1 ½ cups all-purpose flour
½ cup confectioners' sugar
¼ teaspoon vanilla extract
½ cup cornstarch

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium mixing bowl, cream together butter, confectioners' sugar, and vanilla until smooth with electric mixer. Stir in flour and cornstarch. Pop dough into your cookie press, and away you go! Press cookies out onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, or until the peaks are golden.

20 pecan shortbread cookies, processed into crumbs (I'd say probably a good 2 cups of crumbs)
5 tablespoons melted butter

Steps:

  • Preheat oven to 350.
  • Process cookies into crumbs in a food prcessor or crush in a heavy plastic bag with a rolling pin.
  • Add melted butter and mix until combined.
  • Press into bottom and sides of a nine-inch pie dish.
  • Bake for 10 minutes; it will feel soft, but will firm up as it cools.
  • Cool completely before filling with your favorite filling.

2/3 cup confectioner's sugar
2 teaspoons vanilla extract
2 1/4 cups flour (1/4 set aside)
1/8 teaspoon salt

Steps:

  • Preheat oven to 325°F In a medium mixing bowl, cream butter, sugar and vanilla. Add 2 cups flour and mix until dough is smooth. If dough feels sticky add additional 1/4 cup flour as needed.Dough should be soft but not sticky.
  • Spray cookie mold lightly with vegetable pan spray.
  • Flour mold, shake out excess. Firmly press dough into mold, making sure dough is even.
  • Prick surface with fork and bake in mold 30-35 minutes or until lightly browned.
  • Cool in mold 15 minutes.
  • Loosen edges of shortbread with tip of knife and flip mold over onto cooling rack. Makes 4 cookies.
  • Note:For Cookies Press dough in mold and bake flowing recipe directions. For best results, bake in mold. For easier handling, place mold on a cookie sheet before baking. If desired, to make more than one cookie at a time, you may release dough from mold and bake directly on cookie sheet. To unmold after cooling, run knife blade on the edge of mold and release.
  • For Candy: Freeze mold at least 20 minutes before molding candy. Melt Chocolate or confectionery coating as directed on package. Fill mold cavity to top; freeze approximately 10 minutes to set and release.
  • For Rolled fondant: It's easy to create a fondant "plaque" to add dimension to any type of cake. Press fondant paste lightly into cavity, then release.
  • Cool mold completely before washing. To clean hand wash in warm soapy water; rinse thoroughly.

2 cups raspberries
3/4 cup granulated sugar
1/2 cup lemon juice
2 tablespoons cornstarch
1/2 cup white chocolate chips or chopped white chocolate
1/2 cup mascarpone
1/4 cup sifted confectioners' sugar
2 sticks (1 cup) unsalted butter, at room temperature
1 teaspoon vanilla extract
1 1/4 cups confectioners' sugar
1 3/4 cups all-purpose flour
1/2 teaspoon kosher salt
1 tablespoon whole milk

Steps:

  • For the raspberry filling: Combine the raspberries, granulated sugar and lemon juice in a medium saucepan and heat over medium heat, crushing the fruit and stirring occasionally. Bring the mixture to a boil, whisk in the cornstarch and lower to a simmer. Simmer until slightly thickened, about 5 minutes. Remove from the heat and allow to cool to room temperature. Refrigerate until ready to use.
  • For the cream filling: Add the white chocolate to a bowl fitted over a pot of simmering water to make a double boiler. Heat until the chocolate is fully melted, then remove the bowl and allow to cool slightly, 5 to 10 minutes.
  • Once cool, whisk in the mascarpone and confectioners' sugar and continue to whisk until all lumps of sugar are dissolved and the mixture is smooth and velvety.
  • For the cookie dough: Preheat the oven to 350 degrees F.
  • Add the butter to the bowl of a stand mixer fitted with a paddle attachment and beat until light and fluffy, 3 to 4 minutes. Add the confectioners' sugar and vanilla to the bowl and continue to beat, scraping down the sides of the bowl as needed, until well incorporated, 60 to 90 seconds.
  • Whisk together the flour and salt in a medium bowl. On low speed, add the flour mixture to the butter mixture and beat to combine. Add the milk and mix just a bit more until everything is incorporated. Transfer the dough to a piping bag fitted with a medium star tip.
  • Line 2 baking sheets with parchment and pipe 1 1/2-inch circles of dough, about 12 on each sheet. Chill in the refrigerator for about 8 minutes.
  • Bake until light golden brown on the sides, 12 to 15 minutes. Allow to cool on the baking sheets.
  • Once all cookies have been baked and cooled, spoon the raspberry filling onto the bottom of half of the cookies. Scoop the cream filling into a piping bag fitted with a small round tip and pipe it on top of the raspberry filling. Use the remaining cookies as tops to create sandwich cookie.

