ORANGE SPICED TEA COOKIES

Number Of Ingredients 8

1 1/4 cup flour
1/4 teaspoon salt
1 TB tea (I suggest 2 tea bags of Good Earth's Sweet and Spicy herbal and black tea)
1 stick butter (8 TB)
1/4 cup granulated sugar
1/4 cup confectioners' sugar
1-2 Tablespoons orange zest
2 Tablespoons orange juice

Steps:

  • Combine the flour, salt, and tea. Tea from tea bags should be ground finely and won't need additional processing. Loose tea leaves may need to be ground before adding to the dry ingredients.
  • In a stand mixer (or using a hand held mixer) cream the butter and sugars together until light. Add the zest and orange juice. Mix until well blended.
  • Make a log shape with the dough, wrap in plastic wrap and refrigerate for 30 minutes.
  • Preheat oven to 350 degrees F. Slice cookie dough in 1/4 inch slices. Place on a parchment lined cookie sheet. Bake for 10-12 minutes. Cool on a wire rack.

3/4 cup butter, softened
1 cup sugar
1 egg
2 teaspoons vanilla extract
2-1/2 cups self-rising flour
Confectioners' sugar

Steps:

  • Preheat oven to 325°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the egg and vanilla. Gradually add flour. Roll dough into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly with fingers. , Bake until edges are golden brown, 17-20 minutes. Cool for 2 minutes before removing to wire racks to cool completely. Dust with confectioners' sugar.

If you love chai tea, these cookies are for you! The word 'chai' or 'masala chai' is a catch-all for a spiced black tea drunk in great quantities throughout Southwest Asia and parts of Africa. Any bagged spiced black tea would be lovely in this recipe - cut them open and use the mix inside. Store cooled cookies in an airtight container.

1 cup all-purpose flour
¼ cup white sugar
¼ cup powdered sugar
1 tablespoon chai tea mix
¼ teaspoon salt
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground cardamom
¼ teaspoon ground allspice
¼ teaspoon ground cloves
½ cup unsalted butter
½ teaspoon vanilla extract

Steps:

  • Combine flour, white sugar, powdered sugar, tea mix, and salt in a food processor or small chopper. Pulse until tea is pulverized and distributed throughout the dry ingredients. Mix in cinnamon, ginger, cardamom, allspice, and cloves. Add butter and vanilla extract. Pulse together just until a rough dough is formed.
  • Scrape out dough onto a piece of wax or parchment paper. Form dough into an 8-inch log. Cover with paper and roll the log until smooth. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper or silicone baking mat.
  • Use a sharp knife to slice the chilled log of dough into 1/3-inch-thick pieces. Place on the baking sheets.
  • Bake in the preheated oven until edges are just beginning to brown, 10 to 12 minutes. Let cool on the baking sheets for 5 minutes. Transfer to wire racks to cool completely.

1/2 cup powdered sugar
2 cups Gold Medal™ all-purpose flour
1 1/2 teaspoons ground cardamom
1 1/2 teaspoons ground allspice

1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
4 teaspoons vanilla
2 egg yolks
1 1/2 cups powdered sugar

Steps:

  • Heat oven to 350°F. In large bowl, beat butter and 1/2 cup powdered sugar with electric mixer on low speed until blended. Stir in remaining cookie ingredients.
  • Shape dough by tablespoonfuls into balls. On ungreased cookie sheets, place balls 1 1/2 inches apart.
  • Bake 12 to 15 minutes or until very lightly browned. Remove from cookie sheets to cooling rack; cool 5 minutes.
  • In medium bowl, mix coating ingredients. Working in batches, gently roll warm cookies in coating mixture. Cool on cooling rack 5 minutes. Roll in mixture again.

1 cup butter, softened
½ cup confectioners' sugar
1 ½ teaspoons vanilla extract
2 cups all-purpose flour
1 pinch salt
1 ½ teaspoons baking powder
¾ cup chopped walnuts
⅓ cup confectioners' sugar for dusting

Steps:

  • Beat together the butter and confectioners' sugar till creamy. Add vanilla.
  • Mix the dry ingredients, stir into creamy mixture. Blend well.
  • Add the nuts, mix well, roll the dough out into two balls. Wrap in plastic wrap and chill for at least 1 hour in the refrigerator.
  • Flatten dough out and cut into 15 or 20 equal size pieces, shape into balls. Place on ungreased cookie sheet.
  • Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes till firm but not brown. While still warm roll into confectioners' sugar, let cool and roll again.
