1-1/2 pounds uncooked shrimp (31-40 per pound), peeled and deveined
1 teaspoon Montreal steak seasoning
4 bacon strips, chopped
1 shallot, finely chopped
1/3 cup cider vinegar
1 tablespoon olive oil
1 teaspoon Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1 package (10 ounces) fresh spinach
3/4 cup julienned roasted sweet red peppers
1/4 cup sliced almonds

Steps:

  • Sprinkle shrimp with steak seasoning. On 4 metal or soaked wooden skewers, thread shrimp. Grill, covered, over medium heat or broil 4 in. from heat until shrimp turn pink, 2-3 minutes on each side., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard all but 1 tablespoon drippings. Add shallot; cook and stir over medium heat until tender, 1-2 minutes. Stir in next 6 ingredients; bring to a boil. Remove from heat., In a large serving bowl, combine spinach and dressing; toss to coat. Layer with shrimp and pepper slices; top with cooked bacon and almonds.

3 pink grapefruit
3 tablespoons wine vinegar
2 teaspoons Dijon mustard
Salt and pepper
1/2 cup plus 1 tablespoon vegetable oil
1 1/2 pounds large shrimp, peeled and deveined
1 1/2 pounds spinach, stems trimmed and leaves washed well (about 3 1/2 quarts)
1/2 red onion, thinly sliced

Steps:

  • With a sharp knife, peel the grapefruit, removing all the bitter white pith. Slice about 3/8 inch thick.
  • In a large bowl, whisk together the vinegar, mustard, and 1/8 teaspoon each salt and pepper. Drizzle in 1/2 cup of the oil, whisking to combine.
  • Season the shrimp with 1/2 teaspoon salt and 1/8 teaspoon pepper. In a large nonstick skillet, heat the remaining tablespoon oil over medium heat. Add the shrimp, and cook, turning once, until pink, about 3 minutes per side.
  • Add the grapefruit, cooked shrimp, spinach, and onion to the vinaigrette in the large bowl. Toss well. Serve at once.

4 cups water
1 cup wild rice
1 red bell pepper
3 cups fresh spinach leaves, chopped
1 8-ounce can sliced water chestnuts, drained, diced
1/2 pound cooked medium shrimp
2 celery stalks, sliced
2/3 cup chopped green onions
2 tablespoons red wine vinegar
1/4 teaspoon dry mustard
1/2 cup olive oil
1/2 teaspoon dried basil
1/2 teaspoon dried tarragon

Steps:

  • Combine water and rice in heavy medium saucepan. Season lightly with salt and bring to boil. Reduce heat to low; cover and cook until rice is tender, about 40 minutes. Drain and cool.
  • Meanwhile, char red bell pepper over gas flame or under broiler until blackened on all sides. Place in paper bag and let stand 10 minutes. Peel, seed and chop bell pepper.
  • Combine wild rice, bell pepper, spinach, water chestnuts, shrimp, celery and green onions in large bowl.
  • Whisk vinegar and mustard in small bowl to blend. Gradually whisk in olive oil. Add basil and tarragon. Season dressing to taste with salt and pepper. Add dressing to salad and toss to coat. (Can be prepared up to 4 hours ahead. Cover and refrigerate.)

  • Bring orange juice to boil in small saucepan over medium-high heat and simmer until reduced to about 1 Tbsp., about 6 minutes. Meanwhile, place spinach in large bowl, and set aside.

8 cups fresh, washed baby spinach, dried really well
3 boiled eggs, sliced
4 pieces of cooked bacon, crumbled
1/2 red onion, sliced very thin
SHRIMP:
1 pound of fresh, peeled and deveined shrimp
1 tablespoon Old Bay seasoning
DRESSING:
3 tablespoons of bacon drippings
3 tablespoons red wine vinegar, you can substitute cider vinegar if needed
2 teaspoons sugar
1 tablespoon honey
1/3 teaspoon Dijon mustard
Salt and pepper to taste

Steps:

  • GRILL THE SHRIMP: Place grill pan on grill and set burners to high. Sprinkle shrimp with Old Bay seasoning and toss to coat. Place shrimp on grill pan. Grill shrimp 2-3 minutes per side. They will be firm and white when fully cooked-check often, being careful not to overcook. MAKE THE DRESSING: In a small bowl, mix vinegar, sugar, honey and mustard. Heat bacon drippings in sauce pan on low. When drippings are warm, slowly pour in the vinegar mixture. Whisk all ingredients together until mixed well. Keep whisking on low temp til the dressing is emulsified. PREPARE THE SALAD: Place spinach on large platter. Arrange the grilled shrimp,crumbled bacon, and onion on top of greens. Gently drizzle with warm dressing. Add egg slices. Toss gently to serve.

