This is an authentic filling used for Mexican dishes such as: enchiladas, tostadas and tacos. You can easily double the recipe, as it freezes well. I always have some on hand in the freezer. Use this in place of plain shredded chicken; and it will kick an average Mexican recipe up a notch (IMHO). COOK'S NOTES: 1 whole frying chicken, giblets and excess fat removed, can be used instead of boneless chicken breasts.

4 boneless chicken breast halves
1/2 medium onion, sliced
2 garlic cloves, smashed
1 tablespoon salt
water
2 tablespoons butter
1 garlic clove, minced
1/2 medium onion, chopped
1 medium tomatoes, seeded and chopped
1/2 green bell pepper, chopped
1 teaspoon fresh coarse ground black pepper
1 teaspoon marjoram
1/4 cup cilantro, chopped (or to taste)
1 1/2 teaspoons ground cumin
2 tablespoons tomato sauce
1 1/2 teaspoons salt (to taste)
1/2 cup chicken broth (reserved)

Steps:

  • Place first four ingredients in a pot. Add just enough water to cover the chicken.
  • Bring to a slow boil, cover, lower heat to maintain a simmer and cook until done, about 20 - 25 minutes. If using a whole chicken; cook approximately 50 - 60 minutes.
  • Remove chicken from pot, let cool and shred. (I cool my chicken in the refrigerator to be safe) If using a whole chicken; remove meat from bones and shred. Reserve broth.
  • In a large pan, melt butter over low heat.
  • Add the remaining ingredients listed, except tomato sauce, salt, and broth.
  • Sauté until soft, about 10 minutes.
  • Stir in shredded chicken and briefly sauté.
  • Add tomato sauce and ½ cup of reserved broth.
  • Salt to taste.

¾ cup chopped onion
¾ cup chicken stock
½ cup green salsa (salsa verde)
⅓ cup chopped fresh cilantro
2 tablespoons pickled jalapeno pepper slices
5 teaspoons all-purpose flour

2 cloves garlic, minced
8 ounces shredded cooked chicken
¾ cup chopped tomato
1 medium avocado, mashed
3 tablespoons sour cream
8 (8 inch) corn tortillas
½ (8 ounce) package shredded Cheddar cheese

Steps:

  • Whisk onion, chicken stock, salsa, 1/3 cup cilantro, jalapeno slices, flour, cumin, and garlic together in a medium saucepan over medium heat; bring to a boil. Reduce heat and simmer for 4 minutes. Stir in chicken; cook until heated through, about 1 minute. Remove from heat and stir in tomato, avocado, and sour cream.
  • Place an oven rack in the lower third of the oven. Preheat the broiler.
  • Microwave tortillas until warmed, about 30 seconds.
  • Spoon 1/3 cup of the chicken mixture into the center of each tortilla and roll up. Arrange tortillas, seam-side down, in the bottom of a 9x12-inch glass casserole dish. Top with Cheddar cheese and sprinkle with remaining cilantro.
  • Broil in the preheated oven until properly melted and browned, about 3 minutes.

Simple Red Mole Enchiladas with Shredded Chicken image

1 cup Essential Sweet-and-Spicy Ancho Seasoning Paste
3 tablespoons vegetable oil or rich-tasting pork lard, plus a little more if needed
2 ounces (about 1/2 cup) whole almonds (with or without skins)
1 medium white onion, sliced 1/8 inch thick
1/4 cup raisins
5 ounces (1 small round or 2 to 3 plum) ripe tomatoes
A scant 1/2 teaspoon cinnamon, preferably freshly ground Mexican canela
1/4 cup (about 1 1/2 ounces) roughly chopped Mexican chocolate
2 slices firm white bread (or 1/2 Mexican bolillo), toasted
6 cups Chicken Broth
Salt, about 2 1/2 teaspoons, depending on saltiness of the broth
Sugar, about 1 tablespoon
18 corn tortillas (plus a few extra, in case some break)
A spoonful or two of sesame seeds, for garnish
3 cups cooked, coarsely shredded chicken

