SESAME NOODLES WITH MUSHROOMS



Sesame Noodles With Mushrooms image

8 ounces thin noodles
1/4 cup soy sauce
1/4 vegetable oil
3 tablespoons pure sesame oil
2 tablespoons sugar
2 tablespoons rice wine vinegar
1/2 teaspoon hot chile oil
4 cloves garlic, minced
4 tablespoons salted butter
8 ounces cremini mushrooms, thinly sliced
4 ounces shiitake mushrooms, thinly sliced
4 green onions, thinly sliced

Steps:

  • Bring a large pot of water to a boil. Cook the noodles according to the package instructions in the boiling water. Drain and set aside.
  • Mix together the soy sauce, vegetable oil, sesame oil, sugar, vinegar, chile oil and garlic in a small pitcher. Set aside.
  • Add the butter to a large skillet over medium-high heat. When the butter has melted, add the mushrooms and cook until thoroughly browned, 5 to 7 minutes. Pour in the sauce and stir to combine. Remove the skillet from the heat. Add the noodles and toss to combine. Sprinkle over the green onions and give one final toss. Serve.

3 tablespoons white miso
3 tablespoons sugar
2 egg yolks
2 tablespoons chunky peanut butter
2 teaspoons minced ginger
1 teaspoon minced garlic
1 Hawaiian red chile or serrano chile, minced
2 teaspoons Dijon mustard
1 cup vegetable oil
2 teaspoons dark sesame oil
2 teaspoons white sesame seeds, toasted
Up to 1/2 cup water
1/4 cup finely minced ginger
1/4 cup minced scallions, green part only
1/4 cup peanut oil
1/4 teaspoon dark sesame oil
Pinch salt
1/3 cup plus 1 1/4 cups cold water
1/2 clove garlic
2 red Hawaiian chiles or red serrano chiles, or 1 red jalapeno, halved and seeded
1 tablespoon white vinegar
2 teaspoons minced ginger
Basil Oil, recipe follows

Ginger Crusted Onaga, recipe follows
1/2 cup firmly packed spinach leaves
1/2 cup firmly packed fresh basil leaves
1 tablespoon freshly squeezed lemon juice
1/2 tablespoon chili pepper water
1/2 tablespoon minced garlic
3/4 cup olive oil
Salt, to taste
Bunch scallions, green part only
1/2 cup peanut oil
4 (7-ounce) onaga fillets
Salt and pepper to taste
1/2 cup ginger scallion oil
1/2 cup panko, (Japanese bread crumbs)
2 teaspoons butter
1/4 cup sliced shiitake mushrooms
1/4 cup enoki mushrooms
1/2 cup corn kernels (from 1 ear of corn)
1/4 cup basil oil
4 teaspoons slivered scallions (recipe above)
2 teaspoons black sesame seeds

Steps:

  • To prepare vinaigrette, in a bowl, combine 1/4 cup of the rice wine vinegar, the stock, miso, and sugar. In a blender, combine the remaining 1/4 cup of rice wine vinegar, the egg yolks, peanut butter, ginger, garlic chile, and mustard and puree until smooth. With machine running, slowly add the vegetable oil until incorporated, and then slowly add sesame oil. Stir in the sesame seeds. If the mixture seems to thick, add water until the mixture can be poured. Add the blended mixture to the bowl and stir thoroughly. Refrigerate until needed.
  • For the ginger-scallion oil, place the ginger and scallions in a deep mixing bowl. In a small saucepan, heat the peanut oil until just smoking. Slowly pour the hot oil over the ginger and scallion, being very careful as the oil will rise up the sides of the bowl. Add the sesame oil. Season with salt. Keep refrigerated.
  • For the chile pepper water, in a blender combine the 1/3 cup of water, garlic, chiles, vinegar, ginger, and salt and puree until smooth. In a saucepan, bring the 1 1/4 cups water to a boil. Add the pureed mixture and return to a boil. Remove from the heat. When cool, transfer to an airtight container. Keep refrigerated.
  • For the basil oil: In a saucepan of boiling salted water, blanch the spinach for 5 seconds. Drain and transfer to an ice bath to cool. Drain again and transfer to a blender. Add the basil, lemon juice, chile pepper water, garlic and oil. Season with salt, place in a blender, and puree; do not over blend as the oil will lose its color. Strain through a very fine sieve or strainer so that the oil is clear and bright green. Store in a glass container in a cool, dark place.
  • For the slivered scallions, using the back part of a large, sharp knife flatten the green parts of the scallions. Cut very finely on a diagonal so that the slivers are about 1 inch long.
  • For the fish, in a saute pan over high heat, heat the peanut oil until hot. Season the onaga with salt and pepper. When the oil is almost smoking, sear the onaga for about 45 seconds on each side, or until brown. When cool, top the onaga with the ginger-scallion oil (including the solids it contains) and dust on 1 side with the panko. Transfer the onaga to a oven-proof skillet or roasting pan. In a preheated 350 degree oven, bake for 6 minutes, or until tender and cooked through. Meanwhile, in a saute pan over medium heat, melt the butter. Add the mushrooms and saute for 3 to 4 minutes, or until they soften and begin to brown. Add the corn and saute for 2 minutes longer, or until the corn is slightly tender. To serve, divide the Sauteed vegetables among individual plates. Pour 1/2 cup of the vinaigrette around the vegetables and drizzle the basil oil over the vinaigrette. Place the onaga on the vegetables and top with the scallions. Sprinkle the sesame seeds around the plate.

