SHREDDED BEEF FOR FRENCH DIPS (CROCK POT)
This is sooo good and easy. The first day we have French Dip sandwiches on crusty rolls, dipped in the broth. We then use the left over meat for hash or wrapped in flour tortillas. The left over broth gets saved in the freezer for recipes calling for beef broth. This makes a wonderful base recipe to make any type of beef soup. I have used this recipe for chicken also and it turns out delicious.

Steps:
- Place roast in crock pot with water to cover.
- Add bouillon, salt, and garlic powder.
- Place the bay leaves, peppercorns, oregano, and rosemary in a coffee filter and secure tightly with a rubber band or cooking twine. Add this to the pot.
- Cook on low for 8-9 hours. Remove coffee filter and discard. Remove meat and shred.

SLOW COOKED FRENCH DIP

- Special equipment: stoneware slow cooker
- Cook's Note: If you do not have a stoneware slow cooker that doubles as both a saute pan and Dutch oven, saute everything in a pan, then place into the slow cooker to cook.
- Sprinkle the beef with salt and pepper. Heat the oil in the sleeve to the slow cooker on the stove over medium-high heat. Add the beef and sear until brown on all sides. Add the onions, garlic, bay leaf, Worcestershire sauce, tomato paste, Thai hot sauce and broth. Place the sleeve in the slow cooker and turn the slow cooker to its lowest setting. Cover and cook on low for 4 hours, until the meat begins to fall apart with the pull of a fork.
- Remove the meat from the slow cooker and slice the beef into 1/4- inch slices or shred it, depending on your preference. Ladle off the fat from the top of the jus and discard. Reserve the jus from the pot. Slather both sides of the French bread with the cheese and top with some of the beef and the onions from the pot. Serve with a side bowl of the jus.
SHREDDED FRENCH-DIP SANDWICHES
This makes some of the best hot sandwiches. Delicious, deeply flavored beef with rich aujus for dipping. Put it together in the morning and come home to a great meal! We like it with a green salad and some chips on the side. I'm not sure where this came from- maybe the food network or some magazine. The left-overs(if there are any) freeze well. Thaw, thicken the aujus and add any remaining meat and serve over rice or noodles.

- Cut roast in half, place pieces into crockpot.
- Combine canned soups with bouillon granules.
- DO NOT DILUTE SOUPS!
- Pour over meat.
- Cover, cook on low 8 hours.
- Remove meat from crockpot,shred with forks.
- Skim fat from aujus in crockpot.
- Return meat to crockpot,to rewarm.
- Pile meat on rolls.
- Serve juice as dipping sauce on the side.

- In a large skillet, saute onions in butter until tender. Transfer to a 5-qt. slow cooker. Cut roast in half; place over onions., In a large bowl, combine the water, soy sauce, soup mix, browning sauce if desired and garlic; pour over roast. Cover and cook on low until meat is tender, 7-9 hours., Remove roast with a slotted spoon and let stand for 15 minutes. Thinly slice meat across the grain. Place on roll bottoms; sprinkle with Swiss cheese. Place on an ungreased baking sheet., Broil 3-4 in. from the heat until cheese is melted, about 1 minute. Replace tops. Skim fat from cooking juices; strain and serve as a dipping sauce if desired.
