Hash brown cups are filled with a creamy sauce, then topped with crunchy shrimp for a kid-friendly snack that's also great for parties.

Nonstick cooking spray, for the muffin tin
One 16-ounce bag frozen hash browns, thawed
2 large eggs, lightly beaten
Kosher salt and freshly ground black pepper
1 cup frozen popcorn shrimp
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups milk, warmed
2 ounces white Cheddar, grated (about 2/3 cup)
2 cups frozen broccoli florets, thawed and chopped

Steps:

  • Position oven racks in the middle and lower third of the oven and preheat to 425 degrees F. Generously spray a 24-cup mini muffin tin with nonstick cooking spray.
  • Put the hash browns in a medium bowl, add the eggs and toss with a fork to coat. Divide the mixture among the cups of the prepared muffin tin (about 2 tablespoons per cup). Use the back of a tablespoon measure to gently press the hash browns around the bottom and sides to form a thin layer with some shaggy bits sticking up and out of the cups. Sprinkle with salt and pepper.
  • Bake the hash brown cups on the top rack for 20 minutes, then rotate the muffin tin from front to back. Spread the popcorn shrimp in a single layer on a baking sheet and put on the bottom rack. Continue to bake until the hash brown cups are golden brown on the ends and crispy and the shrimp are warmed through and crispy, about 10 minutes for the shrimp and 10 to 15 minutes for the hash browns.
  • Meanwhile, melt the butter in a small pot over medium heat. Add the flour and cook, whisking, until it begins to foam, about 2 minutes. Whisk in the warm milk and bring to a simmer; simmer until thickened, 1 to 2 minutes. Remove from the heat and stir in the Cheddar until completely melted into the sauce. Stir in the broccoli and 1/2 teaspoon salt and place over low heat to warm through.
  • When ready to serve, arrange the hash brown cups on a serving platter. Spoon about 1 heaping tablespoon of the broccoli cheese sauce into the center of each cup. Top with 1 or 2 pieces of popcorn shrimp.

Ready, Set, Cook! Hidden Valley Contest Entry. Little nests of potatoes filled with a shrimp puree topped with a small piece of shrimp. These little nests are great for superbowl parties or any occasion. I made similar nest (smoked salmon, sour cream) for Christmas Eve and people loved them. This is a sophisticated appetizer, so some may not like this but it is worthy of a try. I only put 30 mintues as a prep time because besides the time it takes to refrigerate the potatoes everything else is very easy and quick to do.

1 1/2 lbs red potatoes
1/4 cup shrimp, peeled
1 tablespoon lemon zest
3/4 cup plain Greek yogurt
1/2 teaspoon salt
1 pinch black pepper
1 small fresh parsley leaves
1 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix

Steps:

  • In a large pan bring unpeeled potatoes to a boil. Reduce heat, cover and cook 20 minutes. Drain, let cool and refrigerate at least 1 hour.
  • Meanwhile, pulse shrimp and lemon zest in a processor. Add yogurt and Hidden Valley packet, process til combined. Refrigerate until ready to serve.
  • Preheat oven to 425 degrees.
  • Grease mini muffin pan. In a medium bowl coarsely peel potatoes and grate. Gently toss in salt and pepper. Place a heaping tablespoon of potato in muffin pan, press against sides to form and allow som to extend over rims. Do not spread to thin. Bake about 25 mintues. Cool in pan about 10 mintues. Carefully remove and place on a baking sheet lined with paper towels. (This process can be made up to 4 hours ahead and left at room tempature.).
  • Preheat oven to 375 degrees.
  • Bake nests for 6-8 mintues. Transfer to a serving platter. Spoon a dollop of the shrimp mix into each nest and top with a tiny piece of shrimp. Sprinkle with parsley and serve.

15 raw shrimps
salt, for seasoning
pepper, for seasoning
3 russet potatoes
1 tablespoon butter
1 egg yolk
2 teaspoons salt
2 teaspoons pepper
2 teaspoons paprika
2 teaspoons garlic powder
2 tablespoons flour, if the texture is too wet
flour
1 egg
panko breadcrumb
oil, for frying

Steps:

  • Peel off the shrimp skin (leave the tail on) and salt and pepper the shrimp for seasoning.
  • Cook the potatoes, mash them into small crumbs and add in butter and egg yolk. (If the texture is too wet, go ahead and add in some flour.)
  • Mix until smooth and then add in salt, pepper, paprika, and garlic powder for seasoning, mix well.
  • Take about ⅓ cup mashed potato, form into a ball shape, poke a hole on the top, then put a shrimp inside, cover the shrimp well, and tighten the ball.
  • Dip the ball into flour, egg wash, and panko, and make sure the ball is fully covered well with all three ingredients. If needed, refrigerate the balls before frying.
  • Heat the oil between 350ºF to 375ºF (180ºC to 190ºC), then fry the shrimp ball until the outside is golden brown.
  • Let it cool down a bit, and then serve it right away with any kind of sauce.