3 cups confectioners' sugar
1 tablespoon pure vanilla extract
7 1/2 cups all-purpose flour
1 1/2 cups finely ground pistachios
1 teaspoon kosher salt
3/4 cup dried cherries, chopped
Royal Icing, recipe follows
3 1/2 cups (1 pound) confectioners' sugar
2 tablespoons meringue powder
6 tablespoons water
Red and green food coloring

Steps:

  • Beat together the butter and confectioners' sugar in the bowl of a stand mixer until combined. Add the vanilla and mix until just combined.
  • In a separate large bowl, whisk together the flour, ground pistachios and salt. Gradually add the flour mixture to the butter and sugar, beating just to combine. Add the dried cherries and mix just until combined; the mixture will look crumbly. Turn the dough out onto a clean work surface and knead few times with your hands until the dough comes together. Divide into 3 pieces and form each piece into a disk; wrap with plastic wrap and chill for at least 1 hour.
  • When ready to bake, preheat the oven to 325 degrees F. Line 4 baking sheets with parchment paper.
  • Roll the dough, one disc at a time, to 1/3-to-1/2-inch thick. Cut 2 rounds with a 6-inch cutter. Cut the center from each with a 4-inch cutter to create rings. Then cut 2 rounds with a 5 1/2-inch cutter and use a 3 1/2-inch cutter to create rings. Cut 2 rounds with a 5-inch cutter and use a 3-inch cutter to create rings. Cut 2 rounds with a 4 1/2-inch cutter and use a 2 1/2-inch cutter to make rings. Cut 2 rounds with a 4-inch cutter and use a 2-inch cutter to make rings.   • 1. Heat oven to 375°F. In medium bowl, mix all crust ingredients until crumbly. press firmly on bottom and side of ungreased 9-inch glass pie plate. Bake about 12 minutes or until light golden brown. 2. In large bowl, beat sugar, 3 tablespoons flour and both packages of cream cheese with electric mixer on low speed until smooth; reserve 1/2 cup. Add all remaining filling ingredients except milk to cream cheese mixture. Beat on medium speed, scraping bowl constantly, until smooth. Pour into crust. 3. In small bowl, mix reserved 1/2 cup cream cheese mixture and the milk. Spoon over pumpkin mixture. Cut through cream cheese and pumpkin mixtures with knife in S-shaped curves in one continuous motion. Turn pie plate one-fourth turn and repeat. Cover edge of crust with 2- to 3-inch strip of foil to prevent excessive browning. 4. Bake 35 to 40 minutes or until knife inserted in center comes out clean, removing foil for last 15 minutes of baking. Cool 30 minutes. Cover loosely and refrigerate at least 4 hours before serving. Got this recipe with my Rycraft Cookie Stamp purchase. A cookie stamp is a small (2-inch diameter) imprinted clay stamp. When pressed into an unbaked shortbread cookie, a delicate image will appear. Yield for these cookies is approximate. Have not made them yet.

Turtle Shortbread Cookies (Cookie Exchange Quantity) image

Chocolate, caramel and nuts create the classic turtle flavors that are anything but slow in leaving a serving tray.

1 1/2 cups butter or stick margarine, softened
1/2 cup sugar
1 teaspoon almond extract
4 cups Gold Medal™ all-purpose flour
1/2 teaspoon salt
24 caramels
1 bag (6 oz) semisweet chocolate chips (1 cup)
2 teaspoons shortening
1 cup chopped pecans
6 dozen pecan halves

Steps:

  • Heat oven to 350°F. In large bowl, mix butter, sugar and almond extract. Stir in flour and salt. (If dough is crumbly, mix in 1 to 2 tablespoons additional softened butter or stick margarine.)
  • Divide dough into 12 equal parts. Roll each part into 1/4-inch thick circle. (If dough is sticky, chill about 15 minutes.) Cut each circle into 6 wedges. Place wedges 1 inch apart on ungreased cookie sheet. Bake 8 to 10 minutes or until set. Immediately remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • Meanwhile, in 1-quart saucepan, heat caramels over medium heat about 10 minutes, stirring frequently, until melted. In small microwavable bowl, microwave chocolate chips and shortening uncovered on High 1 to 3 minutes, stirring halfway through heating time, until melted and thin enough to drizzle.
  • Dip 2 straight edges of each cookie into melted caramel, then into chopped pecans. (If caramel thickens, add up to 1 teaspoon water and heat over low heat, stirring constantly, until caramel softens.)
  • Place a dot of melted chocolate on top of each cookie; place pecan half on chocolate. Drizzle remaining chocolate on tops of cookies.