Steps:

  • From Ancho seasoning to mole: In a medium-size (4-quart) pot (preferably a Dutch oven or Mexican cazuela), heat 1 1/2 tablespoons of the oil or lard over medium. Add the almonds and cook, stirring regularly, until lightly toasted, about 3 minutes. Using a slotted spoon, remove the almonds to a blender or food processor. Add half of the onion to the pan and cook, stirring frequently, until richly browned, about 10 minutes. Use the slotted spoon to scoop the onions in with the almonds, leaving behind as much oil as possible. (If needed, add a little more oil or lard to the pan, let heat, then continue.) Add the raisins, stir for a minute as they puff, then use the slotted spoon to scoop them in with the almonds.
  • Roast the tomatoes on a baking sheet 4 inches below a very hot broiler until blackened on one side, about 6 minutes, then flip them over and roast the other side. Cool, peel and add to the almond mixture in the blender, along with the cinnamon, chocolate and bread. Add 1 cup of the broth and blend to a smooth puree, scraping and stirring every few seconds.Return the pot to medium-high heat and, if necessary, add a little more oil or lard to coat the bottom lightly. When very hot, add the Ancho mixture and cook, stirring almost constantly, until darker and very thick, about 5 minutes. Add the pureed almond mixture and cook, stirring constantly for another few minutes, until very thick once again. Stir in the remaining 4 1/3 cups of the broth, partially cover and simmer, stirring occasionally, over medium-low for 45 minutes. Taste and season with salt and sugar. (If you have never made mole before, season it until it's slightly sweet--the sugar balances the strong flavors.)
  • Warming the tortillas: Set up a steamer (with this many tortillas, you'll need 2 vegetable steamers set up in saucepans or a big Chinese steamer--either choice with 1/2-inch of water under the steamer basket); heat to a boil. Wrap the tortillas in 2 stacks in heavy kitchen towels, lay in the steamer, and cover tightly. Boil 1 minute, turn off the heat and let stand without opening the steamer for 15 minutes.
  • Finishing the enchiladas: Turn on the oven to the lowest setting and warm 6 to 9 plates in it. Toast the sesame seeds in a small skillet, stirring frequently, over medium heat until golden, 2 to 3 minutes. In a medium-size saucepan, combine the chicken with 1 1/2 cups of the mole and warm over medium heat. Bring the remaining mole to a simmer.
  • When you're ready to serve, quickly make the enchiladas by scooping 2 generous tablespoons of chicken onto a tortilla, rolling it up and placing it on a warm dinner plate. Continue making enchiladas, arranging 2 or 3 per plate, then douse them liberally with the hot mole. Strew with the remaining sliced onion and sesame seeds.

8 ounces sour cream
1 (10 1/2 ounce) can cream of mushroom soup or 1 (10 1/2 ounce) can cream of chicken soup

1 cup cheddar cheese (shredded, for filling mixture)
1 cup cheddar cheese (shredded, for topping)
12 corn tortillas

Steps:

  • Preheat oven to 375 degrees.
  • Cook chicken breasts. I usually microwave them covered in parchment paper until cooked through.
  • Shred chicken with a fork.
  • In a large mixing bowl, combine shredded chicken, sour cream, soup, green chiles, onion, salt, and ONE cup shredded cheddar cheese. Set aside.
  • In a frying pan heat vegetable oil at about medium-high heat til hot.
  • Then soften each corn tortilla in oil until slightly firm but still soft (about 5-7 seconds on each side). Allow to cool on paper towels.
  • Spoon filling into tortillas, roll them up and place them in an 9" x 13" baking pan.
  • Spread remaining filling mixture across the top of the enchiladas.
  • Sprinkle remaining 1 cup cheddar cheese over the top of the enchiladas. If you like cheese feel free to add as much cheese topping as you like.
  • Bake uncovered for 30 minutes or until cheese appears melted.