12 green onions, chopped
1 teaspoon dried crushed red pepper
For salad
1 1/2-pound head Napa cabbage, sliced
1 1/2 hothouse cucumbers, sliced diagonally
1 cup chopped fresh mint
6 skinless boneless chicken breast halves
12 fresh shiitake mushrooms, stemmed
1 cup lightly salted dry roasted peanuts, coarsely chopped

Steps:

  • Make dressing:
  • Whisk vinegar and mustard in medium bowl. Gradually whisk in both oils, then soy sauce. Mix in green onions and crushed red pepper. Season to taste with salt and pepper.
  • Make salad:
  • Combine cucumbers, carrots and mint in large bowl. (Dressing and salad can be made 4 hours ahead. Cover seperately and chill. Bring to room temerature before using.)
  • Place chicken and mushrooms in large glass baking dish. Pour 1/2 cup plus 2 tablespoons dressing over and turn to coat. Cover; chill 30 minutes to 1 hour.)
  • Prepare barbeque (medium heat). Remove chicken and mushrooms from marinade; sprinkle with salt and pepper. Grilled chicken until cooked through, about 4 minutes per side. Transfer to work surface. Grill mushrooms until tender, about 2 minutes per side. Pour enough dressing over salad to coat and toss gently to blend. Season with salt and pepper. Transfer to large platter. Halve mushrooms and tuck in among chicken slices. Drizzle chicken with remaining dressing. Sprinkle with nuts and serve.

  • Mix broth, cornstarch, hoisin sauce, soy sauce, lemon juice and sesame oil.

1 tablespoon white wine (Reisling)

Steps:

  • In a medium bowl, combine the chicken broth with soy sauce, wine, sugar, dissolved cornstarch and water, sesame oil and crushed red pepper. Whisk until smooth.
  • In a large skillet, heat 2 t. oil until hot and add the onion wedges. Cook for about 6 minutes. Add mushrooms and continue to cook for another 6 minutes. Transfer onion and mushrooms to a plate.
  • Add another 2 t. oil to the skillet and season chicken with salt and pepper and add to the skillet and cook over med. high heat until golden about 4 minute each side. Transfer to the plate with onions and mushrooms.
  • Add 1 T. oil to the skillet and add the bok choy and red pepper pieces. Cook on medium high heat until crisp tender about 3 minutes. Transfer to the plate with the onion, mushrooms, and chicken.
  • Add the remaining oil to the skillet and cook the ginger and garlic until fragrant about 1 minute. Return the chicken and vegetables to the skillet. Whisk the sauce in the bowl, and add to the skillet. Bring to a boil and simmer stirring until slightly thickened, about 1 minute. Transfer to bowls and serve.

  • Preheat oven to 400 degrees. Cut out four 12-by-17-inch pieces of parchment; fold each in half crosswise to form a crease, then open.

1 tablespoon sesame seeds, toasted

  • Heat 1 tbls. of the peanut oil in a 12" skillet over medium high heat until they shimmer. Add the mushrooms and cook, stirring occasionally, until the mushrooms release their liquid, about 5 minutes.Increase the heat to high and cook, stirring occasionally, until the liquid has evaporated, about 8 minutes longer. Add the remaining peanut oil, reduce the heat to medium and continue to cook, stirring once every minute, until the mushrooms are dark brown, about 8 more minutes.

4 large portabella mushrooms
2 tablespoons sweet rice wine
2 tablespoons soy sauce
2 garlic cloves, minced

Steps:

  • Remove & discard stems from the mushrooms. Combine the remaining ingredients in a small bowl.
  • Brush both sides of the mushroom cap with the sauce mixture. Grill the mushrooms top side up on a covered grill over medium heat for 3-4 minutes.
  • Brush the tops with more sauce mixture then turn over, cook another 2 minutes.
  • Baste again then flip over. Continue to grill for another 4-5 minutes or until tender when pressed with a spatula.
  • Remove from the grill then cut diagonally into 1/2 inch thick slices.

