GARLIC BUTTER SHRIMP FETTUCCINE RECIPE
The scent of butter cooked with a garlicky taste is what you can expect from our special garlic butter shrimp fettuccine recipe.

Steps:
- In a large pan, melt together the olive oil and 2 tablespoons of butter over medium heat. Add the garlic and sauté for 30 to 60 seconds, until fragrant.
- Add the shrimp to the pan in a single layer. Cook for 1 to 2 minutes on one side, until just beginning to turn pink, then flip.
- Add the Holland House® White Cooking Wine and red pepper flakes. Bring to a simmer and cook for 2 to 3 minutes, or until the wine reduces by about half and the shrimp are cooked through.
- Add the lemon juice and remaining 2 tablespoons of butter and stir until the butter melts. Season with salt and pepper to taste. Fold in ¼ cup chopped parsley.
- Toss the shrimp and sauce with fettuccine until well coated. Garnish with the remaining tablespoon of chopped parsley. Serve immediately.

This recipe is a family favorite. Hint: Get easy peel shrimp and save yourself alot of work. Also smashing the whole cloves of garlic with the side of you knife or your palm makes peeling them a breeze and also cut the mincing time in half.

- 1. Cook pasta according to the box directions for al dente. Reserve 1/4 cup of the pasta water.
- 2. While the pasta cooks,in a large cold skillet add the butter, olive oil, shallot, garlic, capers and red pepper flake. turn burner on to medium low and cook about 5 minutes or until the shallots and garlic are soft. Increase heat to medium and add shrimp, cook until pink and opaque about 5 minutes. Salt and pepper to taste (I go light on the salt because the pasta water has alot of salt in it)
- 3. Toss in cooked pasta and reserved pasta water. Let cook an additional 3-5 minutes add parsley and serve immediately.
FETTUCCINE WITH GARLIC HERB BUTTER
This is wonderful! Try as much or as little of the fresh herbs to suit your tastes. Serve with freshly grated Parmesan cheese and some warm bread, if desired.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

- In a large pan, cook the pasta in boiling salted water according to pkg directions. I add about 1 tbl olive oil to my pasta water too.
- As soon as you put the pasta water on to boil, heat 3 tbl olive oil in a heavy saucepan over low heat. Gently saute the whole garlic cloves until each clove is just golden brown and easily pieced with a fork. Remove garlic cloves and on a cutting board mash cloves with a fork and mix with anchovy paste. Turn burner off.
- As soon your pasta water begins to boil and you've added the pasta, reheat the sauce pan of oil. Return mashed garlic/anchovy paste to the warm olive oil and simmer for a minute. Add basil and green onions, gently stir, making sure the mashed garlic is distributed and simmer for about 1-2 minutes. Add cream, Parmesan cheese, parsley and salt and pepper to taste. Add shrimp and simmer for less then a minute. Toss shrimp and sauce with drained pasta and serve.

I came across this recipe years ago in one of my mother's cooking magazines and it turned out very well. The flavour changes depending on the type of wine you use.

Steps:
- In large skillet, melt 1/4 cup butter; cook onion and garlic until tender.
- Add half of the parsley (or basil) and shrimp, cook for 1 minutes.
- Add tomatoes, wine, salt and pepper; bring to boil. Cook just until shrimp turn opaque and begin to curl.
- Remove from heat and reheat just before pasta is ready.
- Place cooked pasta over butter in warm serving dish; pour sauce over and toss until pasta is well coated and most of liquid has been absorbed.
- Garnish with fresh parsley.
