, chopped
½ cup water chestnuts, drained and chopped
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons dry sherry
1 egg white
1 teaspoon baking soda
3 slices white bread, crusts trimmed
3 tablespoons sesame seeds
3 cups oil for deep frying

Steps:

  • In a medium skillet, heat the 3 cups of oil to 300 degrees F (150 degrees C).
  • In a food processor, combine the shrimp, ginger, garlic and water chestnuts; grind to a paste. Add salt, pepper, sherry, egg white and baking soda. Process until smooth.

1 pound large shrimp, peeled and deveined
1 medium onion, chopped
1 1/2-inch piece fresh ginger, peeled and chopped
Coarse salt
Large pinch of freshly ground pepper
2 large egg whites
30 thinly sliced 1-by-3-inch pieces white bread, crusts removed
1/2 cup fine fresh breadcrumbs
Canola oil, for frying

Steps:

  • In the bowl of a food processor, combine the shrimp, onion, ginger, 1/2 teaspoon salt, and pepper. Process until mixture is finely chopped. With the motor running, add the egg whites through the feed tube, and process until well combined.
  • Place the breadcrumbs in a small bowl. Spread about 1/4 inch of shrimp mixture onto one side of each piece of bread, and coat with breadcrumbs; transfer to a baking sheet. Cover with plastic wrap, and chill up to 1 hour, if desired.
  • Pour enough oil to come 1 1/2 inches up the sides of a large skillet, and heat to 360 degrees. Working in batches, add bread pieces to hot oil. Fry, turning occasionally, until golden brown on both sides, 2 to 3 minutes. Drain on paper towels; season with salt, if desired. Serve immediately.

CREAMY GARLIC SHRIMP TOAST

12 ounces large shrimp, peeled and deveined
1 pinch cayenne pepper
¼ teaspoon smoked paprika
3 cloves garlic, crushed, or more to taste
2 thick slices French bread
6 tablespoons clarified butter, melted, divided
2 teaspoons fresh lemon zest
2 tablespoons fresh lemon juice
½ cup heavy cream
2 tablespoons minced fresh Italian parsley
1 pinch salt, or to taste

Steps:

  • Butterfly shrimp and place in a mixing bowl. Add cayenne, paprika, and garlic and stir until shrimp are evenly coated. Refrigerate until needed.
  • Trim most of the crusts off of the bread.
  • Add 4 tablespoons melted butter to a skillet over medium heat. Add both slices of bread and toast until golden brown, 3 to 4 minutes per side. Remove bread to a plate and wipe out any crumbs.
  • Add remaining melted butter to the skillet and increase heat to high. When the pan is very hot and you see the first wisp of smoke, add shrimp and use tongs to spread into an even layer. Sear, without stirring or tossing, for 1 minute.
  • Sprinkle with lemon zest and add lemon juice and cream. Stir with a spoon to scrape any browned bits off the bottom. Let cream boil and reduce for 1 ½ to 2 minutes as the shrimp finishes cooking and the sauce thickens up.
  • Turn off the heat and stir in parsley. Taste and add salt if needed.
  • Divide shrimp and sauce evenly over each piece of toasted bread.

16 shrimps, peeled and deveined
2 large egg whites
1 tablespoon soy sauce, plus more for serving

½ teaspoon garlic, grated
½ teaspoon fresh ginger, grated

Steps:

  • Heat the oil in a large pot over medium heat until it reaches 350°F (180°C). Set a wire rack inside a baking sheet and place nearby.
  • In a food processor, combine the shrimp, egg whites, soy sauce, rice wine vinegar, sesame oil, sugar, sambal, garlic, ginger, salt, and scallion whites and pulse until smooth.
  • Trim the crusts off the bread, then cut diagonally into triangles.

1 pound peeled shrimp
1 1/2 cups water with ice
1 cup flour, plus more for dredging
2 egg yolks
1/3 cup mayonnaise
1 teaspoon soy sauce

Steps:

  • Heat or neutral oil in a deep pan to 350.
  • Slice 1 pound peeled shrimp lengthwise.
  • Combine 1 1/2 cups water with ice; measure 1 1/2 cups water from that, and put it in a bowl.
  • Beat with 1 cup flour and 2 egg yolks.
  • Dredge shrimp in flour; dip in batter. Fry, less than 5 minutes.
  • Drain on paper towels.
  • In a small bowl, combine 1/3 cup mayonnaise, 1 teaspoon soy sauce, 1 teaspoon sesame oil and some chopped scallions.
  • Spread the mixture on buttered toast (white bread is classic), and top with the shrimp.

