STEAKHOUSE BURGERS



Steakhouse Burgers image

This is the ultimate burger recipe. The burgers are packed with flavor and reliably juicy, even when cooked to well-done.

2 pieces white sandwich bread, crusts removed and cut into ¼-inch pieces
⅓ cup milk
2½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 garlic cloves, minced
1½ tablespoons Worcestershire sauce
2 tablespoons ketchup
3 pounds 80 to 85% lean ground beef
3 scallions, white and green parts, very finely sliced (optional)
8 hamburger buns

Steps:

  • Preheat the grill to high heat.
  • In a large bowl, mash the bread and milk together with a fork until it forms a chunky paste. Add the salt, pepper, garlic, Worcestershire sauce and ketchup and mix well.
  • Add the ground beef and scallions and break the meat up with your hands. Mix everything together until evenly combined. Divide the mixture into 8 equal portions and form compact balls. Flatten the balls into ¾-inch patties about 4½ inches across. Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill.
  • Oil the grilling grates. Grill the burgers, covered, until nicely browned on the first side, 2 to 4 minutes. Flip burgers and continue cooking for a few minutes more until desired doneness is reached. Before serving, toast the buns on the cooler side of the grill if desired.
  • Freezer-Friendly Instructions: The uncooked burgers can be frozen for up to three months. (Freeze the burgers on a baking sheet or plate so their shape sets, then transfer them to a sealable plastic bag for easy storage.) Defrost the burgers overnight in the refrigerator prior to serving and then cook as directed.

This is an heirloom recipe from my grandmother. We used to beg my mom to make these. Not intended to be placed on a grill, they are best served over rice with a nice green salad.

1 pound ground beef
½ cup uncooked rolled oats
⅔ cup evaporated milk
2 tablespoons minced onion
⅛ teaspoon salt
⅛ teaspoon ground black pepper
4 teaspoons Worcestershire sauce
2 tablespoons vinegar
4 teaspoons granulated sugar
⅔ cup ketchup
¼ cup chopped onion
3 tablespoons vegetable oil

Steps:

  • In a medium bowl, mix the ground beef, oats, milk, 2 tablespoons minced onion, salt, and pepper. Let stand for a few minutes until milk is absorbed, and shape into 8 patties.
  • In a small bowl, thoroughly mix the Worcestershire sauce, vinegar, sugar, ketchup, and 1/4 cup chopped onion; set aside.
  • Heat the oil in a medium skillet over medium heat, and fry the patties until brown on both sides. Pour the sauce in with the patties, and reduce heat. Continue cooking about 15 minutes.

8 ounces flank steaks, sliced on an angle
1 tablespoon minced lemongrass
1/2 teaspoon peeled and minced fresh ginger
1/2 teaspoon minced garlic
1/2 teaspoon fish sauce
1/2 teaspoon sesame oil
1/2 teaspoon honey
1 teaspoon dried red chili pepper flakes
1 teaspoon Chinese five spice powder
1 teaspoon kosher salt
2 tablespoons vegetable oil
1/4 cup thinly sliced red onion
1/2 bunch thinly sliced green onion
1 cup bean sprouts
2 tablespoons hoisin sauce
1 tablespoon ground peanuts
20 leaves Thai basil

Steps:

  • Combine all marinade ingredients in a nonreactive baking dish and marinate beef for 1 hour.
  • Heat oil in a wok and heat over high heat. When oil is hot, add red onion, green onion, and bean sprouts and sear for 1 minute, stirring. Set aside on serving dish.
  • Add beef to very hot wok and sear until rare. Add hoisin sauce and toss until coated. Add ground peanuts and basil and cook until meat is medium rare.
  • Serve meat over onions and bean sprouts.

The Best Hamburger Recipe (and amazing secret sauce) image

1 pound ground beef (I used 80/20 - fattier meat means a juicier burger!)
1/2 cup shredded Monterey jack cheese
1/4 cup BBQ sauce
1/4 teaspoon seasoned salt
pepper, to taste
1/4 teaspoon onion powder
3/4 cup mayonnaise
1/4 cup ketchup
1/4 cup pickle relish
2 Tablespoons Worcestershire sauce
5 hamburger buns (we like sesame seed buns)

Steps:

  • In a large bowl, combine the ground beef, shredded cheese, bbq sauce, and seasonings. Don't add too much bbq sauce or the patties will have a hard time taking shape. Shape patties that are about 1 inch thick (about 5 patties). (You can also freeze the patties after shaping them for about 1 hour to help them hold their shape.)
  • Turn grill up to high and let it get hot.
  • Reduce heat to medium-high and place the burgers on the grill. Allow this side of the patty to cook for about 4-6 minutes, but make sure it does not burn. Then flip the burger over and cook until done.
  • For the sauce, combine all sauce ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.
  • Assemble the burgers and serve with the special sauce and other hamburger toppings of choice.
