Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- In a small saucepan over medium heat, combine the butter, mustard, lemon juice, garlic, and parsley. When the butter melts completely, remove from heat.
- Arrange shrimp in a shallow baking dish. Pour the butter mixture over the shrimp.
- Bake in preheated oven for 12 to 15 minutes or until the shrimp are pink and opaque.

Steps:
- Preheat oven to 475°F, with a rimmed baking sheet on center rack and another rack in top position. Toss potatoes with 3 tablespoons oil; season with salt and pepper. Spread in a single layer on sheet and roast on center rack, flipping once, until beginning to brown, about 15 minutes.
- Meanwhile, toss asparagus with 1 tablespoon oil, and toss shrimp with remaining 1 tablespoon oil, oregano, and garlic. Season both with salt and pepper.
- Remove sheet from oven; flip potatoes and push to one side, then add asparagus to other. Roast until potatoes are just tender, 6 to 7 minutes. Switch oven to broil; add shrimp and lemon rounds on top of asparagus and potatoes.
- Broil on top rack until shrimp are opaque and browned in places, and asparagus and potatoes are cooked through, about 3 minutes more. Serve.
GARLIC SHRIMP SCAMPI BAKE
I started with Kimber's Shrimp Scampi Bake recipe I found on this site. After reading all the fantastic reviews, I made several changes which really makes it different enough to submit it separately. Serve with freshly grated Parmesan cheese.

Steps:
- Preheat oven to 450 degrees F (230 degrees C). Arrange shrimp in a single layer in a 10x15-inch baking pan.
- Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain. Place linguine in a large bowl.
- Heat butter, mustard, lemon juice, garlic, and 2 tablespoons parsley in a saucepan over medium heat until butter melts, about 3 minutes. Reduce heat to low; cook and stir until sauce is thickened, about 10 minutes. Stir in white wine. Pour scampi sauce over the shrimp.
- Bake in the preheated oven for 5 to 6 minutes. Sprinkle bread crumbs lightly over shrimp. Increase oven temperature to 500 degrees F (260 degrees C); continue baking until just lightly browned, 1 to 2 minutes more.
- Pour shrimp scampi over the linguini and toss. Top with the remaining 1 tablespoon parsley.

TILAPIA OR SHRIMP SCAMPI BAKE

- Preheat the oven to 425 degrees F. Peel, devein, and butterfly the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture. In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined. Starting from the outer edge of a 14-inch oval gratin dish, arrange the Tilapia in a single layer dish. Pour the remaining marinade over the Tilapia. Spread the butter mixture evenly over the Tilapia. Bake for 50 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges.

- Set oven to 400 degrees (bottom oven rack).
- Lightly grease an 11 x 7-inch baking dish (or one that will hold all ingredients).
- In a saucepan place the butter with mustard, lemon juice, chopped garlic, wine (if using) Cajun seasoning, black pepper and parsley; bring JUST to a simmer stirring with a wooden spoon or until the butter has melted (do not brown the butter) remove from heat.
