SHOO FLY CAKE
A variation on the old Pennsylvania Dutch favorite, Shoo Fly Pie. Not as sweet or gooey as Shoo Fly Pie, this cake is much better the day after you bake it. Works really well as cupcakes. I made mini cupcakes for Christmas, always a hit.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9 x 13 inch pan.
- Dissolve soda in boiling water. Set aside.
- Mix together flour, brown sugar, salt, and vegetable oil to form a crumb-like mixture. Reserve 1 cup of the crumbs. Mix the remaining crumbs with the water and soda mixture. Pour batter into the prepared pan. Sprinkle the reserved crumbs on top.
- Bake for 45 minutes, or until done.

Steps:
- Mix all dry ingredients with margarine.
- Take 1 cup of mixture and reserve for topping and set aside.
- Dissolve baking soda in hot water.
- Add molasses, water and dissolved baking soda.
- Mix well.
- Pour into a greased 9x13 pan.
- Sprinkle with reserved topping mixture.
- Bake at 350 degrees for 45 minutes or until knife inserted comes out clean.
SHOO-FLY CAKE (MOLASSES CRUMB)
Very much the same as Pennsylvania Dutch shoo-fly pie, just without the crust and wet bottom. Very moist! This can also be made into cupcakes, bake for about 30 minutes. Yummy for breakfast!

- 1. Mix together flour, brown sugar, and Crisco to make crumbs. Reserve 1cup crumbs for topping.
- 2. Mix together remaining crumbs with remaining ingredients to make batter. Batter will be runny.
- 3. Pour batter into greased and floured 9 x 13 pan. Top with reserved crumbs
- 4. Bake at 350 for 40-45 minutes or until cake tests done.
PENNSYLVANIA DUTCH SHOO-FLY CAKE
This is the Pennsylvania Dutch cake version of their Shoo-Fly pie that is so popular in Lancaster County.

Steps:
- Mix together (like a crumbly pie crust) flour, shortening, sugars in a large bowl, reserving 1/2 cup of the crumbs for top of cake.
- In another bowl, mix: molasses, baking soda and hot water.
- Stir until mixed and some of the foam disappears.
- Add to the crumb mixture and stir until blended.
- Put in a 9 X 13 inch loaf pan that has been greased and floured.
- Put the 1/2 cup crumb mixture on top and bake for 1 hour at 350 deg.

SHOO FLY CAKE
This is a great alternative for the original Pennsylvania Dutch Shoo Fly Pie!

Steps:
- 1. Mix first four ingredients with a pastry blender as you would pie dough. Remove 3/4 cup of crumbs and set aside for crumb topping.
- 2. Dissolve baking soda in 1/4 cup boiling water.
- 3. Mix leftover crumbs, molasses, soda mixture and remaining 2 cups of boiling water together.
- 4. Pour mixture into greased 10 x 13 x 2" pan.
- 5. Sprinkle reserved crumbs on top of mixture.
- 6. Bake @ 350 degrees for 35-40 minutes
SHOO FLY CAKE
Steps:
- Preheat oven to 350 degrees Mix flour, sugar, salt, and shortening. Set aside 1 cup for topping Mix water, molasses, and baking soda; then add to dry ingredients. Pour into pan and sprinkle with topping. Bake 25-30 minutes

- Heat oven to 350 degrees F.
- Grease one 10" X 4" tube pan.
- Mix the brown sugar, nuts and cinnamon, set aside.
- Beat butter, sugar, eggs, vanilla, and molasses with an electric mixer for 2 minutes on medium.
- Combine flour, baking powder, soda and salt.
- Add the flour mixture and the sour cream alternately to the egg mixture until combined.
- Spread 1/3 of batter in pan.
