MUSHROOM SAUSAGE STUFFING image

Yield 6 Cups

Number Of Ingredients 8

4 onions thinly sliced
2-4 tbsp olive oil
4 c coursely chopped shiitake and oyster mushrooms
Salt and freshly ground pepper
1/2 c dry white wine
2 tbsp butter
2 lbs spicy turkey sausage meat removed from casings
1 bunch fresh tarragon

Steps:

  • 1. Sauger onions in olive oil over med- low heat until caramelized about 30 mins 2 turn heat up to med- high and add the mushrooms. Sauger until crisp on the edges about 10-15 mins. Season with salt and pepper. 3 turn the heat to high and add the wine. Let the wine cook off for a couple of mins, then lower heat and simmer with mushrooms for another 10 mins. 4 stir in the butter 1 tbsp at a time until combined. Remove from heat and set aside. 5 in large skillet, brown sausage. When cooked through, about 5-7 mins, add to mushroom mixture along with tarragon and combine thoroughly.