1 cup sour cream
1 cup green salsa (such as Frontera® Tomatillo)
2 teaspoons olive oil
1 small onion, chopped
2 cloves garlic, minced
3 cups shredded cooked chicken breasts
1 ½ cups shredded Mexican cheese blend, divided
1 (4 ounce) can chopped green chile peppers
8 (8 inch) flour tortillas

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Mix sour cream and salsa together in a bowl.
  • Heat oil in a skillet over medium-high heat. Saute onion and garlic in the hot oil until soft, 5 to 7 minutes. Stir in cooked chicken, 1 cup of the sour cream mixture, 1/2 of the Mexican cheese, and chile peppers.

CROCK POT SHREDDED CHICKEN ENCHILADAS

This is a mixture of a bunch of different recipes that I have found that works best for me. The chicken comes out flavorful and the enchiladas are crispy and cheesy. What more can you ask for? Most of the time listed is the slow cooking time so there really isnt much work to do. Just throw it all in the crockpot and cook. I don't really measure, I kind of do things by eye, so the ingredients listed below are approximate.You will find that the chicken pretty much shreds itself! I love them, enjoy!

4 boneless skinless chicken breasts (uncooked)
1/2 cup of chopped onion
1/2 cup of chopped green pepper
1/2 cup of chopped red pepper
1 (14 1/2 ounce) can stewed tomatoes
1/4 cup tomato sauce
1/4 cup chicken broth
2 garlic cloves, chopped
1 teaspoon marjoram
1 teaspoon cumin
1 teaspoon chili
1/2 chopped mushroom (personal preference, I throw these in for the last for the last part of cooking)
salt and pepper (to taste)
6 -8 tortillas
canola oil
1 (8 ounce) can refried beans
1 1/2 cups shredded cheddar cheese, divided (or a mixture or Jack and cheddar)
canola oil cooking spray
sour cream, for topping

Steps:

  • Place chicken in crock pot and add all crock pot ingredients.( I make sure the stewed tomatoes and veggies are on top of the chicken.).
  • Cook on low for 8 hours.
  • Turn and stir about halfway through.
  • Add mushrooms (if using)
  • Mix and stir chicken with a fork,breaking it apart ( It will shred on its own this way).
  • Chicken mixture will be saucy thats ok thats where the flavor is! I take out what I am using for the tortillas with a slotted spoon. I always have chicken leftover and I freeze the rest.
  • For Enchiladas-.
  • Set oven to 350 degrees.
  • Spray 9 by 13 inch pan with canola spray (I line my pan with foil first).
  • Heat canola oil in a pan and fry tortillas 10 -15 seconds on each side.
  • Spread one tbls of refried beans on one half of the tortilla.
  • Sprinkle with cheese and top with shredded chicken mixture ( about 2 tablespoons, whatever you prefer.).
  • Roll or fold over.
  • Place in oven and cook for 10 minutes.
  • Sprinkle remaining cheese and cook for 5 more minutes.
  • Top with sour cream and serve with rice. ( we use red beans and rice).

For the Beans:
1 package (16 oz.) dry Mayocoba beans (also known as Peruvian beans or Canary beans)
8 cups water
1 garlic clove, grated
2 tsp. salt
For the Chicken:
5 boneless, skinless chicken breasts
2 medium onions, preferably white or yellow
1 green bell pepper
2 tbsp. minced green chili of your choice (like jalapeno or pasilla)
6 garlic cloves
1/2 tsp. cumin
2 tbsp. olive oil
1/2 cup light sour cream
1/2 cup shredded Monterrey Jack cheese
Salt and pepper to taste
For the enchilada sauce:
2 tbsp. butter
2 tbsp. flour
3 cups chicken stock
1 cup light sour cream
1/2 cup shredded monterrey jack cheese
For the assembly:
8 flour tortillas
cooking spray or melted butter
1 cup shredded Monterrey jack cheese
1/2 cup fresh cilantro to garnish.