I must confess that I didn't make mine in muffin cups--I just used an 8 1/2 x 11" pan for the hash browns and egg and added the cooked bacon at the end. This is a simple recipe kids could help make. 20 ounces hash browns, savory seasoned
1 egg, lightly beaten
1 1/2 cups cheddar cheese, shredded
1/2 cup sour cream
8 slices bacon, crisply cooked and crumbled

Steps:

  • Heat oven to 450.
  • Combine potatoes and egg in a large bowl.
  • Use hands to mix well.
  • Coat regular muffin pan with nonstick cooking spray.
  • Spoon 2 heaping tablespoons of potato mixture into each muffin cup.
  • Use fingers and back of spoon to press mixture firmly on bottom and sides of muffin cup.

8 ounces Greek yogurt
1 cup finely chopped cooked shrimp
1/4 cup finely chopped fresh chives
1 small shallot, minced
1 tablespoon Hidden Valley Original Ranch Seasoning Mix
2 (12 ounce) packages wonton wrappers
oil, for frying
sweet chili sauce or sweet and sour sauce, for dipping

Steps:

  • In a large bowl, combine the cream cheese, Greek yogurt, shrimp, chives, shallot, and Hidden Valley Original Ranch Seasoning Mix. Mix well until combined. Spoon about 1 tablespoon of filling in the middle of a wonton wrapper. Pinch the edges together to form a triangle. Continue with the remaining filling and wonton wrappers. "Ready, Set, Cook! Hidden Valley Contest Entry" This recipe is an example of a layered Persian tah-dig dish. I developed an interest in Persian foods while surfing the internet. I was amazed at how many ways this rice dish can be prepared. I experimented and put my on spin to this dish. I usually prepare this dish in my Persian rice cooker. However, this recipe was prepared in a 13 inch non-stick skillet.

2 1/2 cups jasmine rice
2 boneless chicken breasts
1 peeled and thinly sliced sweet potato
3 egg yolks
1 1/2 cups plain Greek yogurt
1 (5 ounce) container peach Greek yogurt
1 (12 ounce) jar sweet mango chutney
5 shallots, finely chopped
1/4 cup chopped fresh chives
1 tablespoon lemon zest
2 tablespoons lemon juice
1/2 teaspoon powdered saffron
1/2 teaspoon turmeric
1 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix
3 tablespoons extra virgin olive oil
6 tablespoons chicken stock
1/4 teaspoon black pepper
1/4 teaspoon salt
water

Steps:

  • In a skillet, cover the chicken breasts, shallots, lemon juice, and turmeric with water. Bring to a boil on medium-high heat. Reduce temperature and simmer for one hour. Reserve the stock. Cool and cut the chicken into small pieces.
  • Wash and drain the rice. Bring six cups of water and 1/4 teaspoon turmeric to a boil in a large pot. Add rice and boil uncovered for ten minutes. Drain and rinse the rice in cool water.
  • In a food processor, combine yogurt, egg yolks, Hidden Valley Original Ranch Seasoning Mix, lemon zest, chives, salt, and pepper. Process for 30 seconds or until all ingredients are thoroughly combined. Add 2 cups of the rice to the yogurt mixture. Process for 15- 20 seconds.
  • Dissolve the saffron into 3 tablespoons of the chicken stock.
  • Lightly brush one side of the sweet potato slices with a tablespoon of olive oil. Cover the bottom of a large non-stick skillet with two tablespoons of olive oil and 1/2 teaspoon of the saffron mixture. Layer 2/3 of the rice and yogurt mixture in the bottom of the pan. Line the edges of the pan with the sweet potatoes.
  • Layer the chicken on top of the mixture. Spoon on the rest of the yogurt mixture. Spread it as evenly as possible. Add the remaining rice. Flatten the rice with the back of a spoon. Combine three tablespoons of chicken stock with the remaining saffron mixture. Drizzle over the top of the rice layer.
  • Cook covered on medium heat until it begins to steam. Reduce temperature to low and cook for one hour. Cool, then place a large plate over the top of the pan. Carefully invert the pan. Garnish as desired. Top with a dollop of Greek peach on the bottom yogurt and sweet mango chutney.