1/2 medium red onion, very thinly sliced (about 1 cup)
1/2 cup plus 1 tablespoon fresh lime juice (from about 8 limes)
8 ounces baby spinach
1 large mango (about 1 pound)
10 ounces large shrimp, peeled and deveined, tails intact
1 teaspoon coarse salt
Freshly ground pepper, to taste
1/8 teaspoon cayenne pepper, or to taste
1 tablespoon olive oil
1 tablespoon minced garlic
3 tablespoons coarsely chopped fresh cilantro leaves

Steps:

  • Combine onion and 1/4 cup plus 1 tablespoon lime juice. Cover, and let stand for at least 3 hours, stirring occasionally.
  • Place spinach in a large bowl. Peel mango. Cut along both sides of the pit to create two portions of mango. Slice each portion lengthwise into 1/8-inch-thick slices. Add to spinach.
  • Cut remaining mango from pit, and puree in a food processor or a blender with remaining 1/4 cup lime juice (you should have 1/2 cup puree).
  • Strain onion and add to spinach, reserving juice. Toss shrimp with reserved lime juice, salt, pepper, and cayenne.
  • Heat oil in a nonstick skillet over medium heat. Add garlic, and cook until soft, about 1 1/2 minutes. Add shrimp mixture, and cook until opaque, about 2 minutes. Add mango puree, toss, and heat through. Add cilantro. Remove from heat, and toss with spinach, onion, and sliced mango. Serve immediately.

1 (15 ounce) can mandarin oranges
1/4 cup dry white wine
2 tablespoons light soy sauce
3 tablespoons hoisin sauce
1 teaspoon ground ginger
1 large garlic clove, finely minced
1 lb shrimp, deveined and tails removed
1 (10 ounce) bag pre-washed spinach leaves
4 ounces sliced almonds
1 cup grape tomatoes
1 lb bacon
1 medium red bell pepper

Steps:

  • Drain and reserve the liquid from the oranges; set the oranges aside to chill in the fridge.
  • Combine the juice from the oranges, wine, soy sauce, hoisin sauce, ginger and garlic in a small dish; stir until well combined.
  • Place clean shrimp in a re-closeable storage bag; pour marinade over the shrimp and allow to marinade for at least an hour.
  • Partially freeze the bacon to allow for easier cutting.
  • Without separating the bacon pieces, cut the bacon lengthwise into 1/4 inch slices.
  • Turn the bacon and cut widthwise into 1/4 inch pieces.
  • Fry bacon bits until crispy; drain on paper towels and set aside.
  • Drain the bacon grease from the pan, allowing a thin coating to remain.
  • Toast the almonds on a high heat in the pan used to fry the bacon, stirring constantly to avoid burning them until they are a gold brown and toasted; set aside.
  • Clean the bell pepper and cut it in half; remove the seeds and membranes; set aside for grilling.
  • Drain the shrimp from the marinade and grill over high heat until seared and shrimp is cooked through.
  • Place the pepper halves on a cooler part of the grill to become crisp tender and warm; turning them often to avoid burning.
  • In the meantime, place the spinach on serving plates and top with the tomatoes, bacon bits, almonds and reserved mandarin oranges.
  • Remove the pepper to a cutting board and slice it into thin slices; place them on the salad.
  • Place hot shrimp on top of the salad.
  • Drizzle with your favorite bacon vinaigrette salad dressing.

3 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
1 tablespoon fresh lemon juice
Kosher salt and freshly ground black pepper
1/2 pound peeled, deveined medium shrimp
1/2 cup sliced almonds
8 ounces dried radiatore
4 cups loosely packed baby spinach
1/4 cup chopped fresh flat-leaf parsley

  • Heat 1/3 cup of the oil in a medium skillet over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 3 minutes. 2 6-ounce packages baby spinach leaves
2 cups chopped seeded peeled tomatoes
Bacon-Balsamic Vinaigrette

Steps:

  • Mix 6 tablespoons oil, fennel seeds and crushed red pepper in small bowl. Thread shrimp onto skewers. Place on rimmed baking sheet. Pour oil mixture over; turn to coat. Sprinkle with salt and pepper. Cover and refrigerate 30 minutes.
  • Prepare barbecue (medium-high heat). Brush fennel wedges with 2 tablespoons oil. Sprinkle with salt and pepper. Grill fennel until golden, about 3 minutes per side. Transfer to large bowl. Grill shrimp until opaque in center, about 2 minutes per side. Transfer shrimp to plate; tent with foil.
  • Add spinach and tomatoes to fennel. Toss with enough vinaigrette to coat. Divide salad among plates. Sprinkle with bacon reserved from vinaigrette. Remove shrimp from skewers and arrange around salad. Garnish with chopped fennel fronds.

1 tbsp vegetable oil
¼ cup rice wine vinegar or apple cider vinegar
Juice from one lime
6 cups fresh baby spinach, cleaned and dried
½ cantaloupe, cut into bite size pieces
2 avocados, sliced

Steps:

  • Heat outdoor grill or indoor grill pan to medium high heat.
  • Remove the spring rolls from the package and brush liberally with oil. Place directly on the grill or grill pan. Close the grill lid and cook for 5 to 6 minutes per side.
  • In a small mixing bowl, whisk together the packet of enclosed Sweet Thai Chili dipping sauce, vinegar and lime juice.
  • Set aside.
  • Assemble the salad by tossing the spinach with the cantaloupe and avocados.
  • Drizzle with as much of the dressing mixture as you like and serve alongside the grilled spring rolls. Have remaining dressing on the side for dipping spring rolls in, if desired.

1 tsp. ground ginger
1/2 tsp. garlic powder
14 lightly salted woven wheat crackers
cooking spray
3 Tbsp. rice wine vinegar
2 Tbsp. low sodium soy sauce
2 Tbsp. water
2 Tbsp. green onion slices
1 Tbsp. sesame oil
1 pkg. (10 oz.) fresh spinach, cleaned, stems removed
1 lb. large shrimp, cleaned, cooked
1 cup bean sprouts
1 cup snow peas
1 small red pepper, cut into strips (about 1 cup)

Steps:

  • Mix ginger and garlic powder; set aside. Cut each cracker into 6 pieces; place on large piece of foil. Spray crackers evenly with cooking spray. Immediately sprinkle with half of the ginger mixture; toss to coat. Set aside.
  • Beat vinegar, soy sauce, water, onions, oil and remaining ginger mixture with wire whisk until well blended.

1/2 pound baby spinach (7 cups)
3 slices of bacon, cut crosswise into 1/2-inch strips
1 pound shelled and deveined large shrimp
Kosher salt and freshly ground pepper
One 15-ounce can cannellini beans, drained and rinsed
1/4 cup plus 1 tablespoon extra-virgin olive oil
1 small shallot, minced
1 tablespoon Dijon mustard
1/4 cup red wine vinegar

Steps:

  • Spread the spinach on a large platter. In a large skillet, cook the bacon over moderate heat until crisp, about 4 minutes. Drain off all but 2 tablespoons of the bacon fat. Season the shrimp with salt and pepper and cook it with the bacon over moderately high heat until just white throughout, about 4 minutes. Add the beans, season with salt and pepper and toss until heated through, about 1 minute. Scrape the shrimp and beans onto the bed of spinach. In the same skillet, heat 1 tablespoon of the olive oil. Add the shallot and cook over moderately low heat until softened, about 1 minute. Add the mustard to the skillet and whisk in the red wine vinegar, then whisk in the remaining 1/4 cup of olive oil. Season the dressing with salt and pepper, pour it over the salad and serve.

Shrimp 2 Ways: Soy Sauce-Grilled Shrimp with Spinach Salad and New-Style Scampi image

1/4 cup soy sauce
2 limes, juiced
2 teaspoons honey
2-inch piece fresh ginger, finely grated
4 cloves garlic, finely chopped
1/4 cup canola oil, plus more for brushing
12 ounces large (21-24) shrimp, peeled, tail-on, and deveined
1/2 recipe base
Kosher salt and freshly ground black pepper
1/4 cup rice vinegar
2 tablespoons soy sauce
2 tablespoons canola oil
1 tablespoon toasted sesame oil
2 green onions, thinly sliced
1/4 cup chopped fresh cilantro leaves
8 ounces baby spinach
1/2 cup chopped salted peanuts
1 stick unsalted butter, softened
1/4 teaspoon crushed red pepper flakes
1/2 recipe base
2 limes
Canola oil, for brushing
12 ounces large (21-24) shrimp, peeled, tail-on, and deveined
Kosher salt and freshly ground black pepper
1/4 cup chopped cilantro leaves