I love shortbread cookies and adding coconut takes them over the top. This cookie is not overly sweet. Dipping them in chocolate makes 'em extra yummy.

1 1/2 c coconut
1 1/2 c butter, soft
1 c sugar
1 1/2 tsp sea salt
1 Tbsp vanilla
3 c all purpose flour

Steps:

  • 1. In a skillet, add coconut and cook over medium heat. Tossing or stirring often until coconut is lightly browned. (It will burn fast so be careful) Set aside to cool.
  • 2. In a mixing bowl cream together butter and sugar until smooth and almost fluffy, 1 minute. Blend in salt and vanilla. Slowly add flour on low speed, until just incorporated and dough begins to form. Add coconut. Form dough into 2 logs. Wrap in plastic wrap and refrigerate for at least 1 hr. Preheat oven to 350. Line cookie sheets with parchment. Slice log into ¼" thick cookies. Place cookies on pans at least 1" apart and bake until golden and starting to crisp, 13-15 minutes. Allow to cool on cookie sheet 5 minutes then remove to racks to cool completely. Will crisp more as they cool.
  • 3. If desired, cookies may be dipped or drizzled with chocolate or white chocolate and sprinkled with toasted coconut , chopped nuts or a desired sprinkle. This cookie can be rolled out and cut into shapes as well. Just make 2 disks instead of logs before refrigerating.

3 tablespoons white sugar
½ cup butter
⅓ cup strawberry jam
⅛ teaspoon ground dried chipotle pepper
⅓ cup lemon curd

Steps:

  • Combine flour and sugar in a medium bowl. Cut in butter with a pastry blender until mixture resembles fine crumbs and starts to cling. Form the mixture into a ball and knead until smooth.
  • Preheat an air fryer to 350 degrees F (190 degrees C).
  • Roll dough to 1/4-inch thickness on a lightly floured surface. Cut into 1/2-inch-wide "fries" about 3- to 4-inch long. Sprinkle with additional sugar.
  • Arrange fries in a single layer in the air fryer basket. Cook until lightly browned, 3 to 4 minutes. Let cool in the basket until firm enough to transfer to a wire rack to cool completely. Repeat with remaining dough.
  • To make strawberry "ketchup," press jam through a fine mesh sieve using the back of a spoon. Stir in ground chipotle. Whip the lemon curd to make it a dippable consistency for the "mustard."
  • Serve sugar cookie fries with the strawberry ketchup and lemon curd mustard.

1 cup powdered sugar
3 1/2 cups flour
1/2 cup cornstarch
1/4 cup sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 325 degrees.

This is a recipe that I found in TOH and plan on making for our Easter dessert. I changed the crust to one I had tried earlier this year using shortbread cookies, really made the cheesecake extra special. Time doesn't include the time for chilling.

1/2 cup unsalted butter, at room temperature
1/4 cup granulated sugar
1/2 cup all-purpose flour
1/2 cup finely ground shortbread cookie
4 (8 ounce) packages cream cheese, softened
1 1/4 cups sugar
2 tablespoons all-purpose flour
2 tablespoons fresh lemon juice
2 tablespoons heavy whipping cream
2 teaspoons vanilla extract
4 eggs, lightly beaten
10 ounces white baking chocolate, melted and cooled
2 teaspoons lemon peel, grated

Steps:

  • Place a 9-in. springform pan on a double thickness of heavy-duty foil (about 18 inches square). Securely wrap foil around pan; set aside.
  • Make crust:.
  • Using an electric mixer, cream the butter and sugar together on medium high speed for 3-4 minutes.
  • Add flour and ground cookies to the mixture and blend for 3-4 seconds until fully incorporated.
  • Press the mixture evenly into the bottom of a 9-inch springform pan.
  • Bake the crust at 350° F for 20-25 minutes, or until golden brown.
  • Allow the crust to cool completely.
  • In a large bowl, beat the cream cheese, sugar, flour, lemon juice, cream and vanilla until well blended. Add eggs; beat on low speed just until combined. Stir in white chocolate and peel. Pour into crust.
  • Place pan in a large baking pan; add 1 inches of hot water to larger pan. Bake at 325° for 65-85 minutes or until center is just set and top appears dull.
  • Remove pan from water bath. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight.
