This recipe was designed with children in mind, for parties, potlucks and picnics. You can add other veggies to the salad that your child/ren enjoys. This is a great side dish for a themed "Under the Sea" or pool party. Pasta shells, crunch veggies and cheese cut into star or fish shapes create a side dish loved by backyard sailors.

6 ounces medium pasta shells (2 cups) or 6 ounces wagon wheel macaroni (2 cups)
2 small carrots, thinly bias-sliced
1 medium cucumber, seeded and shredded
1 medium yellow sweet pepper, cut in very small triangles
1/3-1/2 cup Italian salad dressing
4 ounces American cheese or 4 ounces child's favorite cheese

Steps:

  • Cook pasta according to package directions.
  • Drain and rinse with cold water; drain again.
  • Combine pasta, carrots, cucumber and pepper.
  • Add dressing and toss to coat.
  • Chill for 1 to 4 hours.
  • Use a small star or fish shaped cutter to cut cheese slices into small stars (or cube).
  • Toss in salad before serving.

I love tuna salad. This one is a little different from my old stand-by in that it uses dill pickles instead of sweet pickles. The combination of ingredients tasted good to me.

8 ounces small shell pasta, cooked as directed on package and drained
1 cup cubed cheddar cheese
1 (6 ounce) can albacore tuna in water, drained
1/4 cup diced dill pickle
1/2 cup diced yellow onion
1 cup mayonnaise
3/4 teaspoon salt
1/4 teaspoon fresh ground pepper
chopped lettuce
2 tomatoes, cut into wedges

Steps:

  • In a large mixing bowl, add the first 5 ingredients; stir to mix.
  • Add in mayo, salt, and pepper; stir to combine.
  • Cover and refrigerate until well chilled.
  • Line individual salad plates with lettuce; mound tuna salad on top; garnish with tomato wedges.

8 ounces uncooked small pasta shells
2 cups frozen peas
1 cup thinly sliced celery
1/2 cup chopped sweet red pepper
1/4 cup chopped onion
2/3 cup fat-free mayonnaise
1 tablespoon white balsamic vinegar
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions, adding the peas during the last 2-3 minutes of cooking time. Drain and rinse in cold water. , In a large bowl, combine the pasta, peas, celery, red pepper and onion. In a small bowl, whisk the mayonnaise, vinegar, basil, mustard, salt and pepper. Pour over pasta mixture; toss to coat. Cover and refrigerate for at least 1 hour before serving.

This fun pasta salad will delight kids of all ages. Easy to fix, easy to eat. Cooking time is mostly time in the refrigerator for the ingredients to "mingle."

1 cup medium pasta shell
6 ounces shredded cheddar cheese
6 ounces pepperoni
6 ounces deli honey-roasted ham
6 ounces plain yogurt
4 ounces ranch dressing
2 tablespoons apple cider vinegar
1 tablespoon honey
salt and pepper

Steps:

  • Cook pasta according to package directions.
  • Rinse pasta and drain well; allow to cool (cool well as you don't want the cheddar to melt when you add it to the pasta).
  • In a large bowl, add the cooled pasta.
  • Slice honey ham into thin strips; add to the bowl.
  • Add pepperoni and shredded cheddar cheese.
  • In a smaller bowl, combine yogurt, ranch dressing, cider vinegar and honey. Mix.
  • Add salt and pepper, if you like.
  • Pour dressing over pasta and mix.
  • Cover salad with plastic wrap and refrigerate at least 2 hours.
  • Serve.
