I find this very easy recipe yet one that's really classy. I find the sauce tastes better if you make it the day before so that the flavours can mature. I've also used red grape juice instead of wine and it tasted just as good. I've been using this recipe for over 15 years and still love it. I even use the sauce as a pouring sauce for Ice Cream. I often increase the recipe so that I have leftovers just for that. The time that it takes to reduce the liquid is variable dependent on the quantity. I've estimated that it can take up to 20 minutes but it could take less time. They can also be put into a pretty jar and given as a gift.

8 -10 small pears (Conference Pears preferably, but any would do)
8 ounces sugar
1/2 pint red wine (Burgundy type, although any red wine will work)
1/2 pint water
1/2 teaspoon ground cinnamon
1 teaspoon whole cloves
2 slices lemon rind

Steps:

  • Put sugar, wine, water, cinnamon, cloves and lemon rind in a large saucepan and heat gently until the sugar dissolves.
  • Peel the pears leaving the stalks on.
  • Cut off the core at the base. You are only cutting a small amount (5mm) to help the pears stand upright.
  • Add pears to the saucepan.
  • Cover and simmer gently for 20 - 25 minutes or until the pears are soft and coloured by the wine. (You can weight the pears down by an upside down cereal bowl to help them get coloured).
  • Remove the pears carefully from the saucepan with a slotted spoon and place standing upright in a heatproof bowl or dish (I use a plastic Tupperware dish with a lid so that it can be put in the fridge later).
  • Increase the heat and boil the liquid in the saucepan rapidly until the liquid reduces and it thick and syrupy. This can take between 10 and 20 minutes dependent on the quantity of liquid.
  • Take the saucepan off the heat and allow to cool slightly. (Careful the sugary liquid is very hot).
  • Strain the liquid to remove lemon rind and cloves and pour over the pears. (I hold a sieve over the pears to do this).
  • When the pears and the syrup are quite cold chill in the fridge for several hours or overnight. Spoon the syrup over them from time to time this helps to give them more colour. (Again I weight them down with an upside down cereal bowl).

This is one I'm considering for the holidays. It is originally from "125 Best Vegetarian Crock pot Recipes). The original says this is best in a 3 1/2 quart crock pot because that allows the pears to be submerged. This is served cold so it needs time to chill. Depending on the size of your pears you might need more wine.

8 medium pears or 6 large pears
2 cups dry red wine
1/2 cup sugar
1 cinnamon stick
4 cloves
1 orange

Steps:

  • Peel and core your pears. Then cut in half lengthwise. Put them in your crock pot.
  • Add the wine (making sure your pears are covered), the sugar, cinnamon stick, and cloves.
  • Zest the orange and put all the zest in your crock pot.
  • Cover and cook on low for 6 to 8 hours or until the pears are tender.
  • Chill really well.

SPICED WINE POACHED PEARS

This is a spiced version of the classic red wine poached pears. The remaining sauce is wonderful served over french toast the next morning, which my husband insists on every time we have these. Times listed do not include cooling time (I recommend at least 2 hours).

2 tablespoons water
1/2 cup sugar
3 star anise
4 whole cloves
1 cinnamon stick
750 ml red wine
1 1/2 cups port wine
1 tablespoon crystallized ginger
1 orange, zest of, divided
4 medium bosc pears
water
1 tablespoon lemon juice

Steps:

  • Peel the pears and put in a medium bowl with the lemon juice and enough water to cover to prevent browning.
  • In a large heavy saucepan, combine the water, sugar, anise, cloves, and cinnamon stick.
  • Stir the sugar mixture over medium heat until the sugar dissolves.
  • Add the wine, port, ginger, and about 2/3 of the orange zest (the remainder will be used for garnish). Stir to combine. Bring to a simmer.
  • Add the pears. Place the lid on the pot so that steam can escape and simmer until the pears are tender when pierced with a toothpick. This will take about 25 minutes. Make sure that you turn the pears so that all sides are evenly cooked.
  • Remove the pears from the cooking liquid with a slotted spoon. Transfer them to a plate, cover with plastic wrap, cool in the refrigerator about 2 hours.
  • Pour the cooking liquid through a sieve to remove the cloves, zest, and other particulate. Return to sauce pan. At this point you can refrigerate the liquid if you plan on serving it within a day or 2.
  • To reduce the sauce, simmer until desired consistency is achieved (about 30 minutes to my taste). Taste as you are cooking it to adjust sweetness to your taste (I don't like things that sweet, so the sauce is tart when made according to the recipe).
  • Serve each pear with a little sauce drizzled over and sprinkle with remaining zest. Mint & dark chocolate also make good garnishes.

This can be a dessert on its own, a side for another dessert, a condiment for a cake or just a little treat. You can easily make this in advance and keep it in the fridge for a week (if the stay that long). I make much more of the white wine, because it is great on its own.

4 pears (firm)
500 ml white wine
100 g sugar
1/2 vanilla bean, cut lenghtwise
1 cinnamon stick (about 2 inches)
2 cloves
1 lemon, juice of
1/2 lemon, zest of

Steps:

  • Combine white wine, sugar, spices and peel of lemon in a suited pot.
  • Heat up but do not let it boil.
  • Meanwhile put the lemon juice into a bowl.
  • Peel the pears and quarter them lenghtwise. Core them. Put them into the bowl with lemon juice to avoid browning.
  • After you have prepared all pears this way add them and the lemon juice to the wine mixture.
  • Poach the pears for about 10 - 15 minutes, but don't let them boil. The pears should be soft, but still a bit firm at the end.
  • Put the pears into a suited preserving jar and cover them with white wine brew. Do not remove the spices.
  • Store them in the fridge for at least 12 hours to blend all the flavors.
  • Enjoy.
  • NOTE: there might be more white wine brew than you need. Put it in the fridge and enjoy it cold with a bit of ice and a lemon wedge.
  • SERVING: Serve the pears at room tempearture with a dollop of your favorite ice cream for an easy dessert. Add some of the white wine brew to it.
  • NOTE: try these pears also in an easy pear cake or tarte. The peares will be soft and their flavor will blend into the cake and will make it moist.
  • Cooking time does not include time for cooling.
