PESTO CORN SALAD WITH SHRIMP
Steps:
- In a pot of boiling water, cook corn until tender, about 5 minutes. Drain; cool slightly. Meanwhile, in a food processor, pulse basil, oil and 1/4 teaspoon salt until blended., Cut corn from cob and place in a bowl. Stir in tomatoes, pepper and remaining salt. Add avocado and 2 tablespoons basil mixture; toss gently to combine. , Thread shrimp onto metal or soaked wooden skewers; brush with remaining basil mixture. Grill, covered, over medium heat until shrimp turn pink, 2-4 minutes per side. Remove shrimp from skewers; serve with corn mixture.

Shrimp and raw and cooked vegetables are brought together into a colorful dinner salad with the bright flavors of a lemony arugula pesto in this delicious dish.

Steps:
- Put the potatoes in a large saucepan, cover with cold water and season with salt. Bring to a boil, then reduce the heat to a gentle boil and cook until fork-tender, 8 to 10 minutes. Remove the potatoes with a slotted spoon to a large bowl, leaving the water in the pot.
- Fill a separate large bowl with ice water. Return the pot of water to a boil, add the green beans and cook until crisp-tender, 5 to 7 minutes. Drain and transfer to the ice water. Drain the beans again and add to the potatoes. Add the cherry tomatoes.
- Combine 2 cups arugula, 1/4 cup olive oil, the pine nuts, Parmesan, half of the garlic, half of the lemon juice, 1/4 teaspoon salt and a few grinds of pepper in a food processor. Process until smooth. Pour the pesto over the vegetables and toss to coat.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat; add the red pepper flakes and remaining garlic and cook 30 seconds. Add the shrimp, sprinkle with the lemon zest and season with salt and pepper. Cook, turning once, until pink, 3 to 4 minutes. Remove from the heat.
- Toss the remaining arugula, 1 tablespoon olive oil and the lemon juice in a bowl; season with salt and pepper. Divide the arugula among shallow bowls and top with the vegetables and shrimp.

- Make dressing:
- Blend basil, nuts and vinegar in processor until nuts are finely ground. With machine running, gradually add oil and blend well. Season to taste with salt and pepper. Transfer to small bowl. (Dressing can be made 1 day ahead. Cover and refrigerate. Bring to room temperature before using.)
- Make shrimp:
- Whisk coconut milk and curry paste in medium saucepan over medium-low heat until blended; bring to simmer. Add shrimp and simmer until shrimp are almost opaque in center, about 3 minutes. Remove from heat. Refrigerate shrimp in curry liquid, uncovered, until very cold, about 2 hours.
- Place rice sticks in medium bowl. Cover with very hot water. Let stand until tender, about 25 minutes. Drain rice sticks. (If using pasta, cook in pot of boiling salted water until just tender but still firm to bite. Drain well; rinse pasta with cold water and drain again.) Using knife or poultry shears, cut rice sticks or pasta into shorter (about 6-inch) lengths. Place noodles in medium bowl and toss with enough dressing to coat.
- Combine cabbage, bok choy, green onions and chopped cilantro in large bowl. Toss with enough dressing to coat. Season with salt and pepper. Divide greens among plates. Top with noodles. Drain shrimp; place atop noodles, dividing equally. Garnish with cilantro sprigs. Pass any remaining dressing separately.
ROBIN'S PESTO TORTELLINI AND SHRIMP SALAD
My sister frequently makes this for summertime gatherings. There is never a bite left! So cool and fresh! The original recipe calls for Pesto tortellini, but you may use any kind you like. It also calls for fresh snowpea pods, but frozen may be substituted.

- Cook tortellini as per package directions until al dente.
- Blanch peapods in boiling water for 2 minutes. Drain and rinse with cold water.
- Combine tortellini, shrimp, snowpea pods, cheese, green onions, salt, pepper and mayonnaise. Toss well.
- Chill at least 1 hour.
- Line bowl with Romaine lettuce leaves, pour in salad and garnish heavily with chopped fresh basil.

TORTELLINI, SHRIMP AND PESTO SALAD

- Prepare Pesto dressing and set aside. In a 4 to 5 qt pan, cook tortellini in 3 quarts boiling water just until tender to bite (4 to 6 min for fresh tortellini, 15 to 20 mins for dry); or cook according to package directions. Drain, rinse with cold water; and drain well again. In a large bowl, lightly mix the tortellini, Pesto Dressing, bell pepper strips, and shrimp. Cover mixture and refrigerate for at least 1 hour or up 8 hours. Pesto Dressing In a blender or food processor, combine 1 cup lightly packed fresh basil leaves (or 3/4 cup fresh parsley leaves and 2 TB dry basil); 1 large clove garlic coarsely chopped; 1/2 cup grated Parmesan cheese; 2-1/2 TB red wine vinegar; and 1/2 cup olive oil. Whir until pureed.

Steps:
- Mix the first six (onion, celery, shrimp, chives, pesto, mayonnaise) ingredients together in a small bowl.
- Peel and halve the avocados. Carefully remove the seed.
- Slice a thin layer off the bottom of each avocado so it will sit flat.
- Using a medium scoop, fill the four avocado halves evenly with shrimp mixture.
- Squeeze lime juice over each salad.
- Top with chopped tomato.
- Serve and enjoy!
