We made our cool, crunchy slaw with just the right amount of tang from sour cream and vinegar. A bit of honey balances the acidity. This classic summer side dish would be welcome at any picnic or backyard BBQ.

5 cups thinly sliced green cabbage
1 cup grated carrots
3/4 cup mayonnaise
1/3 cup sour cream
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
1/2 teaspoon celery salt
Kosher salt and freshly ground black pepper

Steps:

  • Toss together the cabbage and carrots in a large bowl.
  • Whisk together the mayonnaise, sour cream, vinegar, mustard, honey and celery salt in a medium bowl. Pour the dressing over the shredded vegetables and toss to coat. Season with salt and pepper. Cover and refrigerate for 30 minutes. Season with more salt and pepper before serving.

1 head green cabbage, finely shredded
2 large carrots, finely shredded
3/4 cup best-quality mayonnaise
2 tablespoons sour cream
2 tablespoons grated Spanish onion
2 tablespoons sugar, or to taste
2 tablespoons white vinegar
1 tablespoon dry mustard
2 teaspoons celery salt
Salt and freshly ground pepper

Steps:

  • Combine the shredded cabbage and carrots in a large bowl. Whisk together the mayonnaise, sour cream, onion, sugar, vinegar, mustard, celery salt, salt, and pepper in a medium bowl, and then add to the cabbage mixture. Mix well to combine and taste for seasoning; add more salt, pepper, or sugar if desired.

8 c (1 head) cabbage chopped finely
1/3 c ( 1 medium ) carrot shredded
1/2 c granulated sugar
1/2 tsp salt (or to taste)
1/8 tsp black pepper (or to taste)
1/4 c milk
1/2 c mayonnaise
1/4 c buttermilk
1 1/2 Tbsp white vinegar
2 1/2 Tbsp lemon juice
1 Tbsp grated onion
** instead of using 1/4c. of buttermilk i use 1/2 cup of milk in all and the vinegar & lemon juice will give it the same taste**

Steps:

  • 1. Be sure the cabbage and carrots are finely chopped.
  • 2. Combine the sugar, salt, pepper, milk, mayonnaise, vinegar and lemon juice and onion; beat until smooth.
  • 3. Add the cabbage and carrots; mix well.
  • 4. Cover and chill for at least 2 hours before serving. It will give the flavors time to marry and gives it a very good flavor.

This is the first recipe I've ever posted on 'zaar, so all you 'critics' go easy, okay? :) I found this wonderful slaw recipe in a community cookbook when I was a newlywed searching desperately for things on my skill level (which was "zero"!) Twenty-five years later, it's still a winner! The only thing I would caution you about is the salt. As tastes have changed, I've gradually decreased the original amount (1 tsp., which we thought was fine then but would gag us now!) to a scant 1/2 tsp. So add that, cautiously, to taste. Prep time and servings are guesstimates.

1 large green cabbage, finely-sliced (about 8 cups)
4 -5 large carrots, scraped and shredded (1-1/2 to 2 cups)
1 bunch green onion, trimmed and finely-sliced (approx. 1/2 cup -- be sure to include lots of green 'tops')
1 bell pepper, cored,seeded and diced (optional -- we love peppers but prefer this without)
1 cup mayonnaise
3/4 teaspoon dry mustard
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/4 teaspoon whole celery seed
3 tablespoons sugar
3 tablespoons apple cider vinegar

Steps:

  • Toss slaw ingredients well to mix.
  • Measure first 6 dressing ingredients into a small mixing bowl, stirring to combine.
  • Add cider vinegar.
  • Stir until the liquid is absorbed and the dressing is a smooth texture.
  • Store slaw and dressing separately in refrigerator.
  • (It gets real soggy if you mix in advance. I*adore* it soggy, but you might not.) Shortly before serving, pour dressing over slaw ingredients and mix well.
  • Can be mixed in smaller portions as needed, with leftover slaw and dressing stored separately for future use.
