This Vegan Cheese Sauce is easy to make and goes great with mac and cheese and makes a great nacho cheese sauce.

Number Of Ingredients 11

2 Cups of Raw Cashews
1 Lemon, Squeezed
1 ¾ Cup of Water or as needed
1 TSP Sea Salt or Himalayan Salt
½ Cup of Nutritional Yeast
1 TSP Chili Powder
2 Garlic Cloves
1 TBSP of Dijon Mustard
¼ TSP of Red Pepper Flakes
1 TSP Black Pepper
1 TSP Turmeric

Steps:

  • In a high-speed blender or food processor, add in the cashews, lemon juice, salt, nutritional yeast, chili powder, garlic cloves, Dijon mustard, red pepper flakes, black pepper, turmeric, and water. Blend until smooth and creamy. You can adjust the ingredients to your taste.
  • You can warm up the cheese sauce by blending it on the soup option on a Vitamix or add it to a sauce pan on low heat. Stir to keep it from sticking. Serve it as a dip, on top your favorite noodles for mac and cheese or as a nacho cheese sauce.

I've tried so many vegan cheese recipes and they all taste, well, not like cheese. So I gave up and made my own. You can mix the sauce into macaroni, drizzle over fries, or use it in any other deserving dish.

2 small russet potatoes, peeled and cubed
½ cup carrots, chopped
⅓ large yellow bell pepper, chopped
¼ large yellow onion, peeled and chopped
5 tablespoons prepared garlic hummus
⅓ cup coconut milk, or more as needed
½ tablespoon nutritional yeast
1 ½ teaspoons lemon juice
1 teaspoon garlic powder
black pepper to taste
2 pinches salt, or to taste

Steps:

  • Fill a pot with water and bring to a boil. Add potatoes, carrots, bell pepper, and onion and cook until potatoes are tender, 15 to 20 minutes. Cook 1 more minute. Drain.
  • Combine potatoes, carrots, bell pepper, onion, hummus, coconut milk, nutritional yeast, lemon juice, garlic powder, black pepper, and salt in a blender or food processor; blend until smooth and creamy.