6 slice white bread, crust removed
1/2 lb raw shrimp, peeled and deveined
1 large egg, beaten
2 large scallions
1/4 c celery, diced
1 clove garlic
3/4 inch fresh ginger, peeled
2 Tbsp parsley, chopped
1/4 can(s) water chestnuts
1 tsp hot red pepper oil or crushed red pepper
1 tsp garlic powder
1/4 tsp chinese five spice powder
1 tsp salt
1/2 tsp white or black pepper
2 tsp cornstarch
1/2 tsp baking powder
1 Tbsp soy sauce, low sodium
1 tsp sesame oil
1 Tbsp rice vinegar, or rice wine
OPTIONAL
sesame seeds
sweet chili sauce

Steps:

  • 1. Preheat oil to 350
  • 2. Lay your bread slices on a tray.
  • 3. In a separate bowl add diced celery, beaten egg, chopped parsley, soy sauce, sesame oil, rice vinegar, hot red pepper oil/red pepper flakes, garlic powder, Chinese five spice powder, cornstarch, baking powder, salt, and white or black pepper. Mix well.
  • 4. Take a large bowl and add the shrimps, scallions, ginger, garlic, and water chestnuts. Mix together to combine.
  • 5. Place shrimp mixture into a food processor. Pulse a few seconds into a chunky paste.
  • 6. Mix the shrimp paste with the rest of the ingredients in the bowl.
  • 7. Put a generous dollop of the paste onto each slice of bread and spread it evenly using the back of your spoon or spatula.
  • 8. Sprinkle with sesame seeds and slice each into 4 triangles.
  • 9. Once your oil is ready to fry, place a few of the shrimp breads, paste side down into the oil. Fry for roughly 2 minutes each on the shrimp side. Turn them over, when you see the edges turn a golden brown, and fry roughly for a 1 minute on the bread side. Remove them and place them onto a tray lined with paper towel to drain.
  • 10. Serve with Sweet Chili sauce.

6 kaffir lime leaves
3/4 cup rice wine vinegar
1/2 cup Thai basil leaves
1 teaspoon ground white pepper
2 cups sauteed sliced shiitake mushrooms
1 cup enoki mushrooms
1/4 cup sliced scallion
1/2 cup chopped scallions, green part only
2 cups shrimp, chopped
1 cup napa cabbage
1 tablespoon minced ginger
1 tablespoon sesame oil
1 whole egg
1/4 cup chopped scallions
1/4 cup chopped cilantro
1/2 cup finely diced jicama
Salt and white pepper to taste
6 slices of dried bread with the crust removed
1/4 cup sesame seeds

Steps:

  • Saute ginger, onion, chiles and lemon grass until soft. Deglaze pan with fish sauce. Add chicken stock and lime leaves. Simmer and reduce the liquid by 20 per cent. Add vinegar, basil and pepper. Check for seasoning. Strain the soup. Add sauteed shiitakes and fresh enoki mushrooms. Ladle soup in soup plates. Garnish with shrimp toast and scallions.
  • In a food processor, puree first 5 ingredients. Check for seasoning. Fold in scallions, cilantro and jicama. Spread the mixture on bread, cut in half on the diagonal and sprinkle with sesame seeds. Heat a deep fryer to 375 degrees F and fry until golden brown.

SHRIMP AND DILL TOAST (TOAST SKAGEN)

This elegant shrimp salad on buttery toast is a Swedish classic, perfect for springtime entertaining or a light lunch. Aquavit chef Emma Bengtsson uses tiny pre-cooked shrimp from Sweden (available at IKEA or online): their delicate briny flavor is important to the dish, and an ingredient worth seeking out.