Steps:

  • For the Beans: The first thing to do, is wash the beans to remove any twigs or debris. Next transfer the beans to a pressure cooker with the water and salt. Close the lid and turn up the heat to high. Once the steam begins to come out of the pressure cooker, lower the heat to medium. Let the beans cook for 30 minutes before turning off the heat. I hate waiting for the pressure to release, so what I do is run cold water over the pressure cooker in the sink. Remove the lid and check to make sure the beans are tender. If not put the lid back on and cook for another 5-10 minutes, but they should be done within 30 minutes. Using a slotted spoon, transfer the beans to a food processor bowl. Add about 3 tbsp. of the bean water from the pot, a little salt and grate the garlic clove into the bowl. Blend the beans until you have a smooth consistency. Set aside until you're ready to assemble the enchiladas. To make this dish a little easier, you could just mash the beans with a potato masher, but that will yield a more chunky consistency. If you don't have a food processor, you could soak the beans overnight and then just boil them in a pot with the same amount of water for about one hour. For the Chicken: First boil the chicken breasts in a large pot of water.seasoned liberally with salt. Once the chicken breasts are cooked through, transfer them to a cutting board and allow them to cool. While the chicken is cooking, begin mincing your green pepper, garlic and green chilies. Dice the onion finely and add the olive oil into a large non-stick skillet. Turn the heat up to medium high and add in the chilies, onions and garlic to the pan. Saute for about 6 minutes, stirring occasionally. While the veggies cook, take two forks and begin shredding the chicken breasts. Transfer the chicken to the skillet and season with the cumin, salt and pepper. Allow the chicken and veggies to cook together for about 3-4 minutes before turning off the heat. In a separate mixing bowl, combine the sour cream and cheese and add it into the skillet, making sure to combine everything really well. For the enchilada sauce: First add the butter to a non-stick sauce pan. Next add in the flour and make a roux. To that, add the chicken stock and whisk vigorously, breaking any clumps of flour that may have formed. Next add in the sour cream and the cheese and blend well. Season with a little salt. Set the sauce aside until assembling the enchiladas. For the assembly: First pre-heat the oven to 400ºF. Next, take a scoop of the beans and spread if evenly over one side of the tortilla. Next add in a scoop of the chicken mixture and roll the tortillas. Spray a 9×13 baking dish with a little cooking spray and place the enchiladas, seam down in the pan. Repeat this step until you have filled the entire pan with the enchiladas. Spray the tops of the enchiladas with cooking spray, or brush with melted butter. Place the baking dish in the oven and bake for 10 minutes or until the tortillas are slightly crisp. Next, remove the tray from the oven and pour the sauce over the top of the enchiladas. Sprinkle the cheese over the top and place the pan back in the oven for another 10 minutes or until the cheese is golden and bubbly. Garnish with some freshly chopped cilantro and serve.

1 medium onion , chopped medium (about 1 cup)
3 medium garlic cloves , minced or pressed through garlic press (about 1 tablespoon)
1 1/2 teaspoon(s) ground cumin
1 1/2 cup(s) low-sodium chicken broth
1 pound(s) boneless, skinless chicken breasts (2 to 3 breasts), trimmed of excess fat
1 1/2 pound(s) tomatillos (16 to 20 medium), husks and stems removed, rinsed well and dried (see note)
3 medium poblano chiles , halved lengthwise, stemmed, and seeded (see note)
1 to 2 1/2 teaspoon(s) teaspoons sugar
- salt and ground black pepper to taste
1/2 cup(s) fresh cilantro leaves, coarsely chopped
8 ounce(s) pepper jack cheese or monterey jack cheese, grated (2 cups)
12-18 - corn tortillas (6-inch)
GARNISH
- scallions , sliced thin
- thinly sliced radishes
- sour cream
- lime wedges
- fresh salsa (see note)

Steps:

  • Note: Halve large tomatillos (more than 2 inches in diameter) and place them skin-side up for broiling in step 2 to ensure even cooking and charring. You can substitute three 11-ounce cans of tomatillos, drained and rinsed, for the fresh ones in this recipe if necessary. If you can't find poblanos, substitute 4 large jalapeño chiles (with seeds and ribs removed). To increase the spiciness of the sauce, reserve some of the chiles' ribs and seeds and add them to the food processor in step 4. For fresh salsa, chopped fresh tomatoes, chopped sweet onion, chopped ancho/poblano/pasilla/jalapeno/serrano chilies (your preference or a combination of several), chopped fresh cilantro, dash of garlic powder, chili powder, ground cumin, seasoned salt, and a squeeze of fresh lime juice. Mix and adjust seasonings to your taste.
  • Adjust oven racks to middle and highest positions and heat broiler. Heat 2 teaspoons oil in medium saucepan over medium heat until shimmering; add onion and cook, stirring frequently, until golden, 6 to 8 minutes. Add 2 teaspoons garlic and cumin; cook, stirring frequently, until fragrant, about 30 seconds. Decrease heat to low and stir in broth. Add chicken, cover, and simmer until instant-read thermometer inserted into thickest part of chicken registers 160 degrees, 15 to 20 minutes, flipping chicken halfway through cooking. Transfer chicken to large bowl; place in refrigerator to cool, about 20 minutes. Remove 1/4 to 1/2 cup liquid from saucepan and set aside; discard remaining liquid.
  • Meanwhile, toss tomatillos and poblanos with remaining 2 teaspoons oil; arrange on rimmed baking sheet lined with foil, with poblanos skin-side up. Broil until vegetables blacken and start to soften, 5 to 10 minutes, rotating pan halfway through cooking. Cool 10 minutes, then remove skin from poblanos (leave tomatillo skins intact). Transfer tomatillos and chiles to food processor. Decrease oven temperature to 350 degrees. Discard foil from baking sheet and set baking sheet aside for warming tortillas.
  • Add 1 teaspoon sugar, 1 teaspoon salt, remaining teaspoon garlic, and half the reserved cooking liquid to food processor; process until sauce is somewhat chunky, about eight 1-second pulses. Taste sauce; season with salt and pepper and adjust tartness by stirring in remaining sugar, 1/2 teaspoon at a time. Add more of the reserved liquid if desired. Set sauce aside (you should have about 3 cups).
  • When chicken is cool, pull into shreds using hands or 2 forks, then chop into small bite-sized pieces. Combine chicken with cilantro and 1 1/2 cups cheese; season with salt.
  • Place tortillas on 2 baking sheets. Spray both sides of tortillas lightly with cooking spray. Bake until tortillas are soft and pliable, 2 to 4 minutes. Remove tortilla pans and increase oven temperature to 450 degrees (Alternate method: spray 6 tortillas at a time on each side with cooking spray and stack on a small microwaveable plate, cover with damp paper towel and microwave for 30-60 seconds until soft and pliable, repeat as the tortillas are used so they stay pliable enough to roll easily.)
  • Smear bottom of 13- by 9-inch baking dish with 3/4 cup tomatillo sauce. Place warm tortillas on cutting board or countertop and spread approx 1/3 cup filling down center of each tortilla. Roll each tortilla tightly and place in baking dish, seam-side down.
  • Pour remaining tomatillo sauce over top of enchiladas. Use back of spoon to spread sauce so that it coats top of each tortilla. Sprinkle with remaining 1/2 cup cheese and cover baking dish with foil.
  • Bake enchiladas on middle rack until heated through and cheese is melted, 15 to 20 minutes. Uncover, sprinkle with scallions, and serve immediately, passing radishes,sour cream and fresh salsa separately.