Steps:

  • For Soy-Sauce Grilled Shrimp:
  • Whisk the soy, lime juice, honey, ginger, garlic and canola oil in a medium bowl until combined. Transfer half to a food processor fitted with the blade attachment and set aside. Add the shrimp to the marinade in the bowl and toss to coat. Cover and refrigerate for 15 minutes.
  • While the shrimp marinates, whisk together the rice vinegar, soy sauce, canola and sesame oils, scallion and cilantro in a small bowl.
  • Heat the grill to high. Remove the shrimp from the marinade, brush with canola oil, and season with salt and pepper. Skewer the shrimp and grill for 2 to 3 minutes per side, until just cooked through.
  • Toss the spinach with some of the vinaigrette and mound in the center of a serving platter. Arrange shrimp around spinach and spoon over more of the dressing. Scatter the peanuts over the salad and shrimp.
  • For the New-Style Scampi:
  • Add the butter and red pepper flakes to the marinade in the food processor, and pulse until combined. Scrape the mixture into a small saucepan and put on the grill just to melt the butter.
  • Trim the ends from the limes and halve. Brush with canola oil, season with salt and pepper, and grill, flesh side down, until marked and slightly softened, 4 to 5 minutes.
  • Skewer the remaining shrimp, brush with canola oil, and season with salt and pepper. Grill for 2 to 3 minutes per side, until just cooked through. Slide the shrimp from the skewers into a shallow bowl, pour over some butter sauce, and toss to coat. Scatter the cilantro over the top, and arrange the grilled limes around the shrimp.

3/4 lb peeled cooked shrimp, cut into bite-size pieces
4 cups baby spinach leaves (about 6 ounces)
1 cup cantaloupe, cubes (cut into 1/2 inch cubes)
1/4 cup orange juice
1 small shallot, minced
1 1/2 tablespoons canola oil
1 tablespoon balsamic vinegar
1 teaspoon powdered sugar
1 teaspoon poppy seed
1/8 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon red pepper flakes (optional)

Steps:

  • Combine shrimp, spinach and cantaloupe in large salad bowl.
  • Combine orange juice, shallot, oil, vinegar, sugar, poppy seeds, salt, pepper and red pepper flakes, if desired, in small bowl. Stir well. Pour over salad just before serving. Toss gently, but thoroughly.

2 lbs. medium to large shrimp, cleaned and deveined
3 Tbsp. olive oil or clarified butter
1/4 lb sliced baby bella mushrooms
1 tsp. minced garlic
1/3 c. pignoli nuts, roasted
2 Tbsp. soy sauce
1 1/2 Tbsp. dark brown sugar
Salt and Pepper to taste
1 package baby leaf Spinach
1 cup seedless red grapes, halved
1/2 c. Parmesano Reggiano, shredded
Balsamic Dijon Dressing--
Shake together in dressing carafe:
2/3 c. Extra Virgin Olive Oil
1/3 c. White Balsamic Vinegar
2 Tbsp. Dijon Mustard
1 1/2 tsp. white sugar

Steps:

  • Heat oil on medium high heat; add mushrooms, and sautee' for 2 minutes. Add shrimp, and sautee' until opaque; add pignolis, and garlic. Sautee 30 seconds, then add soy sauce, brown sugar, salt and pepper. Stir just long enough to incorporate. Spoon 2/3 c. of mixture over fresh baby spinach leaves. Top with red seedless grapes and parmesan. Over all, drizzle 2 tbsp. Balsamic Dijon dressing. Serve immediately, and enjoy!

Grilled shrimp, about a pound.
Washed baby spinach, cucumbers, cherry tomatoes, scallons, blue cheese and walnuts.
Balsamic vinager and extra virgin olive oil, and the juice of a lime.

Steps:

  • Prepair the grilled shrimp as directed above. set aside when done. Toss the baby spinach with cucembers (thinly sliced), cherry tomatoes and scallons(also thinly sliced). Wisk the balsamec vinager with the juice of a lime, and then slowly wisk in the olive oil, season with kosher salt and freshly ground pepper. top with the grilled shrimp, and then top off the salad with crumbled blue cheese and sprinkle with chopped walnuts.