8 ounces small pre-boiled Swedish shrimp, or rock shrimp, available at IKEA or online
3 tablespoons mayonnaise
1 lemon, divided
Kosher salt
Small bunch dill, divided
1/4 Pullman loaf, or 3 thick slices of any high-quality white bread
2 tablespoons unsalted butter, plus more as needed
6 leaves green lettuce

Steps:

  • Shrimp: In a bowl, add shrimp, mayonnaise, juice from half a lemon, and salt to taste. Pull the dill fronds from the stems and roughly chop to get 2 tablespoons, loosely packed (reserve the rest for garnish). Add to the shrimp mixture and stir to combine. Set aside.
  • Toast: Slice the bread into ¾-inch slices. Heat a large skillet over medium heat and add 1 tablespoon butter. When melted, add enough bread slices to fill the pan (about 3). Reduce heat to low and cook 30 seconds. Divide and spread 1 tablespoon butter evenly over the top sides; then flip and cook bread another 30 seconds, adding more butter to the pan as needed. When toast is golden on both sides, transfer to several layers of paper towels to cool, 30 seconds. Cut crust off of toast and slice each piece horizontally into 2 triangles.
  • Assembly: Place toast on a platter. Arrange a lettuce leaf on top of each triangle, making sure the leaf is about the same size as the toast, then add the shrimp. From reserved lemon half, cut three thin slices (wheels), and cut each wheel in half. Make a cut in the middle up to the peel, then twist and place over the shrimp. Garnish with small dill sprigs before serving.

1 tablespoon finely minced scallion with top
1 1/2 teaspoons finely minced pared fresh ginger root
1 egg
1 tablespoon cornstarch
1 teaspoon dry sherry
1/4 teaspoon salt
/4 teaspoon sugar
6 slices firm crumbed white bread
1 cup vegetable oil

Steps:

  • Combine shrimps, water chestnuts, scallion and ginger root in medium bowl. Beat egg cornstarch, sherry, salt and sugar together in small bowl, add to shrimp mixture. Mix well. Trim crust from bread. Spread each slice with one sixth of the shrimp mixture spreading all the way to edges. Cut each slice into 4 fingers. Heat oil in 8 inch skillet to 375 degrees. Fry 4 pieces of shrimp, spread side down, 1 minute, turn. fry second side until golden about 1 minute. Drain on paper towel. Repeat with remaining pieces. Cool on wire racks. Wrap airtight in plastic wrap. Freeze up to 3 weeks. To serve heat oven to 350 degrees. Arrange shrimp toast in single layer on wire rack over baking pan. Bake until heated through 5 to 7 minutes.

8 tablespoons butter
2 tablespoons garlic, chopped (about 6 cloves)
2 tablespoons onions, minced
1 tablespoon lemon juice, fresh squeezed
1 pint heavy cream
1 teaspoon chicken base (better than bullion paste)
1 teaspoon yellow mustard
2 tablespoons fresh tarragon, chopped
8 jumbo shrimp, peeled deveined and tails removed
4 tablespoons butter
salt, to taste
black pepper, to taste
1/4 teaspoon garlic powder
1/4 teaspoon oregano
4 ounces whiskey (Jack Daniels)
4 slices French bread, skinny loaf sliced 3/4-inch thick
1/2 cup olive oil

Steps:

  • SAUCE: To a saucepan melt butter over medium heat. Add remaining ingredients and cook for about 10 minutes, stirring occasionally. NOTE: Extra sauce (if any) can be kept in the refrigerator for about a week.
  • SHRIMP: Sauté shrimp in butter and spices. Let brown until almost cooked through.
  • Remove from heat, add whiskey to sauté pan and flambé'. When the flame goes down, add about 1 cup of sauce and let melt together in the pan.
  • BREAD: Drizzle (or brush) slices with olive oil and grill (or bake) both sides until lightly toasted.
  • SERVE: Top each piece of toast with a piece of shrimp then pour sauce over top, dousing bread and shrimp.
  • Garnish with sautéed vegetables (broccoli, carrots, red bell pepper, yellow squash).

This open-faced sandwich has pretty flecks of pink shrimp, red tomatoes and green parsley. To save time, blend the spread the night before and refrigerate.

2 cups frozen cooked salad shrimp, thawed
2 cups shredded cheddar cheese
1 cup mayonnaise
3/4 cup chopped fresh tomatoes
1/3 cup minced fresh parsley
2 tablespoons grated onion
1/4 teaspoon cayenne pepper
6 slices English muffin bread or bread of your choice, toasted

Steps:

  • In a large bowl, combine the first seven ingredients. Place about 1/4 cup of mixture on top of each slice of bread. , Broil 3-4 in. from the heat for 6-7 minutes or until top is lightly browned and cheese is melted. Serve immediately.

