3 cups uncooked long grain rice
6 teaspoons chicken bouillon granules
1/4 cup dried parsley flakes
2 teaspoons onion powder
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
ADDITIONAL INGREDIENTS:
2 cups water
1 tablespoon butter
1 cup rice mix (above)

Steps:

  • Combine all ingredients in a storage container with a tight-fitting lid. Yield: about 3-1/2 cups., To prepare rice as a side dish: Combine 2 cups water and 1 tablespoon butter in a saucepan; bring to a boil. Stir in one rounded cup of rice mix. Reduce heat; cover and simmer for 15-20 minutes.

2 tablespoons kosher salt
2 teaspoons granulated garlic
1 teaspoon ground cumin
2 teaspoons granulated onion
1 teaspoon paprika
2 teaspoons freshly ground black pepper
2 teaspoons ground turmeric
1 tablespoon finely chopped fresh oregano leaves
4 chicken thighs, with skin, cut in 1/2
4 chicken breasts, with skin, cut in 1/2 lengthwise
5 tablespoons olive oil
1 large Spanish onion, finely diced
1 medium green bell pepper, finely diced
1 medium red bell pepper, finely diced
About 1/3 cup tomato powder or 1 to 2 plum tomatoes, seeded and finely diced
4 cloves garlic, finely chopped
3 cups long-grain rice
4 3/4 cups homemade chicken stock
1 bay leaf
Salt and freshly ground black pepper
1 cup frozen peas (not thawed)
3/4 cup pimento stuffed green olives
3/4 cup pitted picholine olives
Freshly chopped cilantro leaves
Freshly chopped flat-leaf parsley
Finely chopped fresh oregano leaves
Squeeze lime juice

Steps:

  • Mix together the salt, granulated garlic, cumin, granulated onion, paprika, black pepper, turmeric and oregano in a small bowl. Season both sides of the chicken pieces with salt and pepper and then season with the adobo seasoning mixture.
  • Heat 3 tablespoons of oil in a large Dutch oven over high heat. Place the chicken in the oil skin side down, in batches, if necessary, and saute until golden brown. Turn the chicken over and cook until the second side is golden brown. Transfer the chicken to into a separate pot with all cooking juices, cover and allow to cook through over medium heat. Keep warm.
  • Place the browning pan with the remaining 2 tablespoons oil back over high heat. Add the onions, green and red peppers and cook until soft. Add the tomato powder, garlic and cook for 1 minute.
  • Add the rice to the pan, stir to coat the rice in the mixture and cook for 1 minute. Add the chicken stock, bay leaf, salt and pepper and bring to a boil. Stir well, cover, reduce the heat to medium and cook for 10 minutes.
  • After 10 minutes add the peas to the pot, cover and continue cooking until the rice is tender and the chicken is cooked through, about 8 minutes.
  • Remove the pot from the heat and let sit 5 minutes covered. Remove the lid, fluff the rice and gently fold in the olives, cilantro, parsley, oregano and squeeze of lime juice. Add the chicken and stir to combine.

  • Simmer gently 8 to 10 minutes or until almost all liquid has been absorbed.

  • To cook the chicken, preheat the oven to 375°F.
  • Season both sides of the chicken pieces with salt and pepper, and then with the adobo seasoning mixture.
  • Heat the oil in a large Dutch oven over medium heat. Place the chicken in the oil, skin side down, in batches if necessary, and sauté until golden brown, about 4 minutes. Turn the chicken over and cook until the second side is golden brown, about 4 minutes. Transfer the chicken to a baking sheet, place it in the oven, and roast until tender and just cooked through, about 12 minutes.
  • Meanwhile, pour off all but 2 tablespoons fat from the Dutch oven, and place it back over high heat. Add the onion, bell peppers, and serrano chile, and cook until soft, 5 minutes. Add the tomatoes and garlic and cook for 1 minute.
  • Add the rice to the pan, stir to coat it in the mixture, and cook for 1 minute. Add the chicken stock and bay leaf, season with salt and pepper, and bring to a boil. Cook for 5 minutes, uncovered. Then stir well, cover, reduce the heat to medium, and cook until all the stock has been absorbed and the rice is tender, 10 to 12 minutes. During the last few minutes of cooking, quickly stir in the peas, cover, and continue cooking.
  • Remove the pan from the heat and let sit for 5 minutes, covered. Then remove the lid, fluff the rice, and gently fold in the olives, cilantro, oregano, lime zest, and juice. Add the chicken and stir to combine.

