MEXICAN JALEPENO SQUARES

Steps:
- 1. Grease a 9x9 glass dish. Spread chilles on the bottom.
- 2. Mix beaten eggs and cheese and spread on the chilles
- 3. Bake for 30-45 minutes or until golden brown. Cool slightly and allow to set.
- 4. Cut into squares. Can be served warm or cold.
JALAPENO CHEESE SQUARES
This dish is listed under Brunch recipes in the Edible Heirlooms Cookbook, but it could easily be served as an appetizer. Haven't tried it yet, but it sounds easy and tasty.

Steps:
- Preheat oven to 350 degrees. Line the bottom of a 9-inch square baking pan, lightly coated with cooking spray, with a single layer of pickled jalapeno slices. Beat eggs in a medium bowl. Add both cheeses and mix well. Spread egg mixture over the top of the jalapeno slices. Bake about one hour. Cool 5-10 minutes before slicing into 2-inch squares.
CHEESE SQUARES APPETIZER
This is a wonderful baked appetizer blending the tastes of Cheddar cheese and jalapeno peppers. The amount of jalapenos used can easily be adjusted to personal taste, although baking does take a lot of the burn out of the peppers. I've made this several times and I never have leftovers. My husband wishes I would make these for him every day. I don't recommend doubling the recipe; make multiple batches instead.

- Preheat oven to 350 degrees F (175 degrees C).
- Place the eggs into a food processor, and process until light and frothy. Add Cheddar cheese, onion, and jalapeno peppers, and process until smooth. Pour into an ungreased 8x8 inch baking pan.
- Bake in the preheated oven until set, 25 to 30 minutes. Cool for 5 minutes; cut into squares to serve.

Steps:
- Mix cheeses and jalapeno and put into a 9x13 greased pan.
- Mix the egg, milk, and flour and pour on top.
- Bake at 350 for 35 minutes.
- You can use more or less jalapeno according to your taste or you can even use green chilis if you prefer.

Steps:
- 1. Combine all shredded cheeses in a large bowl. Place half of the cheeses in a sprayed 13x9 pan. Layer jalapenos over cheese mixture and then top with remaining cheeses. Beat flour, eggs and evaporated milk til smooth. Spread over cheese mixture. Bake for 40-45 minutes. Let cool for about 20 minutes before cutting.
- 2. For variations I have added minced onion,crumbled bacon or ham.