This is best made with dry breads or you can let bread sit overnight before using. To make smaller pieces for a party use cocktail bread. The Thai sweet chili sauce can be found in Asian markets, but if it is too difficult to find you can use sweet and sour sauce as a substitute.

10 pieces bread
3/4 cup shrimp, peeled and devein
1/4 cup ground pork
1 egg, beaten
2 teaspoons thin soy sauce
1 tablespoon cilantro, chopped
2 garlic cloves, minced
1/8 teaspoon white pepper
1/4 teaspoon salt
2 tablespoons sesame seeds
vegetable oil
Thai sweet chili sauce

Steps:

  • Chop up shrimp and mix with pork.
  • In another bowl mix cilantro, garlic, salt, and pepper, then add into shrimp and pork mixture.
  • Add in egg and soy sauce.
  • Divide the mixture into 10 parts.
  • Spread mixture onto the bread and sprinkle with sesame seeds.
  • Heat oil in a wok or pan until hot.
  • Place bread in hot oil face down; cook until golden.
  • Remove and place it on paper towel to remove excess oil.
  • Serve with Thai sweet chili sauce.

1/2 lb fresh or frozen raw shrimp
1/2 cup chopped green onion (with tops)
1/4 cup all-purpose flour
1/4 cup water
1 egg
1 tablespoon cornstarch
1 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon sesame oil
1 dash white pepper
vegetable oil
5 slices white bread

Steps:

  • Peel shrimp. (If shrimp is frozen, do not thaw; peel under running cold water.) Make a shallow cut lengthwise down back of each shrimp; wash out sand vein. Cut shrimp lengthwise into halves; cut crosswise into halves.
  • Mix shrimp, green onions, flour, water, egg, cornstarch, salt, sugar. sesame oil and white pepper.
  • Heat vegetable oil (1-1/2 inches) in wok to 350 degrees. Remove crusts from bread; cut each slice into 4 squares. Place 1 or 2 pieces of shrimp with sauce on each bread square.
  • Fry 5 squares at a time until golden brown, turning frequently - about 2 minutes. Drain on paper towel.
  • Do-ahead instructions: Prepare Shrimp Toast; cover and refrigerate no longer than 24 hours. Just before serving, heat uncovered in 400 degree oven until hot for 12 - 15 minutes. Drain on paper towel.

1 pound cooked shrimp - peeled, deveined and chopped
1 teaspoon grated fresh ginger root
1 teaspoon salt
4 teaspoons cornstarch
2 teaspoons oyster sauce
2 eggs, beaten
12 slices day old bread, crusts removed
1 quart canola oil for frying

Steps:

  • In a bowl, thoroughly mix the shrimp with the ginger, salt, cornstarch, oyster sauce, and eggs.
  • Cut each slice of bread into 4 squares, and arrange on a baking sheet. Spread shrimp mixture over each square, and refrigerate for at least 15 minutes.
  • In a wok or deep fryer, heat the oil to 365 degrees F (185 degrees C). Carefully drop bread into hot oil, shrimp side down, and fry until golden brown. Remove from oil, drain on paper towels, and serve.

These are so easy and so good! I don't need to get them at Leanne Chins anymore. The original came from the Ultimate Chinese cookbook. Edited to add warning about frying time.

4 slices white bread
8 ounces cooked peeled shrimp
1 tablespoon soy sauce
2 garlic cloves, crushed
1 teaspoon sesame oil
1 large egg
1 tablespoon sesame seeds, toasted
oil, for frying

Steps:

  • Remove crusts from the bread.
  • Using a food processor, blend shrimp, soy sauce, garlic, sesame oil and egg until a smooth paste has formed.
  • Spread paste evenly on top of bread.
  • Sprinkle bread with sesame seeds and press them into spread.
  • Cut bread from corner to corner twice, to form small triangles.
  • Heat oil in wok and fry toasts, sesame side up, for 4 to 5 min, until golden. WARNING: WATCH THEM CAREFULLY. THEY MAY TAKE CONSIDERABLY LESS THAN 4 MIN TO BECOME GOLDEN.
  • Drain toasts thoroughly.
  • Serve with sweet and sour sauce.
  • Enjoy!
