1/4 cup sesame seeds
1 teaspoon dried red pepper flakes
4 salmon fillets, about 4 oz each
2 teaspoons olive oil
2 carrots, cut into matchsticks
2 red bell peppers, cored, seeded, and thinly sliced
8 oz shiitake mushrooms, halved
2 bok choy, quartered lengthwise
4 scallions, shredded
1 tablespoon dark soy sauce
basmati or long-grain rice, to serve

Steps:

  • Mix the sesame seeds and red pepper flakes on a plate, then press the salmon fillets into the mixture to coat.
  • Heat half the oil in a nonstick skillet over medium heat, add the salmon, and cook for 3-4 minutes on each side, until cooked through. Remove from the skillet and keep warm.
  • Heat the remaining oil in the skillet over high heat, add the vegetables, and stir-fry for 3-4 minutes, until just cooked. Drizzle the soy sauce over the vegetables and serve with the salmon and basmati rice.

1 cup mayonnaise
2 tablespoons frozen orange juice concentrate, thawed
1 tablespoon yellow miso (fermented soybean paste)*
1 tablespoon oriental sesame oil
1 teaspoon grated peeled fresh ginger
1/2 teaspoon grated orange peel
1 1/2 pounds skinless salmon fillet, cut into 3/4-inch cubes (about 48 pieces)
2 tablespoons vegetable oil
5 tablespoons sesame seeds (white and/or black)
Cocktail toothpicks

Steps:

  • Whisk first 6 ingredients in medium bowl to blend well. Season orange-miso sauce to taste with salt and pepper. (Can be made 1 day ahead. Cover; refrigerate. Bring to room temperature before serving.)
  • Line large baking sheet with foil. Place salmon and vegetable oil in large bowl; toss to coat. Sprinkle salmon with salt and pepper. Place sesame seeds on small plate. Coat 1 surface of each salmon piece with sesame seeds. Arrange salmon, sesame-coated side up, in single layer on prepared baking sheet. (Can be made 6 hours ahead. Cover; chill.)
  • Preheat oven to 400°F. Bake salmon uncovered until just cooked through, about 5 minutes; transfer to platter. Skewer each piece with toothpick. Serve warm, passing orange-miso sauce.

4 -6 salmon fillets, about 6 oz each, skinned
salt & freshly ground black pepper
1 tablespoon sesame oil or 1 tablespoon vegetable oil
1/4 cup sesame seeds

Steps:

  • Season the salmon with salt and pepper.
  • Rub both sides with a little sesame oil and coat the fillets with sesame seeds.
  • Heat the remaining oil in a large skillet, preferably non-stick, over moderate heat until the oil shimmers.
  • Place the salmon fillets in the skillet and cook without moving them until the bottoms are browned and the bottom half of the fillets are opaque, about 5 minutes.
  • Turn the fillets and cook, without moving them, until the flesh is opaque and firm to the touch, about 5 minutes.
  • Serve immediately.

1/4 cup hazelnuts
1 large bunch of broccoli, cut into 1 1/2-inch florets
2 tablespoons hazelnut oil
2 cloves garlic, thinly sliced
1/4 teaspoon crushed red pepper
1 pound soba noodles, cooked al dente
1/2 cup soy sauce
2 tablespoons fresh lime juice
2 cloves garlic, finely chopped
1 tablespoon minced fresh ginger
1 tablespoon olive oil
2 teaspoons sesame oil
1/4 cup coarsely chopped cilantro
3 scallions finely chopped
4 (6-ounce) salmon fillets
Salt and pepper
2 tablespoons sesame seeds
2 tablespoons black sesame seeds
2 tablespoons olive oil

Steps:

