SHRIMP AND CAULIFLOWER "GRITS"



Shrimp and Cauliflower

Cauliflower can be sneaky--especially when it subs for corn in grits. Whether you're not a fan of regular grits or you're looking to add more vegetables to your diet, riced cauliflower simmered in water and finished with butter and Parmesan is an impressive alternative to the real thing.

1 large head cauliflower (about 2 pounds), trimmed and cut into small florets
1 cup 1 percent milk
3 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/3 cup grated Parmesan
1 1/4 pounds peeled and deveined tail-on medium shrimp
2 large cloves garlic, minced
Pinch cayenne pepper, optional
2 tablespoons roughly chopped fresh parsley
Juice of 1/2 lemon, plus lemon wedges, for serving

Steps:

  • Pulse about half of the cauliflower in a food processor until the florets break down into finer pieces about the size of grains of rice (it's totally fine if they clump; think of this step as cauliflower "rice" gone wrong). Transfer to a medium saucepan, pulse the remaining cauliflower and add that to the pan too. Add the milk, 1 tablespoon of the butter, 1/2 teaspoon salt and several grinds of pepper and bring to a simmer over medium-high heat. Simmer, stirring frequently, until the mixture is soft and smooth and looks like grits, about 10 minutes. Remove from the heat, stir in the Parmesan and adjust the seasoning with more salt and pepper if you'd like. Cover and keep warm.
  • Season the shrimp with salt and pepper. Melt the remaining 2 tablespoons butter in a large skillet over medium-high heat. Add the shrimp, garlic and cayenne if using and cook, tossing, until the shrimp are pink and just cooked through, 3 to 4 minutes. Remove from the heat, add the parsley, lemon juice and 1 tablespoon water and stir to coat the shrimp with the sauce. Season with salt and pepper.
  • Divide the cauliflower grits among shallow bowls and top with the shrimp and sauce. Serve with lemon wedges.

CREAMY CAULIFLOWER RICE WITH SHRIMP

3 tablespoons olive oil, divided
1 pound peeled and deveined medium shrimp, tails removed
.75 teaspoon kosher salt, divided
1 medium leek (white and light green parts only), thinly sliced (2 cups)
.25 cup dry white wine
1 12-oz. pkg. fresh riced cauliflower (4 cups)
.50 cup low-sodium chicken broth or vegetable broth
2 ounces fresh baby spinach (2 packed cups)
.25 cup heavy whipping cream
2 ounces Parmesan cheese, finely shredded (about ¾ cup), plus more for serving (optional)

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium. Add shrimp and ¼ teaspoon salt; cook, stirring often, until firm and pink about 5 minutes. Transfer to a plate. Wipe skillet clean.
  • Heat remaining 2 tablespoons oil in skillet over medium. Add leek; cook, stirring often, until tender, 3 to 4 minutes. Add wine; cook, stirring constantly, until wine is fully absorbed, 1 to 2 minutes. Stir in cauliflower and broth; cook, stirring often, until broth is fully absorbed, about 3 minutes. Stir in spinach, cream, and remaining ½ teaspoon salt; cook, stirring constantly, until spinach wilts, about 2 minutes. Add cheese; cook, stirring constantly, until melted, about 1 minute.
  • Remove from heat and stir in cooked shrimp. Serve immediately with more cheese, if desired.

CAULIFLOWER "FRIED RICE" WITH SHRIMP AND EDAMAME



Cauliflower

This is a great recipe for the times you want the flavor and satisfaction of fried rice without a lot of the carbs. You can find riced cauliflower fresh or frozen at the market or make it yourself at home. If you're going vegetarian, sub out the oyster sauce with vegetarian oyster sauce or mushroom soy sauce. Also, sub out the chicken powder with sugar. If you want to add meat, just slice it thin and add it to the pan first until almost cooked through, then add the cauliflower.

1 tablespoon canola oil
1 clove garlic, minced
6 to 8 medium shrimp, peeled and deveined
1 small red bell pepper, half thinly sliced and half finely diced (for garnish)
1/4 cup shelled steamed edamame
1 large egg, beaten
4 cups riced cauliflower (do not thaw, if frozen; see Cook's Note for how to rice your own)
1 tablespoon low-sodium soy sauce
1 tablespoon oyster sauce
1 teaspoon chicken powder or sugar
Kosher salt
2 scallions, chopped
Pinch white pepper

Steps:

  • Heat a large skillet, saute pan or wok over high heat, then add the oil and garlic and cook, stirring, until fragrant, about 30 seconds.
  • Stir in the shrimp and cook, tossing constantly, until the shrimp are cooked about halfway through, 30 seconds to 1 minute. Move the shrimp to one side of the skillet; add the egg to the other side and immediately stir in the riced cauliflower. Using the back of a spatula or spoon press the cauliflower into the egg in small circles until coated and solidified with egg. Fold and repeat until the riced cauliflower is completely coated and heated through. Add the sliced bell peppers and edamame and cook, stirring occasionally, until heated through, 1 to 2 minutes. Add the soy sauce, oyster sauce, chicken powder and a pinch of salt, while stirring to coat.
  • Taste and adjust the seasoning, if necessary, constantly stirring until the "fried rice" is heated through, about 1 more minute. Garnish with the scallions, diced bell peppers and white pepper.

2 tablespoons vegetable oil
1 small yellow onion, thinly sliced
2 cloves garlic, minced
1 tablespoon minced peeled fresh ginger
2 teaspoons curry powder
4 cups cauliflower florets
3/4 cups chicken broth
1 pound large shrimp, peeled and deveined
Coarse salt
White rice, for serving

Steps:

  • Heat oil in a large skillet heat oil over medium high. Add onion, garlic, and ginger and saute until onion is translucent, about 3 minutes. Add curry powder and 1/2 teaspoon salt and saute for 30 seconds. Stir in cauliflower and stock, and bring to a boil. Cover and cook until cauliflower is just tender, about 5 minutes. Add shrimp, cover, and cook until shrimp are opaque throughout, 2 to 3 minutes, taste and adjust for seasoning.

3 cups cauliflower florets
1 teaspoon sesame oil
3 carrots, diced
3 cloves garlic, minced
1 lb large shrimp, peeled and deveined
1 cup frozen peas, thawed
2 eggs, beaten
3 tablespoons low sodium soy sauce
½ teaspoon white pepper
green onion, for garnish

Steps:

  • Pulse cauliflower in a food processor until broken into rice-sized pieces.
  • Heat the sesame oil in a large skillet or wok. Toss in the carrots and sauté until soft, about 5 minutes.
  • Add in the garlic and shrimp and sautée until the shrimp begin to turn pink, about 2 minutes.
  • Add the peas and cauliflower rice and mix until the cauliflower has warmed through.
  • Move the contents of the pan to the side to create a well in the center. Pour in the eggs and slowly scraped the cooked bits off the bottom of the pan to scramble the eggs. Once the eggs are almost finished cooking, mix everything in the pan together.
  • Season the cauliflower with white pepper and soy sauce, give one last good mix to combine and serve with a garnish of sliced green onion.