Yummy side dish, or I have used this as a main with the marinade thinned with water and heated as a sauce over some steamed asian greens with some rice. I have successfully made this without the oil, just spray the mushrooms with an oil spray prior to cooking. The sugar in the marinade will caremelise in the oven. Aussie measurements (1tbsp= 20mls).

1/3 cup teriyaki marinade
2 tablespoons sweet chili sauce
1 tablespoon olive oil
2 tablespoons sesame seeds, toasted

  • Preheat oven to 220°C Place the mushrooms into a large bowl.
  • Combine the teriyaki marinade, sweet chilli sauce and olive oil.

1 red bell pepper, chopped

2 cups cooked black beans
2 Tablespoons tahini paste
3 Tablespoons finely chopped fresh cilantro
1 Tablespoon low-sodium tamari soy sauce
1 teaspoon toasted sesame oil
2 teaspoons sesame seeds

Steps:

  • Preheat the oven to 375 degrees F. Heat 1 tablespoon of the canola oil in a large skillet over medium-high heat. Add the mushrooms, gill side up. Sear until browned, about 30 seconds. Turn over, season with salt and pepper, and cook 30 seconds longer. Remove the mushrooms from the skillet and set aside. Reheat the same skillet with the remaining 1 tablespoons canola oil over medium heat. Add the garlic and bell pepper and cook until softened, about 5 minutes. Stir in the ginger, beans, tahini, cilantro, tamari, and sesame oil. Cook, stirring, for 1 minute to combine and blend the flavors. Remove from the heat and set aside until cool enough to handle. 1/2 cup cilantro, coarsely chopped, plus additional sprigs
1/3 cup mint leaves, coarsely chopped, plus additional leaves
1/4 cup Thai basil leaves, coarsely chopped, plus additional leaves (may substitute regular basil if you can't get the Thai variety)
Salt to taste
8 8 1/2-inch rice flour spring roll wrappers

Steps:

  • Toss the rice with 1 tablespoon of the rice vinegar and the soy sauce
  • Wash the spinach and steam 1 to 2 minutes, tossing halfway through. It should wilt but still have some texture. Rinse with cold water, squeeze dry and coarsely chop. Season with salt to taste
  • Spread each tofu domino with about 1/4 teaspoon peanut sauce
  • Place the shredded carrots, slivered mushrooms and chopped herbs in a large bowl and toss with the remaining rice vinegar and salt to taste
  • Fill a bowl with warm water and place a spring roll in it just until it is pliable, about 30 seconds. Remove from the water and drain briefly on a kitchen towel. Place the wrapper on your work surface in front of you and arrange several cilantro sprigs, whole mint leaves and basil leaves, vein side up, on the wrapper. Leaving a 2-inch margin on the sides, place a handful of the carrot mixture on the wrapper, slightly nearer to the edge closest to you. Top with a handful of rice, then a handful of spinach. Place 3 tofu dominoes down the length of the spinach. Fold the sides in, then roll up the spring rolls tightly, squeezing the filling to get a tight roll. Refrigerate until ready to serve. Serve with a dipping sauce of your choice

500 g button mushrooms, if dirty use a pastry brush to remove dirt
1/2 cup bottled teriyaki marinade
2 tablespoons sweet chili sauce
1 tablespoon olive oil
2 tablespoons sesame seeds, toasted

Steps:

  • Preheat oven to 190°C.
  • Place mushrooms in large bowl.
  • Combine marinade, sauce and oil.
  • Pour over mushrooms.
  • Toss till well coated.
  • Place mushrooms on greased baking tray.
  • Roast 25 minutes, turning twice.
  • Sprinkle with sesame seeds and serve.

1 cup Arborio rice
2 teaspoons olive oil
2 cloves garlic, minced
1 package (8 ounces) sliced cremini (baby bella) mushrooms
1/2 pound asparagus, ends trimmed and cut into 1-inch pieces
1/2 cup freshly grated Parmesan cheese
3 tablespoons McCormick® Gourmet Collection Sesame Seed, Toasted
1/2 teaspoon salt

Steps:

  • 1. Bring 6 cups water to boil in large saucepan. Add rice; return to boil. Reduce heat to medium; cook, uncovered, 12 to 15 minutes or until rice is tender with a little bite in the center, stirring occasionally. Drain rice, reserving 1 cup of the liquid. Return rice to saucepan. Cover to keep warm. 2. Meanwhile, heat oil in large nonstick skillet on medium heat. Add garlic; cook and stir about 1 minute. Add mushrooms; cook and stir about 5 minutes or until lightly browned and tender. Add asparagus; cook and stir 3 to 4 minutes or until tender-crisp. 3. Stir vegetables, Parmesan cheese, toasted sesame seed and salt into rice. Stir in reserved liquid, 1/4 cup at a time, until desired creaminess. Test Kitchen Tip: If using McCormick® Gourmet Collection Sesame Seed, first toast is a small skillet on medium heat 2 minutes or until fragrant and golden brown. 1.5 pounds white button mushrooms, cleaned, stems trimmed, quartered if medium or halved if small
1 tablespoon toasted sesame seeds
1 tablespoon finely grated fresh ginger
2 tablespoons mirin
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
2 scallions, sliced very thin on bias

