Sesame Seed Crusted Salmon on Soba Noodles with Twiced Cooked Broccoli with Garlic and Hazelnuts image

1/4 cup hazelnuts
1 large bunch of broccoli, cut into 1 1/2-inch florets
2 tablespoons hazelnut oil
2 cloves garlic, thinly sliced
1/4 teaspoon crushed red pepper
1 pound soba noodles, cooked al dente
1/2 cup soy sauce
2 tablespoons fresh lime juice
2 cloves garlic, finely chopped
1 tablespoon minced fresh ginger
1 tablespoon olive oil
2 teaspoons sesame oil
1/4 cup coarsely chopped cilantro
3 scallions finely chopped
4 (6-ounce) salmon fillets
Salt and pepper
2 tablespoons sesame seeds
2 tablespoons black sesame seeds
2 tablespoons olive oil

Steps:

  • For the broccoli: Preheat oven to 350 degrees F. Spread hazelnuts on a pie pan and toast in the oven for 8 to 10 minutes, transfer nuts to a kitchen cloth and rub to remove the skins. Coarsely chop the nuts In a steamer, steam the broccoli until just tender, about 5 minutes. In a large skillet, combine the hazelnut oil, garlic and hazelnuts. Cook over high heat, stirring until the garlic is pale golden. Add the broccoli and crushed red pepper and toss . Season with salt and cook for 1 to 2 minutes.
  • For the soba noodles: Place noodles in a large bowl. Whisk together the soy sauce, lime juice, garlic, ginger, olive oil and sesame oil. Pour over the noodles, add the cilantro and toss to combine, season with salt and pepper. Garnish with scallion.
  • For the salmon: Season salmon on both sides with salt and pepper. Mix together the sesame seeds in a medium bowl. Dredge salmon skin-side down in the seeds. Heat oil in a large skillet over medium-high heat. Sear the salmon seed-side down in the pan and cook until golden brown. Turn the fillets over and continue cooking for 3 to 4 minutes for medium doneness.

1 large head of broccoli, cut into large florets with some stalk attached
2 garlic cloves, 1 finely grated, 1 thinly sliced, divided
1 1/2 teaspoons sambal oelek
1 tablespoon plus 1/2 cup sherry vinegar or red wine vinegar, divided
3/4 cup vegetable oil, divided
1 teaspoon kosher salt, plus more
1/4 teaspoon freshly ground black pepper, plus more
3 scallions, green parts only, thinly sliced, plus more for serving
1 (3-inch) piece ginger, peeled, cut into 1-inch matchsticks
4 cups chopped Tuscan kale leaves
2 (10-ounce) packages fresh ramen noodles or 2 (3-ounce) packages dried
Torn mint leaves and toasted sesame seeds (for serving)

Steps:

  • Preheat oven to 450°F. Toss broccoli with grated garlic, sambal oelek, 1 Tbsp. vinegar, and 1/4 cup oil on a rimmed baking sheet; season with salt and pepper. Roast, tossing occasionally, until tender and browned in spots, 20-25 minutes.
  • Meanwhile, whisk scallions, ginger, sliced garlic, 1 tsp. salt, 1/4 tsp. pepper, and remaining 1/2 cup vinegar and 1/2 cup oil in a large bowl. Add kale; toss to coat. Let sit at room temperature at least 15 minutes and up to 1 hour.
  • Cook noodles according to package directions. Drain; rinse under cold water. Add noodles and warm broccoli to kale and toss to coat. Divide among bowls and top with mint, sesame seeds, and more scallions.

1 1/2 pounds (24 ounces) whole broccoli or 14 ounces ready-cut broccoli florettes (5 to 6 cups)
2 cloves garlic
1/2-inch piece of fresh or frozen ginger
2 tablespoons toasted or Asian sesame paste
4 teaspoons reduced-sodium soy sauce
1 teaspoon sugar
1 teaspoon toasted or Asian sesame oil
1 teaspoon garlic chili paste
3 tablespoons rice vinegar
3 tablespoons dry sherry
8 ounces Chinese flat noodles or fresh Italian linguine
A few sprigs cilantro to yield 3 tablespoons chopped
2 scallions

Steps:

  • Bring water to a boil for the noodles in a covered pot.
  • Cut tough stems from the whole broccoli. Cut the broccoli florettes into bite-size pieces, and steam over a little hot water for about 5 minutes, until tender but still crisp.
  • Turn a food processor on, and with the motor running, put the garlic and ginger through the feed tube and process until minced. Add the sesame paste, soy sauce, sugar, sesame oil, chili paste, vinegar and sherry, and process.
  • Drain the broccoli. Cook the noodles according to package directions.
  • Wash and dry the cilantro and chop. Wash and slice the scallions.
  • Pour the sesame dressing into a serving bowl; stir in the broccoli. When the noodles are cooked, stir in with the scallions and top with the cilantro.
