SEAFOOD PIZZA
This was created to mimic the wonderful seafood pizza we used to enjoy at Pizzeria Uno in Cincinnati Ohio. It's especially easy with a boboli crust but making your own crust may taste better. I recommend using the fake crab rather than canned, but fresh crab would be best. It's rich and delicious. I love to dip it in cocktail sauce. YUMMY!!

Steps:
- Saute garlic in olive oil for several minutes.
- Add shrimp and crabmeat, mixing well with garlic and olive oil.
- Add parsley.
- Sprinkle 1/2 cup mozzarella on pizza crust.
- Place crab/shrimp mixture on crust.
- Cover with remaining cheeses.
- Bake according to your pizza crust directions (typically, bake pizza until crust is golden brown and cheese is melted and bubbling, about 15 minutes).
- Cut and serve with cocktail sauce.

SHRIMP & CRAB ALFREDO PIZZA
I make these with flour tortilla crusts. They are easy to make and absolutely fabulous.

Steps:
- 1. Put tortillas on cookie sheets and bake at 350 for 5-10 min till they get crispy
- 2. Make Alfredo sauce: melt butter in saucepan add flour stir and cook for 3-4 min till it loses that raw flour smell. Add milk, then seasonings simmer, stirring constantly till thickened and bubbly. Add crab and cheese. Stir to combine. Spread 1/4 of sauce on each tortilla
- 3. In sauté pan, melt butter, add oil put in onion and sauté for about 4-5 min till translucent. Add mushrooms and garlic. Sauté another 2-3 min. Add Worcestershire sauce and stir to coat. Put 1/4 of mixture on each pizza.
- 4. In same pan melt butter and add oil. Add shrimp, garlic, lemon and seasonings. Sauté till shrimp is pink. Place 1/4 of shrimp on each pizza.
- 5. Top pizzas with cheese and cilantro. Bake at 350 for 10-12 min till cheese is melted. Serve hot. Can cut into pieces or serve whole.

- Preheat oven to 450°. In a small bowl, combine shrimp, water and lemon juice. Let stand 10 minutes., Meanwhile, in a large skillet, heat butter over medium-high heat. Add mushrooms, onion and pepper; cook and stir 4-5 minutes or until tender. Add garlic and salt; cook 1 minute longer., Drain shrimp, discarding liquid. Add shrimp and crab to pan; cook and stir 1-2 minutes longer or until shrimp turn pink., Place crust on an ungreased 12-in. pizza pan or baking sheet; spread with Alfredo sauce. I adapted this rich treat from a friend's seafood enchilada dish. The thick creamy cheese sauce is an ideal match for the scallops, shrimp and imitation crabmeat. Plus, it's special enough for guests and can be made in a hurry.

- Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat., In a large skillet, melt the remaining butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce. Remove from the heat., Spread remaining cheese sauce over the crust. Top with the seafood mixture; sprinkle with mozzarella cheese and paprika if desired. Bake for 13-16 minutes or until golden brown. Let stand for 5-10 minutes before cutting.

ZESTY SHRIMP ALFREDO PIZZA
I was amazed how easy it was to make a terrific Alfredo sauce, simply by blending two-parts Hidden Valley Original Ranch Dressing with one-part parmesan cheese and a dash of nutmeg! Presto! I suddenly had the ideal sauce for my Shrimp Alfredo pizza.

- NOTE: "Even the best pizza toppings are only as good as the crust. For best results, use a quality traditional fresh yeast deli dough such as Safeway Select, over the canned roll-out biscuit dough variety". (STEP 1): Remove pizza dough from refrigerator. Preheat oven to 425°F .
- In a saucepan over medium heat, heat 1/2 tablespoon olive oil. Saute shallots until softened, about 3 minutes. Add garlic and saute for two additional minutes. Transfer shallot and garlic mixture into a small bowl. Return saucepan to medium heat. Add remaining 1/2 tablespoon olive oil to saucepan until heated. Add shrimp and dried basil (plus a pinch of salt and pepper if desired). Saute, stirring, until shrimp barely turns pink (about 2/3 cooked). Remove saucepan from heat.
- In another small bowl for the Alfredo sauce, blend 1/2 cup Hidden Valley Original Ranch Dressing, 1/4 cup powdered parmesan cheese and 1/4 teaspoon ground nutmeg.
- Spray a 14" pizza pan with non-stick cooking spray. Stretch and spread dough to desired form into prepared pan. Spoon the Alfredo sauce evenly over the dough, within a 1" perimeter from edge; Add shallot and garlic mixture evenly over the sauce. Sprinkle the chopped spinach leaves, then mozzarella cheese. Arrange shrimp over cheese, finishing with basil ribbons and snipped chives.
- Bake for 13-15 minutes, or until crust is golden brown. Cut into slices and garnish if desired with a pinch of red pepper flakes. Serve and enjoy.
