3 1/2 tablespoons extra virgin olive oil
6 garlic cloves, peeled
1 cup coarsely chopped green onion
1 cup coarsely chopped fresh flat-leaf parsley
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon crushed red pepper flakes
2 1/4 lbs large shrimp, peeled and deveined
1/3 cup dry white wine
6 ounces sourdough bread (torn into six 1 oz. pieces) or 6 ounces French bread (torn into six 1 oz. pieces)

Steps:

  • Add olive oil and garlic to a food processor; process until the garlic is finely chopped, scraping sides of bowl occasionally.
  • Add in green onions and parsley; pulse until minced.
  • Transfer garlic mixture into a large bowl; add in 1/2 teaspoon salt, black pepper, red pepper, and shrimp; toss well to coat.
  • Transfer shrimp mixture to a shallow roasting pan; add in the wine.
  • Bake in a 500° oven for 7 minutes or until shrimp are done, stirring once.
  • Serve with bread.

12 medium shrimp, frozen defrosted
Bamboo skewers, soaked in water for at least 30 minutes
1/4 cup plus 1 tablespoon roasted garlic salad dressing, divided
Salt and pepper
1/3 cup mayonnaise
1 teaspoon minced garlic
1 teaspoon paprika

Steps:

  • Preheat grill to medium.
  • Pat shrimp dry with paper towels, and place on bamboo skewers.
  • Brush shrimp with 1/4 cup dressing, sprinkle with a generous amount of salt and pepper and place on the grill.
  • Grill 2 to 3 minutes per side, or until shrimp are opaque and cooked through. Baste once, if desired.
  • In a small bowl, combine mayonnaise with remaining 1 tablespoon of roasted garlic dressing, 1 teaspoon minced garlic, and 1 teaspoon paprika. Serve as a dip for the shrimp.

3 cloves garlic, chopped
1/2 medium onion, chopped
1/4 cup fresh parsley
1/4 teaspoon thyme
1/4 teaspoon salt
1/4 teaspoon white pepper
1 ounce cognac
1 ounce sweet sherry
1 1/2 lbs large shrimp, shelled
1/4 cup parmesan cheese, freshly grated
French bread

Steps:

  • In a food processor, blend all ingredients except shrimp, cheese and bread.
  • Melt butter mixture in a skillet, add shrimp and saute until shrimp are pink outside and opaque in the center.
  • Top with cheese and serve atop French bread slices.

2 teaspoons chopped fresh dill
1 tablespoon fresh lemon juice
1 cup mayonnaise
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Pulse herbs in a blender with lemon juice and 1/2 cup mayonnaise until puréed. Add remaining 1/2 cup mayonnaise, salt, and pepper and blend well.
  • Transfer to a bowl and chill, covered, at least 2 hours to allow flavors to blend.