  • For the broccoli: Preheat oven to 350 degrees F. Spread hazelnuts on a pie pan and toast in the oven for 8 to 10 minutes, transfer nuts to a kitchen cloth and rub to remove the skins. Coarsely chop the nuts In a steamer, steam the broccoli until just tender, about 5 minutes. In a large skillet, combine the hazelnut oil, garlic and hazelnuts. Cook over high heat, stirring until the garlic is pale golden. Add the broccoli and crushed red pepper and toss . Season with salt and cook for 1 to 2 minutes.
  • For the soba noodles: Place noodles in a large bowl. Whisk together the soy sauce, lime juice, garlic, ginger, olive oil and sesame oil. Pour over the noodles, add the cilantro and toss to combine, season with salt and pepper. Garnish with scallion.
  • For the salmon: Season salmon on both sides with salt and pepper. Mix together the sesame seeds in a medium bowl. Dredge salmon skin-side down in the seeds. Heat oil in a large skillet over medium-high heat. Sear the salmon seed-side down in the pan and cook until golden brown. Turn the fillets over and continue cooking for 3 to 4 minutes for medium doneness.

Salmon Burgers with Ginger-Wasabi Mayo and Sesame-Crusted French Fries image

1 sack (16 to 18 ounces) crispy-style frozen French fries
4 tablespoons sesame seeds
1 1/2 pounds fresh salmon fillet, pin bones and skin removed
2 garlic cloves, chopped
3-inch piece of fresh ginger, minced or grated
3 tablespoons tamari (dark aged soy sauce, found on the international aisle)
2 scallions, white and green parts, chopped
1/2 small red bell pepper, cored, seeded, and finely chopped
2 teaspoons sesame oil (eyeball it)
2 teaspoons grill seasoning, such as McCormick's Montreal Steak Seasoning, or 1 teaspoon coarse black pepper and 1/2 teaspoon coarse salt (eyeball it)
Coarse black pepper
1 tablespoon light-in-color oil, such as canola, safflower, or peanut oil
1/2 to 3/4 cup mayonnaise
2 tablespoons wasabi paste
Juice of 1 lime
4 sesame kaiser rolls, split and toasted
Red leaf lettuce, for garnish

Steps:

  • Preheat the oven according to the package directions for the fries.
  • Spread the French fries out on a cookie sheet and cook according to the package directions. Three minutes before the fries are finished cooking, remove them from the oven, sprinkle with the sesame seeds, toss with a spatula to coat, and return to the oven to finish cooking and to toast the sesame seeds.
  • Cube the salmon into bite-size pieces and place in a food processor. Pulse the processor to coarse-grind the salmon; it should take on the consistency of ground beef or turkey. Transfer the salmon to a bowl and combine with the garlic, three fourths of the ginger, the tamari, scallions, red bell peppers, sesame oil, grill seasoning, and black pepper. Form 4 large patties, 1 1/2 inches thick. Drizzle the patties on both sides with the oil. Preheat a nonstick skillet over medium-high heat, add the salmon burgers, and cook for 5 to 6 minutes on each side for well done.
  • While the salmon burgers are cooking, prepare the ginger-wasabi mayo. In a bowl, combine the mayonnaise, wasabi paste, lime juice, and the remaining ginger.
  • Spread the ginger-wasabi mayonnaise on the buns. Top with a salmon burger and red leaf lettuce and set the bun tops in place. Serve with the sesame-crusted French fries.

3 cloves garlic
1 Tbsp Coarse Ground Black Pepper
2 Tbsp Ginger
1 tsp sesame oil
1 tsp Olive Oil
1/4 cup Soy Sauce
1/4 cup Cooking Sherry

Steps:

  • - Marinate salmon in cooking sherry and soy sauce for 30 minutes. - Prepare sesame crust by combing chopped garlic, ginger, sesame seeds, pepper, sesame oil, and olive oil in bowl. - Apply as a paste to marinated salmon. - Add additional olive oil to skin side of salmon. - Apply olive oil to grill to prevent sticking. - Place salmon crust side down on grill for 2 to three minutes. - Once crust is seared (dark brown), turn salmon over, and cover the grill (assuming charcoal), and dampen fire. Let cook an additional 5 minutes, or until desired doneness. - Garnish salmon with Cilantro leaves, lime and orange wedges.

