8 tablespoons unsalted butter
1 -1 1/2 tablespoon Tabasco sauce, to taste
1 lb large shrimp, cleaned and deveined but tails left on, rinsed and patted dry (about 24 shrimp)
coarse kosher salt, to taste
4 large celery ribs, trimmed and cut into sticks, for serving
4 large carrots, peeled and cut into sticks, for serving
6 scallions, trimmed for serving
3/4 cup mayonnaise
3/4 cup sour cream
1 tablespoon fresh lemon juice
1 -2 teaspoon Worcestershire sauce, to taste
1 dash Tabasco sauce
2 tablespoons finely minced shallots
2 tablespoons fresh flat-leaf parsley, chopped
fresh coarse ground black pepper, to taste
3/4 cup danish blue cheese (or other mild blue cheese, crumbled)

Steps:

  • Combine the butter and the Tabasco sauce in a small saucepan over medium-low heat, and cook until the butter has melted. Stir, and let cool slightly. Then divide the butter mixture between two large mixing bowls.
  • Place the shrimp in one bowl and coat them well with the butter mixture. Cover the bowl loosely and let the shrimp marinate at room temperature for 20 minutes.
  • Meanwhile, make the blue cheese dipping sauce. Combine all sauce ingredients, except the cheese, in a bowl. Gently fold in the blue cheese, being careful not to break it up too much (or it will turn the sauce an unappetizing gray). Adjust the seasonings to taste. Refrigerate, covered, for as long as overnight.
  • To cook the shrimp, heat a nonstick skillet over medium heat. Using tongs, lift the shrimp from the marinade and cook them, in batches, in the skillet until they are pink and opaque, 2 minutes per side. As they are cooked, transfer the shrimp to the second bowl and toss them well in that batch of butter-Tabasco mixture.
  • Again using tongs, transfer the cooked shrimp to a serving bowl. Sprinkle them with coarse salt. Serve immediately, along with the celery, carrots, and scallions, and a bowl of Blue Cheese Sauce for dipping.

1/2 cup low-fat sour cream
1/2 cup low-fat mayonnaise
1/4 cup low-fat milk
4 ounces blue cheese (about 1 cup)
1 tablespoon lemon juice (fresh)
1/2 teaspoon salt
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 1/2 lbs large shrimp, shelled, deveined and tails intact
1 tablespoon olive oil
1 tablespoon unsalted butter
2 teaspoons hot pepper sauce
1 tablespoon parsley, chopped

Steps:

  • In a bowl, combine first six ingredients to make blue cheese dip; cover and refrigerate.
  • In a shallow bowl, combine flour, salt and cayenne pepper.
  • Add shrimp, tossing to coat.
  • In a large skillet, heat oil, butter and hot sauce.
  • Add shrimp and cook, stirring constantly until lightly browned, about 3 to 4 minutes.
  • Sprinkle blue cheese dip with parsley; serve with shrimp.
  • Serve with carrot and celery sticks on side if desired.

This is an adapted recipe - adapted from a recipe that showed up in my email. It sounds like it would be very pretty on a buffet - bridal shower perhaps?

3 tablespoons butter
1/3 cup flour
1 1/4 cups milk
salt, to taste
black pepper, freshly ground, to taste
4 eggs
1/2 cup gouda cheese, grated (mature)
1/2 lb shrimp, cooked (either tiny pink or larger but finely chopped)
1 teaspoon lemon juice
1 pinch cayenne pepper
3 ounces cream cheese
1/2 cup Greek yogurt
1 tablespoon chives, minced
1 teaspoon orange zest, grated
1 lemon, paper thin slices

Steps:

  • To make the roulade base: Grease the 8 x 10 inch baking sheet and line with greaseproof paper.
  • Preheat the oven to 390°F.
  • Melt the butter in a small pan, stir in the flour and cook for a few minutes. Add the milk and continue stirring; bring to the boil and cook until the mixture thickens.
  • Season with salt and pepper.
  • Transfer to a large bowl and cool slightly.
  • Separate the eggs.
  • Beating thoroughly, add the yolks to the sauce one at a time, then add the cheese.
  • Whisk the egg whites until stiff and fold them into the sauce.
  • Transfer the mixture to the prepared baking sheet spreading it evenly.
  • Bake for 25 minutes or until just golden brown.
  • Turn the cooked roulade base onto a second piece of greaseproof paper, peel off the bottom piece. Cover with clean kitchen towel.
  • Make the filling while the base is baking:
  • Mix the shrimps with the lemon juice and chilli pepper.
  • Beat the cream cheese with the umer, snip the chives and add with the orange zest.
  • Fold in the shrimps and season to taste.
  • Spread the shrimp mixture over the still warm roulade base.
  • Using the greaseproof paper as an aid, roll lengthwise.
  • Transfer to a long serving platter and slice.
  • Garnish with lemon slices.

10 ounces dry fettuccine or 10 ounces pappardelle pasta
1 tablespoon olive oil
3/4 lb medium shrimp, peeled and deveined
2 garlic cloves, minced
1 tablespoon butter
1 tablespoon hot sauce, to taste (I prefer Chohula's)
1/2 teaspoon paprika
3 tablespoons chopped fresh chives or 3 tablespoons parsley
fresh chives (to garnish) or parsley (to garnish)
1/4 cup finely chopped onion
2 teaspoons olive oil
2 garlic cloves, minced (or more to taste)
1/2 teaspoon sugar
1 cup half-and-half
4 ounces crumbled blue cheese (about 1 cup)

Steps:

  • First, make the Bleu Cheese Sauce: Combine the onion, oil, garlic and sugar in a medium saucepan.
  • Cook, stirring, over medium heat until the onion is tender, 3 to 5 minutes.
  • Remove from the heat and stir in the blue cheese until nearly melted.
  • Now, cook the pasta according to package directions.
  • While the pasta cooks, prepare the shrimp.
  • Heat the oil in a wok or large frying pan over high heat.
  • Add the shrimp and cook, stirring occasionally, until nearly pink, about 1 1/2 minutes.
  • Stir in the garlic, butter, and hot sauce and cook until the shrimp is just opaque in the center, about1 1/2 minutes longer.
  • Remove from the heat and stir in the paprika; set aside.
  • Drain the pasta well and put it in a large bowl.
  • Stir in the warm blue cheese sauce.
  • Gently mix in the chopped chives or parsley.
  • Spoon the pasta onto individual plates.
  • Top with the shrimp and sauce.
  • Garnish as desired.

2 1/2 lbs unpeeled large raw shrimp
1/4 cup diced sweet onion
2 tablespoons olive oil
4 ounces cream cheese, softened
4 green onions, finely chopped
1 celery rib, finely chopped
1 cup crumbled blue cheese
1 cup mayonnaise
1/2 cup sour cream
2 tablespoons fresh parsley, chopped
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
assorted fresh vegetable
French baguette, slices

Steps:

  • Peel shrimp; devein, if desired.
  • Saute onion in hot oil in a skillet over medium-high heat 3 minutes or until onion is tender. Stir in shrimp and cookk, stirring occasionally, 3-4 minutes or just until shrimp turn pink. Transfer to a bowl, and let stand 15 minutes. Chop shrimp and return to bowl.

1 basic sponge roll for roulades (see recipe)
1/4 pound cooked shrimp, peeled and deveined
4 teaspoons cream cheese at room temperature
4 teaspoons blue cheese at room temperature
1 tablespoon finely chopped onion
1 tablespoon mayonnaise
1 tablespoon sour cream
2 teaspoons lemon juice
1 tablespoon finely chopped parsley

Steps:

  • Prepare the sponge roll and have it ready.
  • Chop the shrimp coarse-fine and set aside. There should be about half a cup or slightly more.
  • Combine the cream cheese, blue cheese, onion, mayonnaise, sour cream, lemon juice and parsley. Blend thoroughly and add the chopped shrimp.
  • Spread the shrimp mixture over the sponge roll and smooth it over. Roll the cake like a jellyroll, folding the small end over and over to make a roll about 10 inches long.
  • Using a knife with a serrated blade, carefully slice off the bulky ends of the roll. Cut the remaining roll into neat, one-half-inch slices. Serve lukewarm or cold.
