SHRIMP PASTA WITH ASIAGO CHEESE AND WHITE WINE SAUCE

Number Of Ingredients 15

16 ounces Pasta, bowtie, penne, or linguine,
8 ounces Mushrooms, portabella or assorted mushrooms
1 Sweet onion, coarsely chopped
8 ounces Grape tomatoes, halved
3 cloves Garlic, chopped
2 pounds Shrimp
1 teaspoon Roasted chicken base
3/4 cup Pasta water (reserved from cooked pasta)
3 tablespoons Fresh basil, chopped
1 tablespoon Fresh oregano, chopped
1/4 cup Fresh parsley, chopped
1/4 teaspoon Crushed red pepper
1/3 cup White cooking wine
1 cup Asiago cheese
2 tablespoons Butter

Steps:

  • Cook pasta and reserve 3/4 cups of pasta water for sauce
  • Sauté mushrooms in butter in a large deep skillet.
  • Push mushrooms to the side when almost done then add garlic and coarsely chopped sweet onion and cook until onion is translucent.
  • Add pasta water, white wine, chicken base, shrimp and grape tomatoes to skillet and cook until shrimp turns pink.
  • Add fresh parsley, basil, oregano, crushed red pepper and 3/4 cup of asiago cheese to skillet and cook for 2 more minutes.
  • Serve white wine, shrimp sauce over cooked pasta and garnish with more asiago cheese.

4 tablespoons butter, divided
4 cloves garlic, minced, divided
4 cups chicken or vegetable broth
2 cups water
1 lb. linguine
1 1/2 lb. jumbo raw shrimp
3/4 cup dry white wine
1/4 cup minced fresh sage
1 cup heavy whipping cream
1/2 cup grated Parmesan cheese
1/2 cup chopped fresh parsley
1 lemon
salt and pepper to taste

Steps:

  • Heat two tablespoons butter in a large pot over high heat. Add half of the garlic and sauté, stirring constantly, for one minute. Add the broth and water; bring to a boil. Add the pasta and boil until the pasta is cooked. Lower the heat and simmer until most of the liquid is absorbed. Do not drain - there should be some liquid left in the pan to help coat the noodles.
  • While the pasta is cooking, heat two tablespoons butter in a large skillet over medium heat. Add the shrimp and saute for 1-2 minutes on each side until the shrimp are almost cooked through.
  • Add the garlic, sage, and white wine to the shrimp pan. Let the shrimp cook for another 3-5 minutes or until most of the wine has evaporated and the shrimp are lightly browned on the outside. Remove from heat and set aside. Cover so the shrimp stays warm.
  • Add the shrimp, whipping cream, Parmesan, and parsley to the cooked pasta. Toss everything together and finish with a squeeze of lemon juice, salt, and pepper.

1 (16 ounce) package angel hair pasta
½ cup butter
4 cloves garlic, minced
½ cup minced onion
1 tablespoon chopped fresh parsley
1 teaspoon salt
½ teaspoon black pepper
1 dash Worcestershire sauce
¼ cup lemon juice
1 teaspoon dry white wine
1 pound peeled and deveined medium shrimp
½ cup Asiago cheese, diced
1 large avocado - peeled, pitted and diced

Steps:

  • Bring a large pot of lightly salted water to a boil over high heat. Add the angel hair pasta, and cook until al dente, 2 to 3 minutes; drain.
  • Melt the butter in a large skillet over medium heat. Stir in the garlic, onion, parsley, salt, pepper, Worcestershire sauce, lemon juice, and white wine. Once the mixture begins to bubble, increase the heat to medium-high, and stir in the shrimp. Cook and stir until the shrimp turn pink, and are no longer transparent in the center, about 5 minutes.
  • Serve the scampi over a bed of angel hair pasta, and sprinkle with Asiago cheese and avocado to serve.

This is a sauce that is really good on seafood pasta, but it's great on just plain pasta as a side also. I use it on pasta with roasted shrimp with some grated parmesan and it's a favorite at my house!

1/4 cup olive oil
1 large shallot, minced
1/2 tablespoon garlic, minced
1/2 teaspoon crushed red pepper flakes
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup white wine
5 tablespoons butter

Steps:

  • In large saucepan, heat olive oil over medium. Add shallots and sauté until tender, about 3 or 4 minutes.
  • Add garlic and red pepper flakes and sauté until slightly golden, about 1 minute.
  • Add salt, pepper, wine and butter and whisk for about 2 minutes.
  • Toss with cooked pasta.