1 (15 ounce) can kidney beans, drained and rinsed
1 teaspoon butter

Steps:

  • Combine onion, broccoli, celery, and garlic in a food processor. Add 1/4 cup water, ginger, dill, and salt; process until mixture is pureed.
  • Heat a nonstick skillet over medium-high heat. Add the puree; saute until water evaporates and puree is thickened, 7 to 10 minutes. Add black beans and kidney beans and gently mix. Reduce heat to low. Cook, covered, until flavors combine, about 10 minutes.

½ lb. assorted dark olives (such as Kalamata, Gaeta, Nicoise)
4 oz. feta cheese, crumbled
1 medium clove garlic, minced
2 tbsp. extra virgin olive oil
1 tbsp. fresh oregano or 1 tsp. dried
½ tsp. black pepper, freshly ground
1 cp. short grain rice (such as sushi rice)
1 tbsp. rice wine vinegar
½ tsp. ground cumin
1 lb. sole filets (skin removed) or other mild white fish
½ tsp. table salt

Steps:

  • Pre-heat oven to 450 degrees. Cut asparagus diagonally into 2-inch pieces. Remove and discard pits from olives by mashing gently with a heavy flat implement such as a mallet (being careful not to smash the pit) then digging out pit. Chop pitted olives coarsely. Mix chopped olives, asparagus pieces, crumbled feta cheese, garlic, olive oil, oregano and pepper (to taste) in a large bowl. Cook rice according to package directions, omitting any butter or oil. Stir in rice wine vinegar and allow to stand for 5 minutes. While rice is cooking, spread ½ olive mixture evenly across bottom of 13x9 inch baking dish. Season both sides of fish lightly with salt and place in a single layer on top of olive mixture. Top evenly with remaining mixture. Bake on middle rack of oven for 15 minutes or until fish is opaque, timing it to finish with the rice. Season rice evenly with cumin. Steps:

  • 1. Seasoned Rice: 1 cup water 1 cup seasoned rice mix --- In saucepan bring water to boiling. Stir in seasoned rice mix; cover. Remove from heat and let stand 5 minutes. Makes 2 cups.

2 tablespoons canola oil
1 1/2 cups long grain white rice
1/4 medium onion, chopped
2 garlic cloves, minced
3 cups chicken stock
1 bay leaf
1 teaspoon salt

Steps:

  • Warm oil in saucepan over med heat. When hot add rice and stir for about 10 minutes. Add onion and garlic, stir and cook about 1 minute.
  • Add broth, bay leaf and salt.
  • Bring to a boil, lower heat cover and let simmer for 15 mins until liquid is absorbed.
  • Take off burner and let sit another 10 minutes.
  • Rmove bay leaf and fluff with fork.

PLAN/PURCHASE
2 Tbsp sweet butter, unsalted
1/2 tsp ground turmeric
1/2 tsp ground cumin
1 c long grained white rice
1 1/2 c chicken stock, not broth, hot
salt, kosher variety, to taste
black pepper, freshly ground, to taste
OPTIONAL ITEMS
1 - 2 dash(es) tamari sauce, or liquid aminos
1 - 2 pinch cayenne, for some cold weather heat
shaved parmesan, for garnish

Steps:

  • 1. PREP/PREPARE
  • 2. Remember when you are melting the butter, and blooming the spices, keep the temp to medium low. We do wish to burn them, or it will impart a bitter taste to the rice. And, the same is true when you are cooking the rice in the butter... keep it low.
  • 3. Gather your ingredients (mise en place).
  • 4. Add the butter to a saucepan over medium-low heat, and after it melts, add the turmeric and cumin.
  • 5. Stir together until combined and keep stirring for another 60 seconds.
  • 6. Add the rice and stir with the other ingredients until the rice begins to slightly brown, about 3 - 4 minutes. While stirring, toss in a bit of salt and pepper.
  • 7. Remember, no burning; just an ever-so-slight browning.
  • 8. Add the hot stock, raise the heat to get to a simmer. Then cover and simmer undisturbed for 15 minutes. After 15 minutes, remove from the heat, keep covered, and let it sit for an additional 10 - 12 minutes. That will give the rice a chance to absorb any remaining chicken stock.
  • 9. Uncover, fluff with a fork, and do a final tasting for proper seasoning (I like to add a bit more salt and pepper).
  • 10. PLATE/PRESENT
  • 11. Serve as a side dish or eat a steaming bowl, all by itself. Enjoy.
