Crispy on the outside and moist and tender inside, if desired you may marinate the breasts in the BBQ sauce for up to 8 hours, for a little heat add in a pinch or more of cayenne to the dry coating mixture or the barbecue sauce :)

1/2 cup kraft original barbecue sauce (or use a different flavor of Kraft BBQ sauce)
1 tablespoon Dijon mustard
3/4 cup original Shake-n-Bake
3/4 cup dry breadcrumbs (use only dry breadcrumbs for this)
1 teaspoon garlic powder
1 teaspoon seasoning salt
1/2 teaspoon fresh ground black pepper
7 boneless skinless chicken breasts

Steps:

  • Set oven to 400 degrees F.
  • Set oven rack to lowest position.
  • Grease a 15 x 10-inch baking sheet.
  • In a small bowl combine the BBQ sauce with Dijon mustard until well combined.
  • In a shallow dish combine the Shake N' Bake coating mix with dry breadcrumbs, garlic powder, seasoned salt and black pepper.
  • Using a pastry brush coat the BBQ sauce mixture liberally all over the chicken breasts (using up all the BBQ sauce).
  • Coat the breast into the crumb mixture on both sides (discard any remaining crumb mixture).
  • Place in a single layer on the baking sheet.
  • Bake for about 25 minutes (baking time for regular size breasts should not take more than 25 minutes or they will become dry, for exta large thick breasts allow 5 minutes more cooking time).

1/2 cup barbecue sauce (Kraft Thick 'N Spicy Original)
1 tablespoon Dijon mustard (Grey Poupon)
1 (1 1/4 ounce) envelope chicken coating mix (Shake 'N Bake)
2 teaspoons garlic powder
8 small boneless skinless chicken breast halves (2 pounds)

Steps:

  • Preheat oven to 400 degrees. Mix BBQ sauce and mustard in pie plate or shallow dish; set aside. Combine coating mix and garlic powder in separate pie plate or shallow dish.
  • Dip chicken in BBQ sauce mixture, then in coating mixture, turning over to evenly coat both sides. Place in single layer in foil-lined 15x10x1-inch baking pan. Discard any remaining coating mixture.
  • Bake 20 minutes or until chicken is cooked through.

I've tried many recipes for the homemade version. This one comes the closest to what my taste buds like.

Yield 1 1/2 Cups Dry Mix

Number Of Ingredients 13

1 cup crushed saltine crackers (about 28 little saltine squares)
1/4 cup plain breadcrumbs
1/4 cup grated parmesan cheese
1 tablespoon dried parsley
1/4 teaspoon salt
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/2 teaspoon dried celery flakes
1/2 teaspoon onion powder
1/2 teaspoon poultry seasoning
1/2 teaspoon paprika
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper

Steps:

  • Mix all ingredients in food processor and whirl until blended.
  • Store in refrigerator.
  • When ready to use, dip chicken pieces in 1/2 cup of evaporated milk and then coat with Shake-n-Bake mixture.
  • Place chicken in shallow pan, skin side up.
  • Bake in 375°F oven for 30 minutes.
  • After 30 minutes spray chicken with a light misting of oil (Pam or generic brand will do).
  • Return to oven and bake about 20 minutes longer or until juices run clear.
  • NOTE: If using boneless breasts they won't take as long to cook as thighs or legs.
