1 quart jar with a two-piece lid
8 black tea bags (whichever brand you prefer. I use Lipton or Wegman's Orange Pekoe black tea.)
boiling water
Optional: 3-6 drops of food-grade peppermint essential oil

Steps:

  • Unwrap all of the tea bags and put them into the jar, draping the strings and tags over the side. Screw on the ring for the jar to hold the strings in place. If using the peppermint essential oil, add the drops directly onto the tea bags. Pour boiling water into the jar, nearly up to the rim. Let it rest on the counter until it is room temperature. take off the ring the ring, then remove the tea bags and discard them. Put the lid on the jar and screw the ring back in place and refrigerate until chilled. Store in the refrigerator for up to a week.
  • Fill a canning jar as far as you'd like with ice. Add Iced Tea Concentrate until the jar is 1/4 filled. Add water to within 1-inch of the top of the jar, fix a two-piece lid in place and shake vigorously for 30 seconds. Remove the lid and enjoy!

I love iced tea, but I'm the only one who drinks it here. I like two kinds--smooth sun tea, unsweetened, or strong and sweet Southern-style iced tea. This recipe is for the latter. You will need a steel cocktail shaker. This makes 2 very large glasses full, or more if using smaller glasses.

6 tea bags (or more as desired, I like Red Rose the best for this)
1 pint boiling water
1/4 cup sugar (or to taste)
ice cube (lots!)

Steps:

  • Place the tea bags in a very large mug or other heatproof cup. Pour boiling water over teabags. Brew tea for about 5 minutes (should be dark and bitter at this point). Remove tea bags, squeezing with a spoon to remove the liquid. Stir in sugar until dissolved.
  • While tea is brewing, fill shaker and a glass or two with ice cubes. Pour hot tea over ice in shaker until almost full (be careful--the shaker will get quite hot for a moment!). Replace lid and shake until cold; strain over ice in glass. Add remaining tea (and additional ice, if needed) and shake until cold.

1 ½ cups thai tea, brewed, cooled
½ cup whole milk
¼ cup sweetened condensed milk
whipped cream, for topping
2 whole star anises, for garnish

Steps:

  • Pour the Thai tea into an ice cube tray. Freeze for at least 4 hours, or overnight.
  • Add the Thai tea ice cubes, milk, and sweetened condensed milk to a blender and blend until smooth.
  • Pour into glasses and top with whipped cream. Garnish with star anise.
  • Enjoy!
