SHRIMP QUESADILLA

8 ounces pepper jack cheese
Six 16-20 count unpeeled shrimp, deveined
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
2 tablespoons mayonnaise
2 large flour tortillas
1/4 cup chopped roasted red pepper
1/4 cup chopped fresh cilantro leaves

Steps:

  • Place cheese in freezer for around 45 minutes.
  • Meanwhile, preheat oven to 400 degrees F.
  • Drizzle shrimp with olive oil in a large bowl. Sprinkle with salt and pepper and toss to coat. Spread on a baking sheet and bake, rotating once, until just cooked through, 7 to 9 minutes.
  • When shrimp are cool enough to handle, remove and discard peels and tails. Cut shrimp into thirds.
  • Shred cheese using the large holes on a box grater.
  • Spread 1 tablespoon mayonnaise on one side of a tortilla. Place tortilla, mayo-side down, in a large skillet. Sprinkle half the cheese evenly over the top of the entire tortilla, then turn heat on to medium-low heat. While pan is heating, sprinkle half of the chopped shrimp, half of the roasted red peppers and half of the cilantro on one half of the tortilla, leaving the other half with just cheese. Let quesadilla cook, checking that the bottom of the tortilla doesn't burn, until cheese is mostly melted, 3 to 5 minutes. Remove skillet from heat and carefully fold the quesadilla in half like a book, folding the cheese side over the toppings. Place quesadilla on a plate and let rest 5 minutes. Repeat with second tortilla and ingredients. Cut into wedges before serving.

1/4 cup chopped onion
1 tablespoon finely chopped jalapeno pepper
1/2 pound uncooked shrimp, peeled, deveined and chopped
1/4 teaspoon ground cumin
1/8 teaspoon pepper
1/4 cup chopped tomato
4 flour tortillas (6 inches)
1/3 cup shredded reduced-fat Mexican cheese blend

Steps:

  • In a large nonstick skillet coated with cooking spray, cook and stir onion and jalapeno until tender. Add the shrimp, cumin and pepper; cook and stir until shrimp turn pink. Transfer to a small bowl; stir in tomato., Coat the same skillet with cooking spray; add one tortilla. Top with half of cheese, half of shrimp mixture and one tortilla. Cook over medium heat for 2-3 minutes on each side or until lightly browned; remove. Repeat with remaining tortillas, cheese and shrimp mixture, spraying pan as needed. Cut into wedges.

Spanish-Style Chorizo and Shrimp Quesadilla with Chimichurri image

2 tablespoons EVOO, plus about 1/4 cup for chimichurri
8 ounces Spanish-style chorizo, casing removed and sliced, preferred brand Gaspar's Hot
8 ounces medium shrimp, halved along the devein line
5 cloves garlic, 4 thinly sliced or grated, 1 crushed
4 piquillo peppers (in water, drained) thinly sliced, or one 4-ounce jar chopped pimiento, drained
About 1/3 cup dry sherry or white wine
1 small lemon, halved
2 large flour tortillas
Cooking spray, non-aerosol, olive oil
1 cup shredded Pepper Jack
1 cup shredded Manchego
1 shallot, peeled and coarsely chopped
2 tablespoons sherry vinegar or wine vinegar
1 cup each parsley and cilantro, loosely packed
Salt and pepper
Greek yogurt or creme fraiche
Pickled sliced jalapeno peppers

Steps:

  • Heat a nonstick skillet over medium-high heat with EVOO, 2 turns of the pan. Add chorizo and shrimp and cook 3 to 4 minutes. Add sliced garlic and toss. Add piquillos and sherry or wine and let it absorb. Add juice of 1/2 lemon and turn off heat.
  • Heat a cast-iron skillet over medium to medium-high heat. Spray the tortillas or skillet lightly with oil. Blister a tortilla and flip. Top the tortilla with a layer of the shredded cheeses. Arrange chorizo and shrimp on half the quesadilla and fold over. Press with a spatula to set, turn a few times to melt the cheese and remove to a cutting board.
  • To a food processor bowl, add shallots, crushed garlic, 1/4 cup EVOO, vinegar, juice of 1/2 lemon, cilantro, parsley and season with salt and pepper. Pulse to process into sauce.
  • Cut quesadilla into wedges and arrange on platter with dollops of chimichurri, Greek yogurt or creme fraiche and pickled sliced jalapeno peppers.

2 Hatch chile peppers, halved and seeded
cooking spray
6 cooked shrimps, tails removed
1 (9 inch) whole-wheat tortilla
1 teaspoon minced garlic
ΒΌ cup shredded mozzarella cheese, or to taste
salt to taste

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place Hatch chile peppers, cut sides down, onto the prepared baking sheet.
  • Cook peppers under the preheated broiler until the skin has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and tightly seal with plastic wrap. Allow peppers to steam as they cool, about 15 minutes. Discard skins and chop peppers.
  • Coat a large skillet with cooking spray over medium heat. Place shrimp onto tortilla; cover with the chiles, garlic, and mozzarella cheese. Add salt.
  • Fold tortilla in half and transfer to the skillet. Cook until lightly toasted with spots of brown, 3 to 5 minutes per side.