2 chicken breasts (bone in skin on)
1 chicken bouillon cube
4 roma tomatoes (chopped)
1/4 white onion (chopped)
1 jalapeno (minced, or a serrano if you like it spicy)
2 garlic cloves (minced)
1 tablespoon oil

Steps:

  • Place the chicken breasts and bouillon cube in a sauce pan. Cover with water and bring to a boil. Simmer the chicken for 45 minutes to an hour until tender enough to shred.
  • Pull the meat out of the sauce pan and set aside to cool.
  • Heat the oil in a saute pan, add the onions, jalapenos, and garlic. Saute for 5 minutes on medium heat or until onions are soft and translucent.
  • Add in the tomatoes and cook until mushy about 10 minutes.
  • Shred the chicken and add it to the tomato mixture. Stir and continue to cook until the chicken is warm.
  • Salt and pepper to taste and stuff the chicken in corntortillas for enchilads.
  • Cook the enchiladas and serve.

1/2 cup and 1 tbsp fresh cilantro, roughly chopped

Steps:

  • Cook and shred the chicken. I cooked mine in the slow cooker with the taco seasoning package in 28 ounces of chicken stock. The chicken just peeled apart. I cooked it on low for about 3-4 hours.
  • Preheat oven to 425 deg F.
  • Transfer the shredded chicken to a large bowl. Add half the enchilada sauce, 1/2 cup of the taco shredded cheese and the 1/2 cup of cilantro to the shredded chicken. Stir to combine.
  • Spray a 9x13 pan with cooking spray and spread a very thin layer of enchilada sauce on the bottom.
  • Line up the enchiladas in the 9x13 pan, seam side down.
  • Put 2 T. of enchilada sauce in each tortilla and spread to the edges. Spoon about 1/3 cup of the chicken mixture along the center of the tortilla. Gently, but firmly, roll the tortilla around the filling and place into the baking dish, seam-side down. Repeat with remaining tortillas.
  • Lightly spray the exposed tortillas with cooking spray (or brush lightly with olive oil). This will help the tortillas turn golden in the oven and will also help keep them from cracking. Place baking dish in the oven, uncovered, for 8-10 minutes or until the tortillas begin to turn golden.
  • Reduce the oven temperature to 400 degrees. Remove the baking dish from the oven. Pour the remaining sauce over the enchiladas and sprinkle remaining cheese over the sauce. Sprinkle with 1 tablespoons fresh cilantro. Lightly cover baking dish with aluminum foil and place into the oven for 20 minutes. Carefully remove foil after 20 minutes and bake, uncovered, for an additional 5-10 minutes or until the cheese is golden.
  • Remove from the oven and let stand 5-10 minutes prior to serving. Feel free to add a dollop (or two!) of sour cream, sliced black olives, green onion, and/or some more chopped cilantro for a garnish if you'd like.

2 cloves garlic, minced
1 can (1 1/2 cups) enchilada sauce (I use Mild)
kosher salt
ground black pepper
2 boneless, skinless chicken breasts
1 cup shredded cheddar cheese, divided
1 cup shredded Monterrey jack cheese, divided
1/2 cup plus 1 tbsp. fresh cilantro, roughly chopped, divided
12 6-inch corn tortillas
cooking spray

Steps:

  • Preheat oven to 425 degrees. Add the minced garlic to the enchilada sauce in a deep skillet and heat to boiling. Generously sprinkle kosher salt and ground black pepper over the chicken breasts and then nestle the chicken breasts into the sauce. Reduce the heat to low, cover and cook until the chicken is cooked through, about 15-20 minutes. Remove the chicken from the sauce, set aside and let both the chicken and the sauce cool. Using two forks, shred the chicken breasts by holding one fork steady and slowly scraping the other fork, prongs faced backwards, away from the other fork (see picture above). Transfer the shredded chicken to a large bowl. Add half the enchilada sauce, 1/2 cup each of the Monterrey jack and cheddar cheeses and the 1/2 cup of cilantro to the shredded chicken. Stir to combine. Wrap the corn tortillas in a damp cloth or paper towel and microwave on high for 20-30 seconds until pliable and warm. Using cooking spray (if desired), oil a 9-inch x 13-inch baking dish. Spoon about 1/3 cup of the chicken mixture along the center of the tortilla.
