- Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
- Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
- Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
- To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.
SECRET CRUNCHY CUCUMBER SALAD
This has a secret to keeping the cucumbers crispy. My youngest daughter loves this salad and asks for it all the time. I know there are so many good versions of this, but I always come back to this one. The red bell peppers gives it that extra fresh flavor. This is so good and keeps its crunch, thanks to the secret I learned long...

Steps:
- 1. In a large bowl combine the sliced cucumbers, salt and ice water. Cover and chill for 1 hour. This is what keeps your cucumbers crisp! After an hour of chilling, drain and return cucumbers to the bowl and add the remaining ingredients.
- 2. Mix well, cover again and let chill for at least 2 hours. Enjoy!

Steps:
- Thinly slice the shallot and place half in a bowl. The remainder can be fried and used as a garnish, if you like (see below). Add the mushrooms, spring onions and chilli to the bowl, then cover and leave in the fridge until ready to serve.
- Just before serving, slice the cucumber into long, thin strips (try using a vegetable peeler to get really thin slices). Toss together with the remaining salad ingredients. Mix together all the dressing ingredients, leave to one side for 5 mins to let the sugar dissolve, then toss half the dressing through the salad. Place in a serving dish and top with the remaining dressing and fried shallots, if you like.
