24 sesame breadsticks (4 1/2-inch long)
12 slices bacon, cut in half to make 24 shorter slices
1 cup freshly grated parmesan cheese
2 teaspoons garlic salt or 2 teaspoons garlic powder
crushed red pepper flakes (optional)
dry ranch dip mix (optional)
chives (optional)
brown sugar (optional)

Steps:

  • Preheat oven to 350°.
  • Combine cheese and garlic salt/powder (other preferred seasonings).
  • Wrap bacon slices in a spiral around each breadstick.
  • Place breadsticks on greased or parchment lined pan.
  • Cook for 15 minutes or until bacon is browned just a bit.
  • Remove and carefully roll the hot breadsticks in cheese mixture.
  • Let cool and enjoy!

2 teaspoons sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup whole milk

Steps:

  • Preheat oven to 450°. In a small bowl, combine flour, sugar, baking powder and salt. Gradually add milk and stir to form a soft dough. Turn onto a floured surface, knead gently 3-4 times. Roll into a 10x5x1/2-in. rectangle; cut into 12 breadsticks. , Place butter in a 13x9-in. baking pan. Place breadsticks in butter and turn to coat. Sprinkle with sesame seeds. A basket of unusual breadsticks will vanish in no time. The fact that you scatter the strips of dough on baking sheets rather like pick-up sticks results in great texture: they're chewy where the strips overlap and crisp where they don't.

1/2 cup warm water (105-115°F)
1 tsp active dry yeast
1 tsp sugar
2 tsp olive oil
1 1/4 tsp salt
1 to 1 1/3 cups all-purpose flour
3 Tbsp white sesame seeds (not toasted)
3 Tbsp black sesame seeds (not toasted; see Cooks' Note, below)

Steps:

  • Stir together water, yeast, and sugar in a medium bowl, and let stand until foamy, about 5 minutes. (If mixture doesn't foam, start over with new yeast.) Add oil, salt, and 1 cup flour and stir until a dough forms (it should be soft but not sticky), adding more flour a little at a time, if necessary.
  • Turn out dough onto a lightly floured surface and knead until smooth and elastic, adding just enough flour to surface to keep dough from sticking, 8 to 10 minutes. Transfer dough to a lightly oiled bowl and turn to coat. Cover tightly with plastic wrap and let dough rise in a warm, draft-free place until doubled, about 1 hour.
  • Preheat oven to 400°F with racks in upper and lower thirds. Oil 2 large baking sheets.
  • Punch down dough, then roll out on a lightly floured surface with a lightly floured rolling pin into a 13-inch square. Lightly brush dough with water and sprinkle with sesame seeds, pressing to help them adhere. Cut dough into very thin strips (about 1/4-inch wide) with a pizza wheel or sharp knife.
  • Divide strips between baking sheets, scattering them loosely in a free-form pattern (strips may overlap). Bake, switching position of sheets halfway through, until crisp and golden-brown in spots, 10 to 15 minutes (if breadsticks begin to get too dark in spots, cover area with foil.) Transfer to racks to cool, about 10 minutes.

  • Breadsticks can be made up to 1 week ahead and kept in an airtight container at room temperature. Reheat if desired before serving.

1-1/2 cups finely chopped onions (about 2 medium)
1/4 teaspoon paprika
1 loaf (1 pound) frozen bread dough, thawed
1 large egg, lightly beaten
1 tablespoon sesame seeds

  • In a large skillet, heat butter over medium heat. Add onions; cook and stir until tender. Stir in paprika; cool completely. , On a lightly floured surface, roll dough to a 16x14-in. rectangle. Spread onion mixture down 1 half of the rectangle. Fold dough lengthwise in half over onion mixture, forming a 16x7-in. rectangle; seal edges., Cut dough lengthwise into thirty-two 1/2-in.-thick strips. Twist each strip 2 or 3 times. Place 2 in. apart on greased baking sheets. Cover with kitchen towels; let rise in a warm place until almost doubled, about 45 minutes. Preheat oven to 375°., Brush breadsticks with beaten egg; sprinkle with sesame seeds. Bake 13-16 minutes or until golden brown. Remove from pans to wire racks to cool.

1/4 cup warm water
1 teaspoon active dry yeast
1 pinch granulated sugar
1 1/4 cups semolina flour
1 cup unbleached all-purpose flour
1 teaspoon kosher salt, plus more for baking
1 cup sesame seeds, divided
6 1/2 ounces warm water (3/4 c plus 1 tbsp)
2 tablespoons extra virgin olive oil, plus more for baking

Steps:

  • Place 1/4 cup warm water in a small bowl with the yeast and a pinch of sugar. Stir to dissolve and let stand to proof, 5-7 minutes. If it is not foamy by then, the yeast is dead; get new yeast and start again.
  • Place semolina and all-purpose flours in work bowl of a stand mixer with the dough hook attachment. Add the salt, and 2 tbsp of sesame seeds. Mix briefly to combine.
  • Make a well in the pile of flour and add the proofed yeast, the remaining water, and the olive oil. Start the mixer on low speed until everything comes together and starts to get smooth, about 2 minutes. Increase to medium and knead another 2-3 minutes, until it begins to look velvety and pulls away from the sides of the bowl.
  • Turn dough out onto a lightly floured board and knead by hand until smooth and elastic (about 30 turns, about 1 minute). Grease a clean mixing bowl with olive oil and place the dough into it, turning the dough over to coat both sides.
  • Cover with plastic wrap and set in a warm, dark spot until it triples in volume, about 2 1/2 hours. (Alternatively, place dough in an oiled, airtight plastic container at least twice the size of the dough mass and refrigerate overnight. Bring to room temperature before proceeding).
  • Preheat oven to 400°F Coat 2 baking sheets each with 1 1/2 to 2 tbsp olive oil.
  • Turn dough out onto a lightly floured board. Cut dough in 6 equal pieces. Cover the unused pieces with a damp kitchen towel.
  • Cut each piece into 4 or 5 equal pieces, each about the size of a medium walnut (3/4 to 1 ounce each). Using both hands, roll each piece against the board until it forms a 12 to 14 inch rope. Do not flour the board; the stickiness helps the dough stretch out.
  • Place the rope on the baking sheet, rolling it to coat with oil. Spaced 1/2 inch apart, each sheet should hold 10 to 12 breadsticks.
  • When all the breadsticks are made, coat with sesame seeds: pour the seeds into a long narrow pile, as long as the bread sticks and twice as wide. Starting with the first breadstick (which will be most relaxed and easiest to work with), roll each breadstick in the sesame seeds, coating well, then return it to the sheet pan. Sprinkle each with a bit of kosher salt and let rest 10 minutes.
  • Bake 14-20 minutes. Halfway through, turn each sheet pan 180° in the oven, and swap racks, to ensure even browning. They are done when they are an even light golden brown (the ends may be a little darker). Cool completely on the baking sheets. Store in an airtight container up to 2 weeks.

WHOLE-WHEAT BREADSTICKS WITH SESAME



Whole-Wheat Breadsticks With Sesame image

2 teaspoons active dry yeast
1 1/2 cup lukewarm water
1 teaspoon honey, agave nectar, malt extract or rice syrup
1/4 cup extra virgin olive oil
2 cups whole-wheat flour
About 1 1/3 cups unbleached all-purpose flour
1/2 cup sesame seeds
1 1/2 teaspoons salt
1 egg white, lightly beaten

Steps:

  • Dissolve the yeast in the water in a large bowl or in the bowl of a stand mixer. Stir in the honey, agave nectar, malt extract or rice syrup. Let stand for five minutes. Stir in the olive oil.
  • Combine the whole-wheat flour, 1 cup of the unbleached all-purpose flour, 1/4 cup of the sesame seeds and the salt. Add to the liquid mixture. If kneading by hand, stir until you can turn the dough out onto a lightly floured surface; knead for 10 minutes, adding flour as necessary to keep the dough from sticking to your hands and worktop. If using an electric mixer, mix at medium speed for 8 to 10 minutes. Add flour as necessary so that the dough comes away from the sides of the bowl. The dough should be elastic and just slightly sticky.
  • Lightly flour your work surface or brush with olive oil. Using your hands or a rolling pin, roll the dough into a 14-by-4-inch rectangle. Make sure there is enough flour or oil underneath the dough so that it doesn't stick to the work surface. Brush the top with oil. Cover with plastic wrap, then with a damp kitchen towel. Allow to rise for 1 to 1 1/2 hours until nearly doubled. (If you need the workspace, lightly oil the underside of a sheet pan and place the dough on top.)
  • Preheat the oven to 400 degrees with the racks positioned in the middle and upper thirds of the interior space. Brush sheet pans with olive oil. Cut the dough crosswise into four equal pieces. Brush each piece with beaten egg white, then roll each piece in 1 tablespoon of the remaining sesame seeds, until coated. Cut each piece crosswise into six equal pieces. Roll each between the board and your hands as if you were making a rope until it is as long as the baking sheet. For a tighter strip, twist the strands from one end to the other. Place 1 inch apart on the baking sheets until you've filled two baking sheets. Continue to shape the remaining breadsticks while the first batch is baking.
  • Place in the oven, and bake 15 minutes. Switch the pans top to bottom and front to back, and bake another 10 minutes until the breadsticks are nicely browned (they will be darker on the bottom). Remove from the heat, and cool on a rack. Shape and bake any remaining dough as instructed.

3 cups AP flour
¾ cups corn meal
1 tsp. baking powder
1 tsp. salt
½-1 tsp. paprika
½ tsp. ground turmeric (optional)
2 large carrots, grated, about 7 oz.
½ cup white wine
1 cup olive oil (or, ½ cup olive oil + ½ cup sunflower oil)
¼ cup sesame seeds (optional)

Steps:

  • Add the flours, baking powder, salt, paprika and turmeric to the bowl of a stand mixer and whisk until incorporated.
  • Peel and grate the carrots and add them to the dry ingredients. Stir to distribute evenly.
  • Add the wine, olive oil and sunflower oil to the dry ingredients. Using a dough hook, mix all the ingredients on low speed until the mixture comes together to form a ball. Cover the dough and let it rest for 15 minutes. The dough should feel lightly oily and be very easy to handle.
  • Preheat the oven to 360°F.
  • Divide the dough into quarters. Sprinkle the sesame seeds on a baking sheet and set it aside.
  • Working with one of the four quarters of dough at a time, take a small piece of dough, about the size of a walnut, and roll it on a clean surface to form a rope about 10" long. Once each quarter of the dough is rolled into about 10 ropes, pick up each one and re-roll it gently on the sheet pan with the sesame seeds.
  • Place the sticks on two parchment paper-lined sheet pans and bake for 25 minutes, or, until the bottoms of the breadsticks are lightly brown. Move to a rack and let them cool!
