Momma's Meatloaf is a classic meatloaf that has the best flavor ever! This meatloaf recipe is easy to make, holds together, and has the best glaze on top!

2 pounds lean ground beef
1/2 white onion (diced)
1 cup dried bread crumbs
1/2 cup milk
1 large egg
2 tablespoons Worcestershire sauce
1 teaspoon salt
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees. Lightly grease a 9x13 pan.
  • In a large mixing bowl, knead together the ground beef, onion, bread crumbs, milk, egg, Worcestershire sauce, salt, basil, oregano, pepper, and red pepper flakes.
  • Shape the meat into a loaf and put it into the prepared pan. Bake in the 350 degree oven for 45 minutes.
  • Mix up the glaze in a small bowl by whisking together the ketchup, brown sugar, and Worcestershire sauce. Brush it over the hot meatloaf.
  • Increase the oven temperature to 400 degrees and bake an additional 15 minutes, or until the meatloaf reaches an internal temperature of 160 degrees F.

The perfect 1 pound meatloaf recipe perfect for 1-2 people Classic comfort food for any night of the week.

1 pound Ground beef
2 Eggs
1/2 Onions, diced
1/2 cup Bread Crumbs
1/2 cup Ketchup, divided
2 tablespoons Worcestershire, divided
Salt and Pepper
Optional: Garlic Powder
Optional: Parsley for garnish

Steps:

  • Preheat oven to 375 degrees
  • In a small bowl mix together 1/4 cup of the ketchup and 1 tablespoon Worcestershire sauce, mix together and set aside for later basting.
  • Throw 1 pound of ground beef 80/20 fat content into a big bowl. Break up into chunks and salt and pepper. Just give the salt shaker a couple of good shakes, and a little more with the pepper. If you like garlic shake in a bit of garlic powder, NOT garlic salt.
  • Dice up ½ a medium onion and toss into the bowl.
  • Squirt in ketchup, probably about ¼ cup to start.
  • Shake in Worcestershire sauce until it just smells right, about 1 tablespoon. It's a personal preference with the amount. If you really have no idea how much to use then give the bottle a couple of good shakes to start.
  • In a small bowl, lightly beat two eggs and mix into the ground beef mixture
  • Pour in a ½ cup of plain bread crumbs.
  • Use a wooden spoon to get everything mixed up nicely. Compress into a big ball.
  • Line a baking sheet with parchment paper and plop the meatloaf onto the lined baking sheet and mold the meatloaf into a rectangle.
  • Put the meatloaf into the oven and bake for about 15 minutes then baste with the ketchup Worcestershire sauce. Continue cooking for a total of 60 minutes. Use a thermometer to check the internal temperature reaches 165 degrees to ensure it's fully cooked.
  • I like a little crispy to the sides so I broil at the end for a couple of minutes. Watch it so you don't burn the top.

This is my own variation of meatloaf and oooh soooo yummy. My oldest son ate nearly half the pan in one sitting so I know it was good.

1 1/4 ounces Lipton Onion Soup Mix
1 1/2 lbs hamburger
1 small chopped onions or 1/4 tsp pepper
1 teaspoon salt
1 egg, beaten
3/4 cup oatmeal, uncooked
1 cup v- 8 juice

Steps:

  • Preheat oven to 350.
  • Sift Lipton Onion soup mix to get most of the small pieces of onion out leaving mostly the powdered seasoning. Add together in a large bowl Hamburger, onion, salt, pepper, Lipton powdered seasoning from soup mix. Mix it all together using your hands and fingers. Then add the uncooked Oatmeal and again mix it together. Add egg and V-8 juice and again mix together using hand.
  • Press firmly into a bread pan.
  • Bake at 350 degrees for 1 hour. Let stand 5 minutes before serving.

SHARON'S TO DIE FOR MEATLOAF

This is my personal favorite and I have never had any complaints.

2 large eggs
1 pkg lipton onion soup mix
1 lb 80/20 hamburger meat
1 can(s) rotel original
1/2 pkg crumbled ritz crackers
1/4 c ketchup
1 tsp worcestershire sauce
1/2 c green bell pepper finely chopped
1/8 tsp salt and pepper

Steps:

  • 1. Heat oven to 350 degree
  • 2. Combine all ingredients in bowl and spray meatloaf pan with cooking spray
  • 3. place ingredients in pan and cook in the oven for 45 minutes to an hour or until you feel it is done. I cook until the center is not pink and I drain the fat half way through cooking. Do not let meatloaf sit in the grease after you take it out of the oven, remove from pan and drippings.
  • 4. Serve with mashed potatoes, brown gravy and carrots or asparagus, or any other vegetable and cornbread. This recipe is to die for!
  • 5. You can top with Ketchup or tomato sauce for the last 10 minutes of cooking if you prefer.

CLASSIC MEATLOAF

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.