Steps:

  • Heat 1 tablespoon peanut oil in 12-inch skillet over medium-high heat until shimmering. Add mushrooms and cook, stirring occasionally, until mushrooms release liquid, about 5 minutes. Increase heat to high and cook, stirring occasionally, until liquid has completely evaporated, about 8 minutes longer. Add remaining tablespoon peanut oil, reduce heat to medium, and continue to cook, stirring once every minute, until mushrooms are dark brown, about 8 minutes longer.
  • Add sesame seeds and ginger and cook, stirring constantly, until ginger is fragrant, about 30 seconds. Add mirin and soy sauce and cook, stirring constantly, until liquid has evaporated, about 30 seconds. Remove from heat and stir in sesame oil. Transfer to serving dish, sprinkle with scallions, and serve.

1 tablespoon plus 1 teaspoon finely grated peeled fresh ginger
1 tablespoon plus 1 teaspoon fresh lemon juice
4 cups thinly sliced shiitake mushrooms (8 ounces)
4 boneless, skinless salmon fillets, preferably wild sockeye (5 ounces each; 1 inch thick)
Coarse salt
2 teaspoons toasted-sesame oil
1 teaspoon black sesame seeds
1 1/3 cups fresh pea shoots (2 ounces)

Steps:

  • 1. Preheat oven to 400 degrees. Cut out four 12-by-17-inch pieces of parchment; fold each in half crosswise to form a crease, then open. 2. Combine soy sauce, ginger, and lemon juice, and toss with mushrooms. Divide evenly among 4 parchment pieces, arranging mixture on 1 side of each crease. Lay 1 salmon fillet on top of each pile. Season each with 1/8 teaspoon salt and the sesame oil. Fold parchment over ingredients; make overlapping pleats to seal. 3. Bake on 2 baking sheets (2 packets per sheet) for 10 to 11 minutes for medium-rare or 12 minutes for medium. Unwrap; sprinkle with sesame seeds. Top with pea shoots.

Sesame Braised Chicken With Scallions, Daikon and Mushrooms image

On a search for a nontraditional take on chicken in a pot in 2012, Melissa Clark was hoping for something that avoided the flavors and "seasonings inherent in Continental cuisine" - white wine, leeks, bacon. She found an answer in this recipe, which relies on dry sherry, soy sauce and star-anise-infused sesame oil as its braising liquid. Daikon and shiitake mushrooms soak up the liquid and soften under its weight. Be sure to brown the bird, too. It won't crisp the skin, but it does add depth of flavor.

3 bunches scallions (about 3/4 pound)
3 tablespoons peanut oil
1 tablespoon sesame oil
1 pound daikon radish, peeled and cut into 1 1/2-inch chunks
1/2 cup sliced shiitake mushroom caps
6 cloves garlic, smashed and peeled
2 inches ginger, peeled and thinly sliced
1 (3 1/2-pound) whole chicken
2 teaspoons coarse kosher salt
2 teaspoons black pepper
1 cup chicken stock
1/2 cup dry sherry
1 tablespoon soy sauce
4 whole star anise pods
1 1/2 teaspoons rice wine vinegar, more to taste

Steps:

  • Heat oven to 450 degrees. Trim the roots off the scallions. Separate the dark green tops from the bottoms.
  • In a 5- or 6-quart Dutch oven, heat 2 tablespoons peanut oil and 1.5 teaspoons sesame oil over medium-high heat. Add the scallion bottoms, daikon, mushrooms and garlic cloves. Cook, stirring occasionally, until golden, about 7 minutes. Add the ginger and cook 1 minute more. Use a slotted spoon to transfer vegetables to a platter.
  • Pat chicken dry; season inside and out with salt and pepper. Add the remaining 1 tablespoon peanut oil and 1.5 teaspoons sesame oil to the Dutch oven. Brown chicken, turning, until the skin is well browned. Turn chicken breast-side up. Scatter the vegetables around the chicken. In a small bowl, whisk together the stock, sherry and soy sauce. Pour over the chicken. Drop in the star anise pods. Tightly cover the pot and transfer to the oven. Cook until the chicken is no longer pink, 50 to 60 minutes.
  • Remove to a cutting board. Skim fat from the surface of the cooking liquid. Chop the scallion tops and stir in, with the vinegar. Carve chicken and serve, topped with vegetables and pot juices.
