2 (17 1/4 ounce) packages frozen puff pastry, defrosted (sheets)
30 peeled deveined uncooked shrimp, cut into small pieces
1 large egg
cooking spray
1/4 cup cilantro, chopped
1/4 cup red onion
1 jalapeno pepper, seeded and chopped into fine pieces
1 garlic clove, minced (more to taste)
all season salt (to taste)
1/2 teaspoon ground cumin
1/4 teaspoon red pepper
6 fresh basil leaves, chopped
1/4 cup feta cheese, crumbled
1/4 cup onion, chopped
1 garlic clove, minced (more to taste)
all season salt (to taste)

Steps:

  • Slice puff pastry squares diagonally so you have two smaller triangles. Set aside. Take the cut up shrimp and place half into the bowl for the Indian stuffing and half in the bowl for the Greek stuffing. Combine all ingredients for each type of stuffing in their respective bowls and mix well with spoon or hands.
  • Lay one diagonal pasty sheet on a wooden cutting board, spoon a small amount of either stuffing in the middle of the pastry sheet and then fold the sheet into a smaller triangle, pinching the edges to seal the shell. Take a fork and press the tines down on the finger-sealed edges to secure the hold.
  • Place stuffed pastry sheets on a cooking-spray coated baking sheet, align so you can get as many triangles on it as possible.
  • Mix one egg with a few drops of water, beat well. Brush egg mixture over the top of the prepared and stuffed pastry. Place in the oven, cook until pastry is puffed and golden, about 15-20 minute Check on the pastry often. Remove from oven, let cool at least 5 min and then serve with yogurt.

1 cup flour, all purpose
1/2 cup butter
6 tbsp cream cheese, light
2 cups shrimp, cubed
2 tbsp butter
3/4 cup onion, finely chopped
3 cloves garlic, chopped
2 tbsp parsley, coarsely chopped
1 cup water
1.5 tbsp flour, all purpose
salt and pepper (to taste)

Steps:

  • In a mixer, combine flour, butter and cream cheese.
  • Mix until dough forms a ball and cleans the sides of the bowl.
  • Wrap dough in plastic wrap and chill for 15 minutes.
  • Add butter, onion and garlic and parsley to the pan on stove top. Saute for 2 to 3 minutes.
  • Add the shrimp, along with some salt and pepper and mix together. Saute for another 1 minute.
  • Combine cool water with flour until you have a smooth milky mixture.
  • Add the flour water mixture to the pan, stir together a few times and put aside to cool before filling cups.
  • Remove dough from the fridge and shape dough into 2 dozen 1-inch balls. Place each in a paper-lined or greased miniature (1 ¾"-inch) muffin cup.
  • Press dough on bottom and sides of each cup.
  • Scoop 1 tbsp of the cool shrimp filling and place inside each cup.
  • Bake in a 365°F preheated oven for 25 minutes or until golden brown and filling is set.
  • Cool in pans on a wire rack.

3 tablespoons cream cheese spread (from 8-oz. container)
1 teaspoon soy sauce
1/4 teaspoon ground ginger
1/2 teaspoon finely chopped garlic
1 can (8 oz.) Pillsbury® refrigerated butter flake crescent dinner rolls (8 rolls)
16 uncooked deveined peeled large shrimp (about 1/2 lb.), thawed if frozen, tails removed, if desired
3 tablespoons sesame seed
1/3 cup SMUCKER'S® Apricot Preserves

Steps:

  • Heat oven to 375 degrees F. High Altitude (3500-6500 ft): No change. Spray cookie sheet with CRISCO® Original No-Stick Cooking Spray, or line with cooking parchment paper. In small bowl, mix cream cheese, soy sauce, ginger and garlic until well blended; set aside.
  • Separate dough into 8 triangles. Cut each triangle lengthwise in half to make 16 triangles. Spread about 1/2 teaspoon cream cheese mixture on each triangle. Pat shrimp dry with paper towels. Place 1 shrimp on shortest side of each triangle; roll up, starting at shortest side, rolling to opposite point.
  • Place sesame seed in small bowl. Gently press top of each roll into sesame seed; place roll, point side down, on cookie sheet.
  • Bake 16 to 21 minutes or until golden brown.
  • In small microwavable bowl, microwave preserves uncovered on High about 20 seconds or until melted. Gently spread 1 teaspoon melted preserves over each puff to glaze. Cool 5 minutes. Serve warm.

2 tablespoons minced onion
2 tablespoons butter
2 tablespoons flour
1 cup cream
2 tablespoons dry sherry wine
1 can tiny shrimp
1 tablespoon finely chopped pimento
1/4 teaspoon salt
1 package Pepperridge farm puff pastry sheets
1/4 cup green pepper, minced

Steps:

  • Saute green pepper and onion in butter. Stir in flour and cook one minute. Remove from heat and cook, stirring occasionally til mixture comes to a boil. Remove from heat and stir in shrimp, pimento and salt. Set aside to cool completely. Thaw pastry 20 minutes; unfold. Roll each sheet on a lightly floured surface to a 12" square; cut each into 16 three inch squares. Top each square with some shrimp mixture. Brush edges of pastry with egg mixture; fold in half to form triangles. Press edges together with tines of a fork. Brush with more egg and transfer to ungreased baking sheets. Bake at 400 degrees for 10 to 12 minutes until golden brown and puffed.

1 cup whipping cream
1/2 cup dry white wine

1 1/2 tablespoons Dijon mustard
1 teaspoon white wine vinegar
1 (10 ounce) package frozen chopped spinach, thawed, squeezed dry
1 (17 1/4 ounce) package frozen puff pastry, thawed (2 sheets)
16 uncooked large shrimp, peeled, deveined
8 sea scallops, halved horizontally

Steps:

  • Preheat oven to 500°F Melt butter in heavy large skillet over medium-high heat. Add mushrooms and shallots; sauté 5 minutes. Add cream, wine and broth. Boil until mixture is reduced to 1 cup, about 12 minutes. Mix in mustard and vinegar, then spinach. Season with salt and pepper. Cool.
  • Roll out 1 pastry sheet on lightly floured surface to 12-inch square. Place 1/8 of spinach mixture on bottom half of 1 square. Top spinach mixture with 2 shrimp and.
  • 2 scallop halves. Brush pastry edges with water. Fold unfilled half of pastry over filling, forming rectangle. Press edges of pastry closed with tines of fork. Place pastry on large baking sheet. Repeat with remaining pastry, spinach mixture, shrimp and scallops.
  • Bake pastries 5 minutes. Reduce heat to 375°F Bake pastries until puffed and golden brown, about 15 minutes longer. Serve warm.