6 salmon fillets, 5-6 ounces each
4 tablespoons sesame seeds
1 tablespoon sesame oil
1 red onion, sliced
1/2 teaspoon salt
1/3 teaspoon pepper
3 tablespoons ginger, minced
1 tablespoon butter
3 tablespoons rice vinegar
1 cup coconut milk or 1 cup 35% cream

Steps:

  • Pre heat oven to 450 degrees.
  • Toast the sesame seeds in the oven for 5 minutes or when browned.
  • rub the top of the salmon with the sesame oil and sprinkle to taste with salt and pepper.
  • Dredge the tops of the salmon onto the toasted seeds lightly butter a baking dish and place salmon on top then place in oven for 10-15 minutes dependant on the thickness of the salmon.
  • Once the salmon is baking melt the butter on med high heat and glaze the onion and ginger in the butter for about 5 minutes.
  • Salt and pepper the mixture and then place the rice vinegar in until vinegar evaporates.
  • then stir in the coconut milk or cream and boil for 2 minutes turn heat down low and wait for the salmon.
  • Place portions of the mixtur on a plate and top with salmon with your rice and veggies on the side.

4 4 to 8-ounce) to 8-ounce) skinless salmon fillets
2 2 2 scallions, white parts minced, green parts sliced thin
1 1 2 tablespoon grated lemon zest plus 2 teaspoons juice
4 4 4 teaspoons tahini
2 2 2 teaspoons grated fresh ginger
1/8 1/8 1/8 teaspoon cayenne pepper
1 1 1 teaspoon vegetable oil

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 325 degrees. Dissolve 5 tablespoons salt in 2 quarts water. Transfer 1 cup brine to bowl, stir in sesame seeds, and let stand at room temperature for 5 minutes. Submerge fillets in remaining brine and let stand at room temperature for 15 minutes. 2. Drain seeds and place in 12-inch nonstick skillet. Cook seeds over medium heat, stirring constantly, until golden brown, 2 to 4 minutes. Transfer seeds to pie plate and wipe out skillet with paper towels. Remove fillets from brine and pat dry. 3. Place scallion whites and lemon zest on cutting board and chop until whites and zest are finely minced and well combined. Transfer scallion-zest mixture to bowl and stir in lemon juice, tahini, ginger, cayenne, and 1/8 teaspoon salt. 4. Evenly distribute half of paste over bottoms (skinned sides) of fillets. Press coated sides of fillets in seeds and transfer, seed side down, to plate. Evenly distribute remaining paste over tops of fillets and coat with remaining seeds. 5. Heat oil in now-empty skillet over medium heat until shimmering. Place fillets in skillet, skinned side up, and reduce heat to medium-low. Cook until seeds begin to brown, 1 to 2 minutes. Remove skillet from heat and, using 2 spatulas, carefully flip fillets over. Transfer skillet to oven. Bake until center of fish is translucent when checked with tip of paring knife and registers 125 degrees, 10 to 15 minutes. Transfer to serving platter and let rest for 5 minutes. 2 c rice wine vinegar
4 tbsp sugar
4 6oz salmon fillets
1/4 c olive oil
4 tbsp mixed sesame seeds

1/2 cup light soy sauce
1/2 cup mirin
4 salmon steaks
1/2 cup sesame seeds
coarse sea salt or kosher salt
fresh ground black pepper

Steps:

  • In a large plastic bag, combine the soy sauce and mirin. Add the salmon, coating it well with the marinade, and seal the bag. Let the salmon marinate, chopped, for at least 1 hour and up to 6 hours.
  • Remove the salmon from the bag and discard the marinade. Spread the sesame seeds on a plate and season the salmon with salt and pepper, then coat both sides of each steak with the seeds, patting them on to make sure they stick.
  • Preheat the grill, or broiler with the rack in the top position.
  • Brush the grill with oil and grill the salmon ( or broil it on a rack in a baking pan) for 6 minutes on each side or until just cooked through.