These are fantastic. The oven baking method produces a quesadilla that is uncommonly crisp and light, but they work just as well on a grill. They're a cinch to assemble ahead of time, which makes them perfect for entertaining. Cut into eighths for ideal hors d'oeuvres or into quarters for a light lunch. Delicious!

three 6-inch flour tortillas
1 cup grated monterey jack cheese
1 cup grated white cheddar cheese
3 tablespoons cilantro pesto sauce (see below)
salt and pepper
3 tablespoons olive oil
1/2 teaspoon dried ancho chile powder
4 large shrimp, peeled and deveined
2 teaspoons sour cream
1 cup cilantro leaf
2 teaspoons pumpkin seeds
1 1/2 teaspoons fresh lime juice
1 teaspoon minced garlic
1 tablespoon grated parmesan cheese
salt & freshly ground black pepper
1/4 cup olive oil

Steps:

  • Make the cilantro pesto: in a food processor, blend all of the ingredients except for the olive oil. While the processor is running, slowly add the olive oil. Cover the pesto and refrigerate. (Will keep in the fridge for 2 to 3 days)Preheat oven to 450*F.
  • Place two tortillas on an undgreased baking sheet.
  • Sprread each with 2 TBS of the pesto and sprinkle with the cheeses. Season with salt and pepper.
  • Stack one tortilla on top of the other and cover with the remaining tortilla. Brush the top with 1 TBs of olive oil and sprinkle evenly with the ancho powder.
  • Bake until the tortillas are slightly crisp and the cheese has melted, 8 to 12 minutes.
  • Meanwhile, heat the remaining 2 TBs of olive oil. Season the shrimp and saute for 2 1/2 minutes on each side.
  • Cut the quesadillas into quarters. Garnish with the remaining tablespoon of pesto, the shrimp and the sour cream and serve hot.

1/4 pound 1/4 pound of medium-small shrimp, peeled and deveined 2 Tbsp of lime or lemon juice 1/4 jalapeno or serrano chile, finely minced and/or dash of chile powder 1 Tbsp chopped green onion 1 Tbsp chopped fresh cilantro, plus more for garnish Salt and pepper 2 medium-sized flour tortillas 1/2 cup shredded Monterey Jack cheese 1/4 avocado, sliced Dollop of sour cream or crema fresca

Steps:

  • 1 If you are starting with frozen raw shrimp, defrost them by placing them in a bowl of ice water until defrosted. Then poach the raw shrimp for 1 to 2 minutes in boiling water, remove from pan with a slotted spoon, and rinse under cold water to stop the cooking. If you are starting with frozen cooked shrimp, you can defrost them in a bowl of ice water or lemon juice with ice. 2 Place strained cooked shrimp in a bowl. Add lime or lemon juice, some chopped fresh jalapeno or serrano chile and/or a dash of chile powder (can also use chipotle chiles or chipotle chili powder) to desired level of heat, green onion, and cilantro. Sprinkle with salt and pepper. Let marinate for 10 to 30 minutes. Strain out the juice. 3 Heat a cast iron or stick-free skillet on medium high. Add a small amount of oil (about 1/2 teaspoon) and spread it around the bottom of the pan with a spatula (you could use butter as well). Place one flour tortilla on the skillet. Flip the tortilla over a few times, 10 seconds between flips. Air pockets should begin to form within the tortilla. Remove the tortilla and repeat with the second tortilla. Leave the second tortilla in the pan and reduce the heat to medium. 4 Sprinkle the tortilla with the grated cheese. Distribute the shrimp mixture on top of the cheese. Place the other tortilla on top. Using two spatulas (one to hold the top in place) flip the quesadilla over when the bottom tortilla is nicely toasted and the cheese has begun to melt. Remove the quesadilla from the pan when the now bottom tortilla has toasted sufficiently. You can also use just one tortilla instead of two, and fold the tortilla over itself like an omelette. 5 Cut like a pie into six pieces. A pizza wheel works well for this. Place on a serving plate. Serve with avocado slices and sour cream. Garnish with chopped fresh cilantro.

1/4 jalapenos or 1/4 serrano chili, finely minced

3/4 cup monterey jack cheese, shredded
1/4 avocado, sliced
dollop sour cream
salt and pepper

Steps:

  • Place shrimp in a bowl.
  • Add lime or lemon juice, chiles, green onion, cilantro.
  • Sprinkle with salt and pepper.
  • Let Marinade for 10-30 minutes.
  • Strain out the juice.
  • Heat a cast iron or stick-free skillet on medium high.
  • Add 1/2 tsp of oil amd spread it around the pan.
  • Place 1 tortilla on the skillet.
  • Flip it over a few times, 10 seconds between flips so that air pockets form.
  • Do this with the second tortilla also. Leave the 2nd tortilla in the pan.
  • Sprinkle the tortilla with the grated cheese.
  • Distribute the shrimp mixture on top of the cheese.
